    This recipe comes to us from Linda Sowry.

    2 cups Gluten-Free Flour Mix
    1 ½ cups sugar
    1 teaspoon gluten-free baking powder
    1 teaspoon baking soda
    1 teaspoon xanthan gum
    1 teaspoon ground cinnamon
    ¼ teaspoon ground nutmeg
    ¼ teaspoon ground cloves
    ¼ teaspoon ground ginger
    1 cup buttermilk or sour milk
    ¼ cup margarine or butter, softened
    ¼ cup shortening
    ½ teaspoon vanilla
    3 eggs

    Preheat oven to 350F. Combine flour, sugar, baking powder, baking soda, xanthan gum, cinnamon, nutmeg, cloves, and ginger. Add buttermilk, margarine, shortening, and vanilla. Beat on low speed till combined then two minutes on high speed. Add eggs and beat two more minutes. Pour into a greased 9" x 13" baking pan. Bake for 30 to 35 minutes or until a toothpick comes out clean from the center. Cool on a wire rack. You can ice it with Duncan Hines Cream Cheese Frosting or just serve with Cool Whip or something similar or just eat it plain. Its also great made into cupcakes and then freeze the extras to pull out for lunches.

    This cake turned out FABULOUS!!! I used a bundt pan and it looked beautiful and tasted sooooo good! I glazed it, but I think it would be just as good sprinkled with powdered sugar. It's moist, flavorful and just as good, if not better than any gluten filled spice cake. Thanks for the great recipe!

    This cake turned out wonderful. A BIG HIT with everyone even the non celiac. Since it was a birthday cake I frosted it, but next time I'll dust it with powder sugar or add a small amount of whipped cream.

    This cake was delicious! Everyone loved it, and out of the 11 people we had eating it, only 3 of us were gluten-free eaters. I used a baking mix that had xanthan gum in it, so I left that out. I baked it in a preheated stonewear bundt pan and it took about 40-45 minutes. It came out beautifully and was moist and delicious.

    The following recipe comes to us from Phil Walker.
    Base:
    75g/3 ounces of butter or willow at room temperature
    50g/2 ounces of margarine also at room temperature
    60g/two and a half ounces caster sugar
    175g/6 ounces of gluten-free flour
    25g/1 ounces of corn flour
    Draw all ingredients together with hand, until a soft paste.
    Grease and line bottom and sides, of a 25.5cm/10 inch spring form cake tin, making sure the baking parchment, stands 1 inch higher around the sides than the tin. Press mixture evenly into tin. Set oven to gas3/325f/170c bake for approximately 40 minutes until golden brown, and just firm, to touch, cool completely.
    Filling
    9.5 ounce bottle of Key Lime Jelly made up to half a pint with boiling water, and juice of 1 lime or 2 tablespoons of lime juice.
    225g/8 ounces Philadelphia cream cheese, or equivalent. Beaten a little with a wooden spoon to soften
    Half a pint of double cream loosely whipped.
    When jelly is half set, whip everything together, reserving 3 or 4 tablespoons jelly to glaze. Tip into cooled base, glaze, and chill for 30 minutes. Makes ten portions.

    This recipe comes to us from Joe Ellison.
    Preheat oven to 325 F.
    Grease a bundt or tube pan (7-inch tube pan, or a 10-inch bundt pan)
    Boil together, covered, for 3 minutes:
    1 cup water
    2 cups raisins
    1 cup brown sugar
    ½ cup dairy-free and gluten-free margarine or shortening
    ½ teaspoon each ground cinnamon and allspice
    ½ teaspoon salt
    1/8 teaspoon nutmeg
    Let cool. This mixture can sit overnight with no harm to the finished product. Just dont refrigerate it, or youll have to reheat it.
    Sift, then measure to equal 2 cups:
    2 cups gluten-free flour mix (I used 1 2/3 cups of a one:one:one mix of Asian white rice flour, sweet rice flour, and tapioca starch, plus 1/3 cups sorghum, but any all-purpose mix will do)
    Sift again with:
    1 teaspoon baking powder
    1 teaspoon baking soda
    ½ teaspoon xanthan gum, if desired (I used it, but would actually leave it out next time)
    Stir the flour into the liquid ingredients (or the other way round—it really doesnt matter). Stir until smooth.
    If desired, add:
    1 cup chopped almonds or other nuts
    1 cup chopped dried fruit, such as dates, figs, and candied citron
    Pour batter into prepared pan, and level with a spatula. Bake for one hour. It will test done at about 45 or 50 minutes, but needs the extra baking time to set properly. If it doesnt test done (toothpick comes out clean) at one hour, keep baking until it does, then give it another five or ten minutes.
    Allow to cool in pan on a cooling rack, then turn out onto a serving platter.
    You can add any icing you want, or no icing. You can also use a sugar/lemon juice glaze, or a white butter-cream style icing.

