    After many years of unexplained medical issues, I was finally diagnosed with celiac disease in 2002.  The first couple of years were a rough road traveled, but I am feeling better than I ever have.  It is important that I share what I have learned over the years with others and to do my part to help raise awareness of celiac disease.

    Focaccia is a flat baked Italian bread that most of us on a gluten-free diet would never get the opportunity to enjoy...until now! 
    I recently came across a gluten-free focaccia bread by GlutenOut that is made in Italy--and their products can be shipped frozen right to your door.  I was pleasantly surprised with how well my order was packed, but honestly I did not have high expectations due to my past experience with gluten-free bread. 
    I put the gluten-free focaccia in the oven for about 7 minutes and at first glance I was very impressed with the presentation of the finished product.  I was trying to decide if I should slice the bread horizontally to make a pizza or perhaps to use it as a sandwich bread, but as soon as I tasted it there was no turning back.  The GlutenOut Gluten-free Focaccia was crusty on the outside and light and airy on the inside.  My daughters were quick to join me as we enjoyed the focaccia with a very simple olive oil and balsamic dip, and it disappeared way too quickly! 
    I am looking forward to my next order and can't wait to explore all of GlutenOut's culinary possibilities!

    Last night I made macaroni & cheesefor dinner using Riega Yellow Cheddar Cheese Sauce Mix. The saucecame out perfect, and was creamy, cheesy, and flavorful. Our wholefamily loved it, and what I really liked about it was being able touse my favorite gluten-free macaroni noodles, as I am very pickyabout my pasta. This is one of the best gluten-free cheese saucesthat I've tried, and it was quick and easy to prepare. This familyfavorite is always welcome for a quick hot lunch, or a dinnertimeside dish, and I will keep these on hand from now on.

    Celiac.com 11/21/2014 - Some afternoons at work seem to go by slowly. The other day I decided to try a PureFit Nutrition Bar instead of my usual cup of coffee.  Since I love peanut butter and nuts, I figured it would be good...and it was!

    Thanks Posterboy, that was interesting information.  I believe that I had read something elsewhere about tetracycline, at least, being used instead of, or along with, Dapsone for severe or refractory cases of DH. Unfortunately, even if I had medical insurance (which I do not), and had a regular doctor who was even willing to recognize and accept my condition for what it is, I don't know what kind of luck I would have in persuading that hypothetical doctor to give me a particular and non-sta

    He's still going to have to eat gluten even for an endoscopic biopsy. 2 weeks minimum. Plus guidelines say no dx on an endoscopic biopsy alone - you have to have the positive blood to go with it. Even that 2 weeks will deposit more antibodies under his skin if he's got dh.  Let me put it this way. The gut damage is the gut damage & if he's celiac & it sounds like he is but we don't have labs to prove it, then there is a treatment for it. Only 1 treatment for it. A very strict gluten
