GLUTEN and DAIRY FREE APPLE GINGER Protein Baking Mix: This mix combines pea protein, all-natural whole grains, and flax with plump, dark raisins and their signature apple-pie spice blend. Just add apple juice concentrate, eggs and your favorite sweetener. As the protein muffins/ bars bake, your house will fill with the fragrant aromas of cinnamon, ginger and sweet baked apples.
What you will need:
- 8x8 inch square or 6-muffin pan.
- 3/4 cup frozen apple juice concentrate, 3 eggs, and 1/3 cup + 2 TBPS sweetener
- of your choice.
- Preheat oven to 350 degrees F.
- Combine eggs, juice and sweetener.
- Add dry mix.
- Stir until smooth.
- Coat pan with cooking spray.
- Pour batter into prepared pan.
- For 8" square pan, bake 20-25 minutes.
- For muffins, bake 18-25 minutes.
- Bars/Muffins are done when toothpick inserted in center comes out clean.