    Gluten, dairy and soy free, this delicious fruitcake is even quick (as fruitcakes go!) to make. This fruit-filled, delicious cake doesn't need to be "cured" for days or even weeks, so don't be scared away from trying fruitcake this holiday!  My recipe doesn't produce the brick-like product we've all made fun of, but it does make enough for more than one cake, so you'll have enough left over to give away some cakes to friends and neighbors (if you're willing to share!).
    Ingredients:
    1 cup butter or non-dairy alternative(e.g. Earth BalanceButtery Sticks)
    2 cups granulated cane sugar
    6 eggs
    ¼ cup light rum
    1 Tbs. lime juice
    1 tsp. gluten-free vanilla extract
    1 Tbs. almond extract (optional)
    1 tsp. grated lime zest (approximately1 lime)
    2 ¾ cup mixed dried/candied fruit*
    ½ cup chopped walnuts (optional)
    2 cups dry red wine
    1 cup molasses or dark agave nectar
    3 cups Jules Gluten FreeAll Purpose Flour
    1 ½ Tbs. gluten-free bakingpowder
    ½ tsp. ground nutmeg
    ½ tsp. ground allspice
    1 tsp. cinnamon
    1 pinch salt
    Cointreau, Grand Marnier or othercitrus flavored distilled liqueur for brushing on finished cakes
    *Dried/Candied fruit should contain amixture of several fruits such as cherries, cranberries, raisins,sultanas, dates, figs, pineapple, candied citrus peel ....
    Directions:
    Preheat oven to 350F. Oil and dusttwo 9-inch round cake pans or 1 large bundt pan plus 4-6 small loafpans with Jules Gluten Free All Purpose Flour. Setaside.
    In a large mixing bowl, cream togetherthe butter and sugar until light and fluffy. Beat in the eggs andbeat until well mixed. Add in the rum, lime juice, extracts, zestand molasses. Stir in the dried/candied fruits.
    In another bowl, whisk together thedried ingredients: Jules Gluten Free All Purpose Flour,baking powder, spices and salt. Fold into the wet batter just untilintegrated. Pour into prepared pans.
    Bake for 50 minutes in the small loafpans or 60 minutes in larger pans, checking to be sure the cakes arenot burning at the edges though. A knife inserted into the centersshould come out clean. Brush the tops of each cake with citrusflavored liqueur. Cool in the pans for 15 minutes, then turn outonto a wire rack to finish cooling. Wrap cooled cakes in plasticwrap and then foil, if freezing.

    Celiac.com 08/14/2014 - I have missed ice cream cakes since I was diagnosed with celiac disease. Below is a make-ahead ice cream cake for a gluten-free birthday celebration, so that no one has to miss ice cream cake again!
    You will need:
    1 Gluten Free Betty Crocker Devil’s Food Cake Mix ½ - 1 gallon Gluten Free Vanilla Ice Cream, or Favorite gluten-free Ice Cream Flavor 1- 2 Containers Duncan Hines or other Gluten Free Fudge Frosting Cake Decorating Frosting, optional to write happy birthday message Candles, optional for birthday party. Directions:
    Bake the Gluten free Devil’s Food Cake as per box instructions, in two 8” cake pans. Remove from oven and cool. When the cake is completely cool, take the ice cream out of freezer to soften. Place one Gluten Free Cake Layer on a cake platter. Put an even layer of softened ice cream on top. Next, place the other Gluten Free Cake Layer on top of the softened ice cream. If the ice cream is getting to soft place the cake in the freezer for 10 minutes before frosting. After frosting the cake put it back into the freezer until about to serve.     Celiac.com 06/23/2018 - If you’re looking for a great gluten-free Mexican-style favorite that is sure to be a big hit at dinner or at your next potluck, try these green chili enchiladas with roasted cauliflower. The recipe calls for chicken, but they are just as delicious when made vegetarian using just the roasted cauliflower. Either way, these enchiladas will disappear fast. Roasted cauliflower gives these green chili chicken enchiladas a deep, smokey flavor that diners are sure to love.
    Ingredients:
    2 cans gluten-free green chili enchilada sauce (I use Hatch brand) 1 small head cauliflower, roasted and chopped 6 ounces chicken meat, browned ½ cup cotija cheese, crumbled ½ cup queso fresco, diced 1 medium onion, diced ⅓ cup green onions, minced ¼ cup radishes, sliced 1 tablespoon cooking oil 1 cup chopped cabbage, for serving ½ cup sliced cherry or grape tomatoes, for serving ¼ cup cilantro, chopped 1 dozen fresh corn tortillas  ⅔ cup oil, for softening tortillas 1 large avocado, cut into small chunks Note: For a tasty vegetarian version, just omit the chicken, double the roasted cauliflower, and prepare according to directions.
    Directions:
    Heat 1 tablespoon oil in a cast iron or ovenproof pan until hot.
    Add chicken and brown lightly on both sides. 
    Remove chicken to paper towels to cool.
     
