    Really Good Hummus Dip (Gluten-Free)

    Ingredients:

    • 2 (15-1/2 oz.) cans chickpeas, aka garbanzo beans
    • 3 cloves garlic, roughly chopped
    • ¼ cup freshly squeezed lemon juice, from 3 lemons
    • ¼ cup sesame tahini, well stirred
    • ¼ teaspoon cumin
    • 1 teaspoon salt
    • 3 tablespoons extra virgin olive oil, plus more for drizzling
    • Dash of paprika, as garnish (optional)

    Directions:
    Reserving the liquid from the can, strain the chick peas. Set a few chickpeas aside for garnish.

    In the bowl of a food processor fitted with metal blade, combine the chickpeas, ⅓ cup reserved canning liquid, lemon juice, tahini, garlic, cumin, salt and olive oil. Process for several minutes until smooth and creamy.

    The hummus should be smooth and creamy, but still hold its shape; stir in more liquid if it's too thick.

    Taste and add more lemon and seasoning if desired.

    Transfer mixture to a serving dish.

    Use a spoon to make a shallow well in the center.

    Drizzle olive oil in the well, and sprinkle with paprika.

    Serve at room temperature.

    It's super weird that you are able to enjoy chickpeas as a celiac... It is common practice for chickpeas and wheat to be rotated crops so cross contamination happens in the field at times, and furthermore in storage. I haven't been able to find a single brand of chickpeas I can enjoy, despite rigorously cleaning them. My doctor initially suggested it may be a chickpea allergy, but after researching up the supply chain, I found information that suggests chickpeas are dangerous for celiacs.

    They are gluten-free, but your doctor is likely correct--you could have an intolerance to them that is separate from your celiac disease.

    My daughter has violent celiac disease. She is fine with chickpeas, hummus, falafel, etc. If you suspect cross-contamination, it is extremely easy to hand-separate any wheat berries from chickpeas, because they are look very different. I don't believe chickpeas absorb gluten from any wheat they may have contacted during processing. If you react after eating chickpeas that you have manually separated yourself, then the reaction is to chickpeas.

    2 - 15 oz cans of chick peas
    2 Tablespoon garlic
    2 teaspoon cumin
    1 teaspoon turmeric
    6 minced scallions
    large handful of parsley
    1 egg
    1 Tablespoon lemon juice
    A few dashes of cayenne pepper
    ½ cup rice flour
    Put beans in a food processor and mash as much as possible. Put everything else except flour in the food processor and continue to chop it up until thoroughly blended. Put in a bowl and add flour until you get a firm, thick batter. Form into balls or patties and deep fry in vegetable oil. Serve with yogurt-dill sauce (2 Tablespoon Yogurt in a cup of plain, low-fat Yogurt).

    Rice : 1 cup (usually good for two suppers and a lunch, depending on how hungry one is)
    Lemon: Juice of one (medium size)
    Black mustard seeds: 1 tablespoon
    Channa dal (a kind of dried lentil): ½ tablespoon
    Urad dal: 1 teaspoon
    Turmeric: 1 teaspoon
    Dried red chilies: two (I use more and you can, too, to make it more incendiary)
    Fenugreek powder: ½ teaspoon
    Salt: To taste
    Preparation:
    In a medium-sized pot/skillet (deep enough for stuff to be sautéed in hot oil, and preferably with its own lid or capable of being covered by a plate or like device), heat 3 or 4 tablespoons of oil of your choice (canola/vegetable/corn). Throw in the mustard seeds when the oil is hot (you learn when by throwing in a couple of mustard seeds to start with and the rest about 20 seconds after the test ones pop). You must then cover your pot and let the mustard seeds pop without burning. When most or all have popped, throw in both dals, the fenugreek, and the fried chilies (split in halves, lengthwise, to get seeds in). Adjust heat and sauté until dals and chilies turn sort of golden brown. Toss in your rice and sauté for 30 seconds (this is so that rice wont be unduly sticky when cooked).
    Now your rice is ready to be cooked. I dont know if you have a rice cooker. If you do, transfer pots contents to rice cooker, throw in water (with juice of lemon mixed in) as directed by rice cooker manufacturer, add turmeric & salt, mix well, and let the cooker do its trick.
    If you dont have a rice cooker, use the same sauté pot with all its contents. Add about 2½ cups of water, salt & turmeric, and cook the rice down. Or, go ahead and add as much water as you would (mix in lemon juice, of course) and cook the rice down with salt & turmeric added to pots contents.

    Ingredients:
    1 cup coarse soy granules (soy grits) or gluten-free textured vegetable protein (TVP)
    1 cup boiling water
    1 cup chopped green onions
    1 small bunch fresh parsley, washed and finely chopped
    ½ bunch fresh mint leaves, washed and chopped, OR ½ teaspoon dried mint leaves
    1 large or 2 medium firm ripe tomatoes, washed and diced
    Juice of 1 lemon, or more to taste
    3 tablespoons quality olive oil
    Salt and freshly ground pepper to taste
    Directions:
    Pour the boiling water over the soy or TVP granules, cover, and allow to stand until most of the water is absorbed (about an hour). Squeeze any remaining liquid out of the granules before placing in a large mixing bowl.
    Add remaining ingredients. Add more lemon juice and mint to taste. Toss together, cover the bowl, and refrigerate at least an hour before serving. The flavor actually improves the second day. Makes about 4 large servings.

