    MACARONI AND CHEESE (GLUTEN-FREE)

    Macaroni and cheese is the ultimate comfort food. Whenever nothing else sounds good, macaroni and cheese comes to the rescue. I was so sad when I had to give up gluten and dairy and thought I may never get to eat macaroni and cheese again. However, I modify the following recipe to fit my dietary requirements, and it's yummy! I substitute butter for coconut oil,  cow milk for almond milk, and real cheese for Daiya chedder. Macaroni and cheese is very forgiving and it's almost impossible to ruin it, so feel free to experiment with the ingredients and substitute where needed.

    Ingredients

    • Filtered water, pinch sea  salt
    • 1 cup gluten-free macaroni noodles
    • 1 tablespoon butter (or substitute)
    • 1 tablespoon gluten-free all purpose flour
    • 1 cup milk (or substitute)
    • ¾  teaspoon sea salt
    • ¼ teaspoon pepper
    • ¼ teaspoon paprika
    • 2 cups shredded cheddar cheese (or substitute)
    Directions
    1. Preheat oven to 400 degrees Fahrenheit.
    2. Fill large pot half way with water. Bring water to a boil; cook macaroni to al dente stage according to package directions.
    3. Drain well.
    4. Melt butter in a saucepan over medium-low heat.
    5. Whisk in flour and cook, stirring constantly, for 2 minutes.
    6. Whisk in milk and continue cooking, stirring constantly, until sauce thickens, about 5 minutes.
    7. Stir in salt, pepper and paprika and remove from heat.
    8. Stir in 1/4 cup of the cheese.
    9. Spread half the macaroni over the bottom of a lightly greased 1 quart baking dish.
    10. Spread half the remaining cheese over the macaroni.
    11. Top with remaining macaroni.
    12. Pour sauce over the macaroni.
    13. Top with the remaining cheese.
    14. Bake until bubbly and lightly browned, about 20 minutes.
    15. Let rest 5 minutes before serving.

    I made this for dinner tonight. I didn't have cheddar cheese but did have monterey and pepper jack. I used half of each and had a white mac n cheese. My husband and I both enjoyed it along with Rice burgers and chili beans. A new family favorite I'm sure. Thanks.

    Approximately 10 oz. Ground beef
    1 (14-½ oz.) can Del Monte Diced Tomatoes with Green Pepper and Onion
    1/8 teaspoon cayenne pepper
    1 (14-½ oz.) can Del Monte Sliced New Potatoes, drained
    Cheese topping
    Brown meat and then drain. Add tomatoes and cayenne pepper to skillet. Cook 5 to 8 minutes or until slightly thickened, stirring often. Stir in potatoes, heat through. Top with cheese. This dish is spicy and flavorful.

    I love fruit smoothies! I love them for breakfast, I love them for lunch, I love them for a snack, and I even love them for dessert.
    This smoothie is one of the easiest, moist satisfying smoothies I know how to make. It's also quite flexible. You can use so many different kinds of fruits or berries, according to your tastes or what's available.
    For each smoothie take:
    1 banana
    1/2 cup yogurt
    1 cup of whole raw milk, or whole, non-homogenized organic milk
    1/2 teaspoon organic vanilla
    1 tablespoon honey, dissolved in 1 tablespoon wam water
    1/2 cup strawberries
    1/2 cup blueberries
    1/2 cup blackberries
    1/2 cup peach
    1 pinch of sea salt
    Mix ingredients in blender until smooth. Serve immediately.

    Celiac.com 01/07/2014 - Anyone who ate aluminium-trayed tv dinners or school lunches in a certain era, likely knows, and possibly loves, Salisbury steak. Others may know its microwaveable descendants from the supermarket frozen aisle.
    Either way, Salisbury steak is one of those foods that evokes strong memories, and this simple, easy-to-make recipe delivers a tasty, gluten-free version of that old favorite.
    Ingredients:
    1½ pounds ground beef ½ cup crushed Rice Chex or gluten-free bread crumbs 5 tablespoons gluten-free instant onion soup mix 1 cup water ¼ cup red wine 1 egg 1 tablespoon Worcestershire sauce ½ teaspoon mustard powder ¼ teaspoon salt â…› teaspoon ground black pepper 1 tablespoon potato flour ¼ cup ketchup Directions:
    In a large bowl, mix together â…“ of the dry onion soup with ground beef, Rice Chex, egg, salt and black pepper.
    Shape into 6 oval patties. In a large skillet over medium-high heat, brown both sides of patties. Pour off excess fat.
    In a small bowl, blend water, potato flour and remaining dry soup until smooth. Mix in ketchup, red wine, Worcestershire sauce and mustard powder. Pour over meat in skillet.
    Cover, and cook, stirring occasionally, for about 20 minutes, until sauce reduces and thickens. If necessary thicken with more potato flour, or thin with water.
    Serve with rice or mashed potatoes and a side vegetable for a full helping of gluten-free comfort food.

    Celiac.com 12/31/2014 - This recipes combines thinly sliced potatoes, Gruyere and Parmesan cheeses and cream with a few herbs and spices to deliver a tasty variation on traditional scalloped potatoes. It will help to fill the house with warmth and delicious aromas on a cold day, and goes great as a side to most diner entrees.
    Ingredients:
    2 pounds russet potatoes, peeled and cut into 1/8-inch-thick slices 1½ cups heavy cream 1¼ cup grated Gruyere cheese, plus more for broiling ½ cup grated Parmesan, plus more for broiling ½ tablespoon butter 2 bay leaves 2 sprigs fresh thyme, plus more to finish 3 garlic cloves, chopped ½ teaspoon onion powder Kosher salt and freshly ground black pepper Directions:
    Heat the oven to 350 degrees F.
    Wash and slice potatoes and put into a large bowl.
    In a saucepan, heat the cream with the bay leaves, thyme, garlic, and some salt and pepper.
    While the cream heats up, use butter to grease a casserole dish.
    Use a fork or slotted spoon to remove the bay leaves and thyme.
    Pour the heated cream into a large bowl with the potato slices. Mix gently to coat the potatoes.
    Add Gruyere and Parmesan and mix into the potatoes. Season with a little bit of salt and pepper. Toss gently to mix.
    Spoon a little bit of the cream into the bottom of the casserole dish. Then spoon the potatoes in.
    Level out the potatoes for uniform cooking time. Pour the remaining cream at the bottom of the bowl over the top.
    Top with some Parmesan, a bit of Gruyere, and fresh thyme leaves.
    Cover the dish with aluminum foil, but pull back one corner for the steam to escape. Bake for 25-30 minutes until potatoes are bubbling and tender.
    Put under the broiler and broil on high until the top is browned, about 2 minutes. Serve hot.
