    After many years of unexplained medical issues, I was finally diagnosed with celiac disease in 2002.  The first couple of years were a rough road traveled, but I am feeling better than I ever have.  It is important that I share what I have learned over the years with others and to do my part to help raise awareness of celiac disease.

    With so many gluten-free snack bars coming onto the market nowadays, it can be hard to find one that stands out, and really deserves a spot in your snack food reserves. SOYJOY makes great baked whole soy-based gluten-free bars, and their new cranberry flavor is one of their best yet.
    When trying to describe the new cranberry SOYJOY, my first instinct is to compare it to a Nutri-Grain bar, just lighter and with whole dried fruit instead of a jelly filling (and no gluten, of course). I'm not usually a huge cranberry fan, but in this context, the cranberries add a very satisfying tanginess that keeps the bar from being overwhelmingly sweet. The bar also has a pleasant texture: it's both light (not overly heavy or chewy like some snack bars) and slightly moist, which is surprising given that it's made from baked soy.
    You can't expect to replace breakfast with these, but they are free of trans fats, low glycemic, low sodium and have 4g of protein. The ingredients list is also short and easily understood, with whole soy and dried fruit and no high fructose corn syrup. The portion control is also good, coming in at only 140 calories per bar.
    If you're looking for a tasty, fruity gluten-free snack to tide you over between meals, these are definitely worth a try.

    I recently received samples of St. Claire's Organics Traditional and Cherry Hot Cocoa Mixes. For many years I've been aware of their (now world famous) St. Claire's Organics Pastilles, but I did not know that they also made cocoa mixes.
    Both cocoa mixes are dairy-, casein-, corn-, soy-, egg-, nut-, GMO- and gluten-free, and are also vegan. In fact, their only ingredients, as one might expect from products made by St. Claire's, are high quality organic molasses granules, organic cocoa powder, organic cocoa nib extract, and, in the Cherry Cocoa—organic cherry flavor.
    The directions to make either mix are very basic: I added two tablespoons of the mix to a 6 oz. mug of hot water and stirred it well. You can, of course, use coconut milk or other favorite milk instead of water.
    The first thing I noticed when stirring the Traditional Cocoa Mix was the wonderful aroma that filled my office—the smell of hot chocolate really can't be beat. The Cherry Cocoa Mix offered a unique cherry aroma that blended perfectly with the chocolaty scent.
    The rich chocolate flavor of the Traditional Cocoa Mix was simply exceptional. I can't remember when I've had such an excellent cup of hot cocoa. The Cherry Cocoa was a total surprise—to my delight the light cherry flavor mixed perfectly with the rich chocolate taste.
    In the end it was a tie—both cocoa mixes were just too good to pick a favorite!

    I guess I should have added that she already had an endoscopy and biopsy as follow up to an eosinophilic esophagitis diagnosis. The doctor ordered the bloodwork after getting the results back. She is a picky eater and I swear only eats gluten lol It is going to be a struggle if we have to go gluten free.
    If any tests for celiac disease are positive, it generally means that follow up tests, perhaps a biopsy, are needed to confirm CD. Be sure that your daughter continues to eat gluten until all testing is completed, as not eating it could skew future test results.
    Thank you for your reply. I have just edited my post to add nausea! Another big symptom.  Did your doctor send you straight for endoscopy with negative blood results? Or do those other blood tests first?
