    Football Season Dill Dip (Gluten-Free)

    Celiac.com 11/19/2014 - Whoever your favorite team may be, a great dip can really anchor the snack table at a party or gathering. In this dip, fresh dill, yogurt and mayonnaise come together with a bit of sugar and some seasoned salt to deliver a dip that goes great with vegetables and chips.

    • 2 cups mayonnaise
    • 2 cups whole milk yogurt
    • 3 tablespoons minced onion
    • 1 teaspoon seasoned salt (recipe below)
    • 3 teaspoons fresh dill weed
    • 1½-2 teaspoons white sugar, to taste

    Directions:
    In a medium bowl, mix mayonnaise, yogurt, minced onion, seasoning salt, dill, and sugar. Refrigerate for at least 8 hours before serving to blend flavors.

    Seasoned Salt:

    • 2 tablespoons salt
    • 2 teaspoons sugar
    • ½ teaspoon paprika
    • ⅓ teaspoon turmeric
    • ⅓ teaspoon onion powder
    • ⅓ teaspoon garlic powder
    • ⅓ teaspoon cornstarch

    Mix in a bowl and put into a jar or shaker and use as needed.

    1 can of artichoke hearts (9 oz.)
    2 tablespoons butter
    1 large Spanish onion (diced)
    1 10oz. bag fresh spinach- bite size pieces ( I use frozen, then thawed out chopped spinach, 2 boxes, we like spinach)

    I find baby artichokes a little underrated; they’re easier to handle and usually cheaper. I tried these for the first time on the grill, but it’s just as easy to toss together and roast. I happened to have pistachios on hand the second time around and they turned out to be the secret star of this dish.
    Ingredients:
    9-10 baby artichokes, about 2 pounds
    1 broccoli head, cut into florets
    1 lemon, cut in half, plus 1 teaspoon zest
    ¼ cup shelled pistachio nuts
    2 cloves garlic, minced
    ¼ cup olive oil plus 1 teaspoon
    2 tablespoons balsamic vinegar
    ¼ cup parmesan cheese, freshly grated
    ½ teaspoon each salt and pepper

    Celiac.com 11/12/2014 - Jicama is one of the unsung wonders of a great many Mexican dishes and salsas. In this recipe, jicama serves as the center piece for a tasty, refreshing appetizer.
    Ingredients:
    1 jicama, peeled and diced into bite-sized chunks ½ tablespoon chili powder, or to taste 2 tablespoons fresh lime juice dash of kosher salt Directions:
    Place peeled jicama pieces in a medium bowl and mix with lime juice.
    Sprinkle with chili powder, mix a bit more, and arrange the jicama on a platter.
    Serve immediately. Use toothpicks or small forks.
