    Apple Cider Chicken (Gluten-Free)

Anytime you cook down apple cider, the flavor intensifies making this a nice pair to rice and vegetables, whichever you happen to have on hand. A crisp Granny Smith works best to compliment the cider, but any apple will do.

    Ingredients:
    4-5 boneless chicken breasts or thighs
    1 ½ cups apple cider
    1 small onion, chopped
    1 apple, sliced into ¼-inch wedges
    2 cloves garlic, chopped
    2 tablespoons olive oil
    2 tablespoons butter, divided
    1 teaspoon fresh thyme
    1 teaspoon fresh rosemary
    Salt and pepper for seasoning

    Directions:
    Rinse and pat dry chicken. Sprinkle with salt and pepper.

    In a large skillet, heat oil and 1 tablespoon butter over medium heat. Sear chicken on each side about 4-5 minutes. Remove from pan and set aside.

    Add the remaining butter, onion, apple, garlic, and herbs to skillet. Sauté for 7 minutes, until onions and apples are soft.

    Add cider and chicken and bring to a boil. Reduce heat and simmer covered for another 10-12 minutes until chicken is cooked through.

    For the glaze:
    2 ounces favorite oil
    1 large onion, chopped
    4 cloves garlic, chopped
    1 chipotle pepper, chopped (usually find dried in produce section or canned
    in Mexican section, med. hot)
    1 arbol chili, stem removed (usually find dried in produce section)
    1 tablespoon cracked black pepper
    2 tablespoon Worcestershire sauce
    2 cups orange juice
    2 cups Gluten-free Casein-free barbecue sauce
    6 dashes Tabasco style hot sauce
    2 lemons juiced
    Kosher salt to taste
    For the pork loin:
    3 pounds pork loin
    4 tablespoons olive oil
    2 tablespoons kosher salt
    2 tablespoons cracked black pepper
    Preheat oven to 350 degrees.
    For the glaze: In a small saucepot add canola oil and sauté onions and garlic until translucent. Then add chipotle and arbol chilies and continue to cook until chills start to toast. Then add cracked black pepper and deglaze with Worcestershire sauce and orange juice. Reduce orange juice until starts to thicken. Then add in your favorite barbecue sauce and reduce to low heat. Continue cooking for about 15 minutes. Season with hot sauce, lemon juice and to taste with salt. Strain barbecue sauce and set aside.
    For the pork loin: On a large sheet pan rub the pork loin with olive oil and season with salt and cracked pepper. Roast in a 350 degree oven (basting with the citrus glaze about every 15 minutes) until the internal temperature is about 140 degrees. Let meat set up for about 5 minutes and slice.

    Ingredients:
    1 can of Amys Lentil-Vegetable Soup
    1 pound (or more) ground meat - half hamburger, half lamb
    Salt
    Dried basil
    One cup chopped carrots (about 3-4 carrots)
    One cup of potatoes, peeled and cut in small pieces (about 2 med-sized potatoes)
    Directions - Patties:
    Mix together ground lamb and ground beef (50/50)
    Into this mixture add some salt and dried basil (approx 1/8 tsp or to taste)
    Shape into small patties (I like to make my flat ovals, about 2 long)
    Fry patties until done. Drain on papertowels.
    Directions - Vegetables:
    Cook the carrots a saucepan with water. Drain.
    Cook the potatoes in another saucepan with water. Drain
    Directions - After the meat and vegetables are cooked:
    Pour the Amys lentil vegetable soup in a 10-12 frying pan.
    Stir in the carrots.
    Place the cooked meat patties in a ring around the outer edge of the pan, settling them into the soup.
    Make a well in the center of the mixture and place the cooked potatoes together in the center, stir slightly to coat the potatoes with the broth.
    Heat covered on low until all is hot.
    Serve in the pan.
    Serves 3-4. Increase meat and potatoes if you need more servings.

    Ingredients:
    5 pounds chicken drummettes
    Garlic salt to taste
    1/3 cup catsup
    1 cup cornstarch
    1¼ cup brown sugar
    3 eggs, beaten
    2 tablespoons gluten-free soy sauce
    2 tablespoons oil for frying
    ¾ cup cider vinegar
    ½ cup chicken broth

    Directions:
    Preheat oven to 300F. Wash drummettes and sprinkle with garlic salt. Roll them in cornstarch, then the beaten eggs. Fry in small batches in hot oil until browned. Remove to baking dish large enough to hold them all. In medium saucepan, mix together broth, catsup, brown sugar, soy sauce and vinegar and heat up to dissolve together. Pour over the chicken wings. Cover with foil and bake lightly for 1½ hours, basting or turning often. Serve hot or cold. Serves 10-12.

    Celiac.com 03/24/2015 - The right casserole can feed a small army of hungry guests and keep people reaching for seconds and even thirds. This cheesy broccoli casserole is as easy as throwing a few simple ingredients into a baking dish and cooking until heated through.
    Ingredients:
    2½ cups chopped cooked chicken 1 cup chopped cauliflower 1 cup chopped broccoli 1 cup chopped celery 1½ cups sour cream 1 cup shredded cheddar cheese ¼ cup mayonnaise 3 green onions, finely chopped 3 slices crumpled cooked bacon as topping ½ cup slivered almonds salt and pepper Directions:
    Heat oven to 350F.
    Chop cauliflower into small pieces.
    Mix chicken, sour cream, mayonnaise, half of the green onions and salt and pepper in medium bowl.
    Stir in the broccoli, cauliflower and celery.
    Place in medium baking dish and sprinkle remaining cheese and bacon on top.
    Bake for 20 minutes, until heated through.
    Top with almonds, bacon, and remaining green onions before serving.

    Thank you for responding. No I have not been tested for celiac disease. My ths free t3 free t4 were all normal. My reverse t3 was a bit high and my tg antibodies were high. Also I have low blood pressure and low testosterone. The whole reason I went to see the doctor in the first place was because I had nausea and acid reflux for no apparent reason which I hve recently discovered is connected to hashimotos. I have just been to a dentist because I have untreated periodontal disease which we suspect may be causing everything. We are in the process of fixing that as well. So far the gluten free diet along with probiotics and L glutamine are helping a lot with the stomach issues.
    In my saga to get diagnosed, I had an IgA blood test (I had been eating gluten for a few months). It came back negative. I managed to see the dermatologist yesterday (woo hoo!) who said my rash is "consistent with DH" but he would not say it was DH. He did two punch biopsies which will be ready in about a week. My primary care sent me an email saying that because the IgA is negative, I do not have celiac disease. So hoping the biopsy shows something. Why will no one give me a diagnosis??? I'm going out of my mind. I do not want to go gluten free unless I have to because I already have several restrictions on what I can cook for my son with multiple food allergies, and wheat is a big part of his diet (he is allergic to peanuts, tree nuts, soy, eggs and sesame). I'm at my wits end.   Thanks for being so supportive everyone!
