    I recently tried Amy's new Gluten Free Rice Crust Margherita Pizza.  The picture on the box was enticing, and I was impressed with the list of natural and organic ingredients, so I just had to give it a try. 
    Upon opening the box I noticed chunks of real mozzarella cheese sprinkled with basil.  It was the perfect size for my toaster oven, but I have a pizza stone so I decided to prepare it in the oven.  The aroma was very promising, and it even caught the attention of my kids.  The pizza was done in about 12 minutes, and it looked just like the picture on the box.  The mozzarella melted beautifully and I couldn't wait to dig in.  The crust had a nice crunch to it and a chewy texture...combine that with the blend of the mozzarella and basil and a hint of garlic and it was delicious! 
    My only complaint would be that I would have like to have a bit more sauce (I like saucy pizzas).  I loved that it was made as a single-serve pizza, since most gluten-free pizzas never taste the same the next day.  I wish I could have enjoyed the entire pizza myself, but my non-celiac kids ended up liking it as much as me!

    I was very surprised when I received a care package of Hail Merry's gluten-free blonde macaroons.  I absolutely love coconut and have always had bit of a sweet tooth, but in the past I haven't always had the best of luck with gluten-free macaroons.  Usually, I find macaroons to be way too sweet, high in fat and calories or the texture is just wrong.  Despite the charming packaging that contained these macaroons, I still had my doubts – but who am I kidding?  I love coconut! 
    When I took my first bite I noticed that the texture of these macaroons was soft, slightly chewy, but not overly sweet – I guess they read my mind about my usual complaints about most macaroons – they tasted great.  I found the size of each macaroon (just short of the size of a golf ball) was just the perfect size to get satisfaction for a sweet tooth like me, but the best part is that they only have 70 calories and 5.5 grams of fat each!  How can this be? 
    Upon further reading of their packaging I noticed that Hail Merry didn't cut any corners when they developed these little bites of goodness!  The ingredient list is short , wholesome and surprisingly these macaroons are not only raw and vegan, but are only lightly sweetened with maple syrup.  I must also mention that shredded coconut has twice the fiber of oats, and that coconut oil is known to contribute to healthier hair, skin and can help aid proper digestion. 
    I absolutely loved the taste of these macaroons with their real coconut flavor and texture!  These macaroons give a "junk food" taste with the quality and nutrition that you wouldn't expect from such a nice little treat – in my book they are definitely worth trying!

    Needing extra protein in your gluten-free diet?  Then I would highly suggest trying biPro's gluten-free unflavored whey protein.  It is usually hard enough for me to find a gluten free-protein powder, but it is even more difficult to find one that is versatile and doesn't clump.  Recently I tried biPro and I decided to just pour some of the protein powder in my cup of chocolate milk and just mixed it up with a spoon.  Unless you try this for yourself, you probably won't believe me when I say that the chocolate milk tasted just like chocolate milk and the powder dissolved beautifully.

    Petit Bites Gluten-Free Chocolate Chip Coconut Nibbles are not your traditional coconut macaroon, and maybe that's why I might just consider it my favorite. 
    They have a beautifully golden shell on the outside, and a soft and chewy coconut inside, mixed with enough chocolate chips to satisfy any chocolate lover.  The best part is that I don't feel guilty after indulging in a few.  They are made with only five pure ingredients (sweet potato is actually second on the ingredient list, but you'd never know) and are free from preservatives, trans fats and cholesterol.  They are a must try if you love coconut and chocolate!

    I sorta bump into walls a lot more, misjudge distances and hit my shoulder on door frames in a sort of totter fashion, catch myself almost falling sometimes on stairs, drop stuff, find I lose heat and cold sensitivity and often burn myself, or cut myself. These stick around for a while and slowly taper off. My ataxia normally hits hard the first day within hours of consuming the offending food I can lose full motor control and end up on the floor.
    Thank you so much for your response. Do you get dizzy, well it's not dizzy, it's weird feeling where you feel like you are walking in space. And my skin just feels different, all nervy and more sensitive but not, like I can't feel as much.
    It can take months for the reaction to die down, my last incident left me with come and go issues for months. And I seem to have suffered other issues that have not resolved for the past 9months. If you did indeed suffer ataxia damage, those will wean off over months-years.  Just because your levels are "normal" does not mean they are right. Everyone is different in what they need and the "Normal" levels are outdated and just a minimum. Supplementing still might boost you up and make you fe