    Celiac.com 07/17/2013 - I recently read somewhere that chicken tikka masala is the number one most popular dish in England. That does not surprise me. it's a delicious dish, and seems to be popular wherever it is offered. Many Americans also love chicken tikka masala.
    This kebab recipe offers an easy way to enjoy the tasty goodness of chicken tikka masala at home, with minimal muss and fuss.
    This recipe works great for outdoor summertime grilling, and will definitely have your family and any guests smiling. 
    Ingredients:
    1 cup yogurt
    2 tablespoons garam masala,
    ½ cup chopped cilantro,
    1½ teaspoons grated garlic
    1½ teaspoons grated ginger
    2 tablespoons tablespoon lime juice, plus 1 tablespoon
    salt and cayenne pepper to taste
    Note: Garam masala is a blend of spices. I don't have a special brand, but I am always cautious about spices, and encourage you to read labels to make sure that your brand does not include any wheat or gluten ingredients.
    You can easily make it yourself with a little effort. A typical Indian garam masala includes: black and white peppercorns, cloves, cinnamon, black and white cumin seeds, along with black, brown and green cardamom pods.
    Directions:
    Chicken Tikka:
    Marinate cubed chicken thighs in 1 cup yogurt, 2 tablespoons garam masala, 1/2 cup chopped cilantro, 1½ teaspoons each grated garlic and ginger, 2 tablespoons lime juice, and salt and cayenne.
    Skewer and grill over medium-high heat.
    Serve with yogurt mixed with lime juice.

    Celiac.com 06/21/2018 - Would you buy a house advertised as ‘gluten-free’? Yes, there really is such a house for sale. 
    It seems a Phoenix realtor Mike D’Elena is hoping that his trendy claim will catch the eye of a buyer hungry to avoid gluten, or, at least one with a sense of humor. D’Elena said he crafted the ads as a way to “be funny and to draw attention.” The idea, D’Elena said, is to “make it memorable.” 
    Though D’Elena’s marketing seeks to capitalizes on the gluten-free trend, he knows Celiac disease is a serious health issue for some people. “[W]e’re not here to offend anybody….this is just something we're just trying to do to draw attention and do what's best for our clients," he said. 
    Still, the signs seem to be working. D'elena had fielded six offers within a few days of listing the west Phoenix home.
    "Buying can sometimes be the most stressful thing you do in your entire life so why not have some fun with it," he said.

    Celiac.com 06/20/2018 - Currently, the only way to manage celiac disease is to eliminate gluten from the diet. That could be set to change as clinical trials begin in Australia for a new vaccine that aims to switch off the immune response to gluten. 
    The trials are set to begin at Australia’s University of the Sunshine Coast Clinical Trials Centre. The vaccine is designed to allow people with celiac disease to consume gluten with no adverse effects. A successful vaccine could be the beginning of the end for the gluten-free diet as the only currently viable treatment for celiac disease. That could be a massive breakthrough for people with celiac disease.
    USC’s Clinical Trials Centre Director Lucas Litewka said trial participants would receive an injection of the vaccine twice a week for seven weeks. The trials will be conducted alongside gastroenterologist Dr. James Daveson, who called the vaccine “a very exciting potential new therapy that has been undergoing clinical trials for several years now.”
    Dr. Daveson said the investigational vaccine might potentially restore gluten tolerance to people with celiac disease.The trial is open to adults between the ages of 18 and 70 who have clinically diagnosed celiac disease, and have followed a strict gluten-free diet for at least 12 months.     Celiac.com 06/19/2018 - Could baking soda help reduce the inflammation and damage caused by autoimmune diseases like rheumatoid arthritis, and celiac disease? Scientists at the Medical College of Georgia at Augusta University say that a daily dose of baking soda may in fact help reduce inflammation and damage caused by autoimmune diseases like rheumatoid arthritis, and celiac disease.
    Those scientists recently gathered some of the first evidence to show that cheap, over-the-counter antacids can prompt the spleen to promote an anti-inflammatory environment that could be helpful in combating inflammatory disease.
    A type of cell called mesothelial cells line our body cavities, like the digestive tract. They have little fingers, called microvilli, that sense the environment, and warn the organs they cover that there is an invader and an immune response is needed.
    The team’s data shows that when rats or healthy people drink a solution of baking soda, the stomach makes more acid, which causes mesothelial cells on the outside of the spleen to tell the spleen to go easy on the immune response.  "It's most likely a hamburger not a bacterial infection," is basically the message, says Dr. Paul O'Connor, renal physiologist in the MCG Department of Physiology at Augusta University and the study's corresponding author.
    That message, which is transmitted with help from a chemical messenger called acetylcholine, seems to encourage the gut to shift against inflammation, say the scientists.
    In patients who drank water with baking soda for two weeks, immune cells called macrophages, shifted from primarily those that promote inflammation, called M1, to those that reduce it, called M2. "The shift from inflammatory to an anti-inflammatory profile is happening everywhere," O'Connor says. "We saw it in the kidneys, we saw it in the spleen, now we see it in the peripheral blood."
    O'Connor hopes drinking baking soda can one day produce similar results for people with autoimmune disease. "You are not really turning anything off or on, you are just pushing it toward one side by giving an anti-inflammatory stimulus," he says, in this case, away from harmful inflammation. "It's potentially a really safe way to treat inflammatory disease."
    The research was funded by the National Institutes of Health.
