    Bacon Swiss Cheddar Cheese Dip (Gluten-Free)

    Celiac.com 04/07/2015 - This dip is full of zesty bacon and cheese flavor that is sure to put smiles on the faces of your hungriest snackers.

    • 12 slices quality smoked bacon, cooked, chopped
    • 1 cup (8 ounces) cream cheese
    • ¾ cup shredded Cheddar cheese
    • ¾ cup shredded Swiss cheese
    • ½ cup mayonnaise
    • 1½ tablespoons Dijon mustard
    • 1 tablespoon horseradish, prepared
    • 4 scallions, chopped

    Directions:
    In a mixing bowl, whip the cream cheese with an electric mixer.

    Fold in and lightly mix the mayonnaise, Dijon mustard, horseradish, cheddar cheese, bacon and scallions.

    Serve hot or cold.

    To heat, place in an oven proof container and bake at 400°F for 10 minutes or until bubbly and warm.

    The state of Minas Gerais is known throughout Brazil for its cuisine, and there are places in other parts of Brazil where one can buy pã de queijo and other mineiro specialties. Any mineiro cook can make pao de queijo, and there are endless recipes and methods for it. Minas Gerais is also known for its cheeses; the Wisconsin of Brazil, if you wish.
    Makes 2 dozen appetizer-sized balls.
    Preheat oven to 375°. Boil the following until white foam appears (on stove or in microwave):
    ½ cup vegetable oil
    1/3 cup water
    1/3 cup milk
    (1 tsp salt optional)
    Add this hot mixture to 2 cups tapioca starch. Mix well with wooden spoon
    and let rest for about 15 minutes. You will get white ball. Mix in 2 eggs

    Preheat oven to 300F degrees. Bring to a boil: 1/3 cup fireweed honey and 1/3 cup sunflower oil and one teaspoon of gluten free vanilla or almond flavoring and a dash of salt.
    Meanwhile in large bowl add your choice of the following to equal about 5 cups of the following mix:
    1 ½ cups rice flakes
    ½ cup buckwheat flakes
    ¾ cup sweetened medium coconut
    1 cup slivered almonds
    ¾ cup sunflower seeds
    ¼ flax seeds
    ¼ cup sesame seeds
    ¾ cup pumpkin seeds
    Stir mix till thoroughly blended. Put mix in a 13 x 9 baking pan and pour cooled honey and oil mixture over. Stir to coat mix. Bake in oven for 30 minutes. (Granola will darken after removal from oven. Cool for 15 minutes and add ¾ cup dried cranberries and 2/3...

    Here's a great recipe to wow your guests for any gathering you might have. Gluten-Free and Vegan


    Ingredients:
    2 lb. Button Mushrooms
    1 1/2 cups Crushed Gluten-Free Crackers
    3 Tbsp. Olive Oil
    1 large Vidalia onion, finely chopped
    2 tsp. balsamic vinegar
    1/4 tsp. Sea salt
    1/4 cup fresh basil, finely chopped
    1/4 cup dried cherries, finely chopped

    Directions:
    Preheat oven to 375 F.

    Remove stems from mushrooms and chop.  Heat oil in a pan over medium heat.  Add all ingredients; cook for 5 minutes. Evenly distribute mixture to mushroom caps.  Bake for 45 minutes.
    Serve with fresh marinara sauce.
    Enjoy.

    Celiac.com 08/07/2014 - I’ve been interested in do-it-yourself frozen fruit pops lately, and this recipe has me really excited. If you love pineapple, and you love coconut, this recipe will deliver cool, delicious, summertime treats.
    Ingredients:
    Milk and flesh of 2 fresh, whole coconuts ⅓ cup canned coconut milk ⅓ cup sugar 1 whole small pineapple, peeled and cored Kosher salt Directions:
    Special equipment: four 4-ounce ice-pop molds or six 3-ounce molds, 4 or 6 ice-pop sticks
    Open the fresh coconuts. Pour the liquid into a blender.
    Scrape out the coconut flesh and add to blender.
    Add canned coconut milk.
    Blend well for about 30 seconds.
    Add the coconut mixture to a medium saucepan.
