    Raw foods are increasing in popularity with health food enthusiasts everywhere for their health benefits and the divine recipes. Most raw foods are also naturally gluten-free. The following gluten-free, dairy-free, soy-free, egg-free, raw cheesecake is a must try. Personally, I think  raw cheesecake is better than the real thing. However, if you are a huge cheesecake fan, you may have to get creative and remember that this is a raw dessert and requires absolutely zero cooking, and therefore is really no comparison to an authentic cheesecake. However, this raw cheesecake is even healthy enough to eat for breakfast, something that can't be said for traditional cheesecake.
    Finding the ingredients may be the hardest part of making this raw cheesecake. Many items can be found at most health food stores.
    The entire preparation process takes less than 30 minutes (not including the nut soaking).

    Ingredients:
    (Serves 12)

    • 2 cups macadamia nuts
    • 1 1/2 cups cashews
    • 1/2 cup pitted Medjool dates
    • 1/4 cup dried coconut
    • 6 Tbs. coconut oil, melted but not to a boil
    • 1/4 cup lime juice
    • 1/4 cup raw agave nectar
    • 1/2 sun-dried vanilla bean
    • 3 cups mixed berries, such as blueberries and raspberries
    • Himalayan salt
    Preparation:
    • Place macadamia nuts in large bowl, and cover with cold, filtered  water and pinch of salt. Place cashews in separate bowl, and cover with cold, filtered water, and pinch of salt. Soak nuts 4 hours, then rinse, drain, and set aside.
    Directions:
    1. Pulse macadamia nuts and dates in food processor to a sticky crumb-like consistency. Sprinkle dried coconut on bottom of 8-inch pie pan. Press macadamia nut mixture onto coconut to make crust.
    2. Place cashews, coconut oil, lime juice, agave nectar, and 6 Tbs. water in bowl of food processor. Scrape seeds from vanilla bean into food processor bowl, and purée until smooth. Pour mixture onto crust, and freeze 1 to 2 hours, or until firm. Remove from freezer, slice while frozen, and transfer to serving platter. Defrost in fridge 1 hour, or on counter top 30 minutes; top with berries; and serve.

    I diagnosed myself for gluten intolerance after a lifetime of bizarre, seemingly unrelated afflictions. If my doctors had their way, I would have already undergone neck surgery, still be on 3 different inhalers for asthma, be vomiting daily and having chronic panic attacks. However, since eliminating gluten from my diet in May 2009, I no longer suffer from any of those things. Even with the proof in the pudding (or gluten) my doctors now want me to ingest gluten to test for celiac-no can do.

    1 ¾ cup rice flour
    ¾ cup cocoa
    1 teaspoon Baking powder
    1 cup brewed black coffee
    ½ cup oil
    1 teaspoon Vanilla
    2 cups sugar
    2 teaspoon Baking soda
    1 teaspoon Salt
    2 eggs
    1 cup sour milk
    Add liquid ingredients to dry and beat at medium speed for 3 minutes. Bake in 9 x 13 pan for 45 to 50 minutes, or in 2 layer pans for 25 to 30 minutes. Notes: sour milk can be made by adding 1 teaspoon vinegar to 1 cup milk and letting it set for 5 minutes. Sift the dry ingredients, black coffee can be replaced with water if desired.

    Ingredients:
    Mazola no stick cooking spray
    2 packages (8 oz each) reduced calorie cream cheese, softened
    1 cup sugar
    ½ cup milk
    3 eggs
    ¼ cup Argo or Kingsfords corn starch
    2 teaspoons vanilla extract
    1 can (8 oz) crushed pineapple in juice, drained, juice reserved
    Cinnamon
    Spray 9-inch square baking dish with cooking spray. In blender combine cream cheese, sugar, milk, eggs, corn starch, vanilla and reserved pineapple juice. Blend 1 minute or until smooth, scraping down sides once. Pour into prepared baking dish. Spoon pineapple evenly over top (pineapple sinks into batter). Sprinkle with cinnamon. Bake in 300F oven 50-60 minutes or until set. Cool on wire rack 1 hour. Refrigerate. Makes 12 servings.

    You can use this in place of shortcakes or pound cake. Make in a loaf pan for a pound cake, or two 8 inch cake pans. For best results line the pans with tin foil.
    1 ½ cups butter
    8 oz. cream cheese
    2 ½ cups sugar
    6 eggs
    2 teaspoon vanilla powder (Cooks)
    3 cups rice flour
    1 teaspoon salt
    In a mixer, with the paddle attachment beat the butter and cream cheese on low speed until smooth. Add the sugar and whip for 4 minutes. Add the eggs, vanilla, salt, and the flour. Beat on low until smooth. Pour into pan and bake 25-30 minutes at 350F.

    Preheat oven to 325 F.
    Grease a bundt or tube pan (7-inch tube pan, or a 10-inch bundt pan)
    Boil together, covered, for 3 minutes:
    1 cup water
    2 cups raisins
    1 cup brown sugar
    ½ cup dairy-free and gluten-free margarine or shortening
    ½ teaspoon each ground cinnamon and allspice
    ½ teaspoon salt
    1/8 teaspoon nutmeg
    Let cool. This mixture can sit overnight with no harm to the finished product. Just dont refrigerate it, or youll have to reheat it.
    Sift, then measure to equal 2 cups:
    2 cups gluten-free flour mix (I used 1 2/3 cups of a one:one:one mix of Asian white rice flour, sweet rice flour, and tapioca starch, plus 1/3 cups sorghum, but any all-purpose mix will do)
    Sift again with:
    1 teaspoon baking powder
    1 teaspoon baking soda
    ½ teaspoon xanthan gum, if desired (I used it, but would actually leave it out next time)
    Stir the flour into the liquid ingredients (or the other way round—it really doesnt matter). Stir until smooth.
    If desired, add:
    1 cup chopped almonds or other nuts
    1 cup chopped dried fruit, such as dates, figs, and candied citron
    Pour batter into prepared pan, and level with a spatula. Bake for one hour. It will test done at about 45 or 50 minutes, but needs the extra baking time to set properly. If it doesnt test done (toothpick comes out clean) at one hour, keep baking until it does, then give it another five or ten minutes.
    Allow to cool in pan on a cooling rack, then turn out onto a serving platter.
    You can add any icing you want, or no icing. You can also use a sugar/lemon juice glaze, or a white butter-cream style icing.