    Cut cauliflower into small pieces and place in the oiled pan.
    Roast in oven at 350F until browned on both sides.
    Remove from the oven when tender. 
    Allow roasted cauliflower to cool.
    Chop cauliflower, or break into small pieces and set aside.
    Chop cooled chicken and set aside.
    Heat 1 inch of cooking oil in a small frying pan.
    When oil is hot, use a spatula to submerge a tortilla in the oil and leave only long enough to soften, about 10 seconds or so. 
    Remove soft tortilla to a paper towel and repeat with remaining tortillas.
    Pour enough enchilada sauce to coat the bottom of a large casserole pan.
    Dunk a tortilla into the sauce and cover both sides. Add more sauce as needed.
    Fill each tortilla with bits of chicken, cauliflower, onion, and queso fresco, and roll into shape.
    When pan is full of rolled enchiladas, top with remaining sauce.
    Cook at 350F until sauce bubbles.
    Remove and top with fresh cotija cheese and scallions.
    Serve with rice, beans, and cabbage, and garnish with avocado, cilantro, and sliced grape tomatoes.

    Celiac.com 06/22/2018 - The rise of food allergies means that many people are avoiding gluten in recent times. In fact, the number of Americans who have stopped eating gluten has tripled in eight years between 2009 and 2017.
    Whatever your rationale for avoiding gluten, whether its celiac disease, a sensitivity to the protein, or any other reason, it can be really hard to find suitable places to eat out. When you’re on holiday in a new and unknown environment, this can be near impossible. As awareness of celiac disease grows around the world, however, more and more cities are opening their doors to gluten-free lifestyles, none more so than the 10 locations on the list below.
    Perhaps unsurprisingly, the U.S is a hotbed of gluten-free options, with four cities making the top 10, as well as the Hawaiian island of Maui. Chicago, in particular, is a real haven of gluten-free fare, with 240 coeliac-safe eateries throughout this huge city. The super hip city of Portland also ranks highly on this list, with the capital of counterculture rich in gluten-free cuisine, with San Francisco and Denver also included. Outside of the states, several prominent European capitals also rank very highly on the list, including Prague, the picturesque and historic capital of the Czech Republic, which boasts the best-reviewed restaurants on this list.
    The Irish capital of Dublin, meanwhile, has the most gluten-free establishments, with a huge 330 to choose from, while Amsterdam and Barcelona also feature prominently thanks to their variety of top-notch gluten-free fodder.
    Finally, a special mention must go to Auckland, the sole representative of Australasia in this list, with the largest city in New Zealand rounding out the top 10 thanks to its 180 coeliacsafe eateries.

    Celiac.com 06/21/2018 - Would you buy a house advertised as ‘gluten-free’? Yes, there really is such a house for sale. 
    It seems a Phoenix realtor Mike D’Elena is hoping that his trendy claim will catch the eye of a buyer hungry to avoid gluten, or, at least one with a sense of humor. D’Elena said he crafted the ads as a way to “be funny and to draw attention.” The idea, D’Elena said, is to “make it memorable.” 
    Though D’Elena’s marketing seeks to capitalizes on the gluten-free trend, he knows Celiac disease is a serious health issue for some people. “[W]e’re not here to offend anybody….this is just something we're just trying to do to draw attention and do what's best for our clients," he said. 
    Still, the signs seem to be working. D'elena had fielded six offers within a few days of listing the west Phoenix home.
    "Buying can sometimes be the most stressful thing you do in your entire life so why not have some fun with it," he said.

    Celiac.com 06/20/2018 - Currently, the only way to manage celiac disease is to eliminate gluten from the diet. That could be set to change as clinical trials begin in Australia for a new vaccine that aims to switch off the immune response to gluten. 
    The trials are set to begin at Australia’s University of the Sunshine Coast Clinical Trials Centre. The vaccine is designed to allow people with celiac disease to consume gluten with no adverse effects. A successful vaccine could be the beginning of the end for the gluten-free diet as the only currently viable treatment for celiac disease. That could be a massive breakthrough for people with celiac disease.
    USC’s Clinical Trials Centre Director Lucas Litewka said trial participants would receive an injection of the vaccine twice a week for seven weeks. The trials will be conducted alongside gastroenterologist Dr. James Daveson, who called the vaccine “a very exciting potential new therapy that has been undergoing clinical trials for several years now.”
    Dr. Daveson said the investigational vaccine might potentially restore gluten tolerance to people with celiac disease.The trial is open to adults between the ages of 18 and 70 who have clinically diagnosed celiac disease, and have followed a strict gluten-free diet for at least 12 months.
