    JD's Best Microwave or Ovenbake Personal Gluten-Free Pizza

    I had to do a double take when I saw a that JD's Best made a gluten-free microwave or oven baked personal sized pizza!  How in the world can they make a gluten-free microwavable pizza? I was a bit skeptical since it is hard enough to find a gluten-free pizza that I can pop in the oven and fully enjoy, let a lone one that I could microwave.  I decided to give JD's Best Microwave/Ovenbake Personal Gluten-Free Pizza a try – one from the microwave and one from the oven.

    JD's Best Microwave or Ovenbake Personal Gluten-Free PizzaIncluded in their packaging was a silver disk that is used to crisp the crust for those who choose the microwave method.  After 15 minutes the oven pizza was ready, compared to only 2.5 minutes for the microwave version.  Both pizzas had ample sauce (which is usually one of my biggest complaints about packaged pizzas), and the cheese was bubbling, hot and flavorful. Both pizzas had a crispy crust on the bottom,  and the only real difference I noticed was that the one from the oven was a bit more crispy on the top compared with the microwave version. 

    What a great option for anyone on a gluten free diet!

    Celiac.com 11/03/2008 - I've always had trouble getting my kids to eat salads, so when I first saw this recipe I immediately wondered if this would be the one that "does the trick," and convinces them that salads are not just good for you, but can also taste good too. What I liked best about this recipe was how simple it was to prepare. Most chicken salad recipes that I've made involve cooking—and fortunately this one uses Valley Fresh Canned Chicken (which is gluten-free, the ingredients are very basic: white chicken, water and sea salt)—so it is ready-to-eat directly from the can, and does not require any cooking. 
    I tried out the canned chicken beforehand on a sandwich to make sure that I would like it. I simply drained it, then mixed it with gluten-free mayonnaise, diced pickles, onions and celery, and made a sandwich with gluten-free bread and found that is was very good—so I had high hopes for my "child-proof" salad.
    It took me about 15 minutes to make the recipe, and another 10 minutes to chill the finished salad before serving it, so the total preparation time on the recipe of 25 minutes is accurate. The finished salad looks fun, and the first thing my kids said when they saw it was "fruit salad...yummy!" My three-year-old daughter's reaction to her first bite was "mmmmm," so I was half way there. My seven-year-old son is harder to please than my daughter, but since he thought that it was fruit salad he was willing to try it...this alone was a victory. And his reaction—two thumbs up!
    So I finally "tricked" them into liking a salad—and I did it by using an excellent salad recipe that combines a range of healthy ingredients that include fresh fruits, vegetables, yogurt and Valley Fresh Canned Chicken. Oh, by the way, adults will like this recipe too! I would recommend this simple recipe to anyone who wants to eat a healthy salad (end even for those who are hard to please!).     Valley Fresh Gluten-Free Fruited Chicken Salad
    Serves: 4
    Prep Time: 15 minutes
    Total Time: 25 minutes
    Ingredients
    Dressing:

    1/4 cup plain yogurt 1 tablespoon orange juice 2 teaspoons honey 1 teaspoon poppy seeds 1/8 teaspoon ground ginger 1/8 teaspoon garlic powder, optional
    Salad:
    1 (10 ounce) can Valley Fresh 100% Natural White Chicken, drained 1 peach, peeled and sliced 1/2 cup seedless green grapes, cut in half 1/2 cup seedless red grapes, cut in half Lettuce 1 ounce shredded reduced-fat Monterey Jack cheese
    Directions:
    Mix together yogurt, orange juice, honey, poppy seeds, ginger, and garlic powder. Add chicken and fruit. Toss gently to coat. Serve chilled on lettuce and garnish with cheese.

    I recently tried Crunchmaster's Cheezy Crisps, which are little triangle-shaped gluten-free cheese-flavored rice crackers, and I must say that it was hard to put them down! This is the type of snack where one serving size may as well just be "one box" because it is that difficult to stop eating them.
    The first thing you notice when you put one in your mouth is the taste of real cheddar cheese, which always goes great with crackers. They taste almost like you are eating a piece of baked cheddar cheese, which reminds me of the fact that the crackers are baked and not fried, so they are healthier than some alternative cheese snacks that are on the market. I also like the fact that they use 100% whole grain corn and brown rice flour as the base of these crackers, and there is 22g of whole grain per serving (which means that I almost had 88g of fiber!).
    Overall I think these crackers would be a good addition to any party, or just to have around for your kids or yourself--just make sure you don't eat the whole box!

    As long as they are going down, you should be happy.  The celiac blood tests were meant to help diagnose celiac disease, but not to monitor the gluten-free diet.  However, it is the only non-evasive “tool in the toolbox” for now.  You can expect for those numbers to take a year or so to come down.  It all depends on how well you do on the diet and how your body responds.  Everyone is different!   Welcome tomthe forum.  
    This is the list I use to start. And then if there is tocopherol/Vitamin E in anything, even if it states it is gluten-free, I write or call the company and find out their source of Vitamin E.     @GlutenTootin As mentioned above, limit your carb intake, removing starches, and sugars. Many gluten-free bread/baked products are mostly starches which will be fermented in your gut into gas. Seriously look at the ingredients, all those grain flours, starches etc. Look for nut-based ones with NO starches if you want to enjoy something without the gas. For the most part stick to a whole foods diet, leafy greens, low carb veggies, and meats. Cook them til they are super soft and tender like
