I have had to make some major adjustments in my diet over the years. It began with Type 2 diabetes in 1997 and has continued with numerous other health issues including having to eat heart healthy, high fiber, low/healthy carbs... so finding foods that fit is such a joy! I can enjoy these alone but prefer with a hummus or other high fiber dip. They are also good on the side with a good low carb, high fiber soup. It also helps with the desire for something crispy! Love these!
