    King Ranch Casserole (Gluten-Free)

    This recipe comes to us from Phyllis Chinn.

    12 tortillas - spray with oil and roast at 350 until crispy (turning once). Reserve.

    Sauce:
    2 Tablespoon butter
    2 cloves garlic, minced
    ¾ teaspoon chili powder
    ½ teaspoon salt
    ½ teaspoon ground pepper
    ¼ teaspoon cayenne
    ¼ teaspoon ground cumin
    2 Tablespoon gluten-free flour
    1 cup chicken broth
    ½ cup milk
    3 Tablespoon sour cream

    Melt butter and sauté garlic until soft; add spices, flour, and mix well. Add broth, milk and cook until thickened, stirring constantly. If too thick, add more broth. Remove from fire and stir in sour cream. Set aside.

    Meat/vegetable mixture:
    1 ½ pounds ground beef; brown and set aside.
    1 Tablespoon butter
    1 onion, chopped
    1 clove garlic, minced
    1 small green bell pepper, cored, seeded, and chopped
    8 oz. mushrooms, sliced
    ½ cups sliced ripe olives
    1 10 oz. can of Rotel tomatoes (Rotel tomatoes are a southern type of canned tomato with chilis - it contains tomatoes with juice, chopped green chili peppers, salt, and spice)

    Melt butter and sauce vegetables until cooked through - add Rotel tomatoes and beef. Cook down until no longer juicy.

    2 cups shredded Colby or cheddar cheese

    Break up crisp tortillas into large pieces and layer ½ of them in 8 x 12 oiled casserole. Layer ½ of meat mixture; ½ cheese; ½ sauce; rest of chips; rest of meat; rest of cheese; and rest of sauce. Bake at 350 until bubbly.

    Note: 4 cups cooked, shredded chicken or turkey may be substituted for beef.

    Ingredients:
    1 pound lean ground beef
    1 small onion, chopped
    2 cloves garlic, minced
    1 ribs celery, chopped
    1 - 14.5 oz. can diced tomatoes
    1 cup short grain brown rice
    1 ½ cup water
    ¼ teaspoon salt
    Directions:
    Preheat oven to 350F. Brown beef in heavy flame proof Dutch oven. Stir in onions, garlic and celery and sauté for a few minutes. Add remaining ingredients and bring to boil. Cover and move to oven for 45 minutes.
    You can probably make this with any kind of rice; just use the amount of water required for the type of rice youre using. Also, if you make it with white rice, reduce the cooking time in the oven to about 30 minutes.

    Ingredients:
    1 can of Amys Lentil-Vegetable Soup
    1 pound (or more) ground meat - half hamburger, half lamb
    Salt
    Dried basil
    One cup chopped carrots (about 3-4 carrots)
    One cup of potatoes, peeled and cut in small pieces (about 2 med-sized potatoes)
    Directions - Patties:
    Mix together ground lamb and ground beef (50/50)
    Into this mixture add some salt and dried basil (approx 1/8 tsp or to taste)
    Shape into small patties (I like to make my flat ovals, about 2 long)
    Fry patties until done. Drain on papertowels.
    Directions - Vegetables:
    Cook the carrots a saucepan with water. Drain.
    Cook the potatoes in another saucepan with water. Drain
    Directions - After the meat and vegetables are cooked:
    Pour the Amys lentil vegetable soup in a 10-12 frying pan.
    Stir in the carrots.
    Place the cooked meat patties in a ring around the outer edge of the pan, settling them into the soup.
    Make a well in the center of the mixture and place the cooked potatoes together in the center, stir slightly to coat the potatoes with the broth.
    Heat covered on low until all is hot.
    Serve in the pan.
    Serves 3-4. Increase meat and potatoes if you need more servings.

    Celiac.com 01/23/2014 - Wild salmon is one of the perpetual favorites at my dinner table. This recipe adds dash of Dijon mustard, pecans, parsley and Romano cheese to deliver this salmon dish that is sure to be a hit at your table.
    Ingredients:
    4 salmon fillets (4 ounce) ¼ cup butter, melted (not margarine!) 3 tablespoons Dijon or brown mustard 1 teaspoon dry white wine 1½ tablespoons honey ¼ cup crushed Rice Chex ¼ cup finely chopped pecans ¼ grated Romano or Parmesan cheese ¼ teaspoon paprika 4 teaspoons chopped Italian parsley salt and pepper to taste 1 lemon, for garnish Directions:
    Heat oven to 400 degrees F (200 degrees C).
    In a small bowl, mix butter, mustard, wine and honey. Set aside.
    In another bowl, mix Rice Chex, chopped pecans, and parsley.
    Brush each salmon fillet lightly with honey mustard mixture, then sprinkle the tops of the fillets with the Chex mixture. Top with paprika.
    Bake salmon 12 to 15 minutes until it flakes easily with a fork.
    Season with salt and pepper, and garnish with a wedge of lemon.
    Serve with rice and vegetables for a delicious meal.

    This glazed version is one of my many favorite ways to enjoy salmon. The glaze offers just the right blend of honey, ginger, and soy, along with a tiny zing from the hot sauce, to produce grilled salmon that is sure to please. Glaze can be prepared ahead of time, as needed. Great for barbeques and cookouts!
    Ingredients:
    4 salmon fillets, about 1 pound ½ cup soy sauce ¼ cup honey ¼ cup water ¼ cup olive oil 1 teaspoon fresh ginger, shredded dash of lemon pepper dash of garlic powder dash of onion powder dash of salt 1 teaspoon Sriracha hot sauce Directions:
    Season salmon fillets with lemon pepper, garlic powder, and salt.
    In a small bowl, mix soy sauce, hot sauce, honey, ginger, water, and olive oil until honey dissolves.
    Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
    Heat grill to medium-high. Lightly oil grill grate.
    Remove the filets to a plate and discard the marinade.
    Place salmon skin up on a hot grill, about 475 degrees Fahrenheit. Sear to capture the juices, then flip to skin-side down. Cook salmon about 3 minutes per side, or until the fat begins to seep from the seams. Plate and serve with rice and vegetables.

    Alaskaguy, the thing with the nightshades is inflammation. I've never heard of nightshades making anyone's dh flare or anything else. Seems like ppl avoid nightshades to stop their body from hurting.
    Thank you so much! and yes, I am aware of other allergies. I have leaky gut as well and have a food allergy to potatoes and corn as well and my mother eats those too. So very stressed out. I went downstairs and found a mini fridge and im going to start using that because like you said, handles, faucets, etc are too much. the stress does not help the body either, ive been getting sick three times a week. its very hard.  I am glad there are people who understand! Sounds like you were concerned too
    The cheese and avocado are fine, the gluten was not aerosolized anything like that. NOW if your allergic to wheat there could be some issues being around it like that (some severe cases of peanut allergies can go off if it is in the room) but you would be anaphylactic.  I get the paranoia, it gets to the point of being almost PTSD. You fear to get sick so bad because the weirdest things have bedridden you. I got glutened touching gluten residue on facets, fridge door handles, etc in my old
