    What about Betty Crocker’s gluten-free cake mixes? They are easily found in your run of the mill (no pun intended) grocery stores and are pretty good. I use them to make a variety of baked goods for my son with Celiac, and he eats them with no problems.

    The King Arthur Yellow Cake mix is very good.  I made a layered lemon curd cake with a lemon whipped cream frosting for the first gluten free cake attempt and it was out of this world.  Now my family wants me to make one every time I visit - my non-Celiac family.  ?  Guess that's quite the vote of approval.

    These Betty Crocker mixes are handy and readily available.   Because they use only rice flour, the result is a grittier cake.

    Swerve makes Chocolate Cake, Vanilla Cake, and Cookie Mixes that are gluten free, grain free, and low carb. So no worry about blood sugar spikes like with all these others.
    My bakery uses a very similar recipe...almost identical except my ratios are a bit different with the flour, sweetener, starch, and I use a blend of black chocolate normal in my chocolate.
    My cookies are also almost the same, except my blend uses sugar free chocolate chips and a bit more almond flour.

    This recipe comes to us from Joe Ellison.
    Preheat oven to 325 F.
    Grease a bundt or tube pan (7-inch tube pan, or a 10-inch bundt pan)
    Boil together, covered, for 3 minutes:
    1 cup water
    2 cups raisins
    1 cup brown sugar
    ½ cup dairy-free and gluten-free margarine or shortening
    ½ teaspoon each ground cinnamon and allspice
    ½ teaspoon salt
    1/8 teaspoon nutmeg
    Let cool. This mixture can sit overnight with no harm to the finished product. Just dont refrigerate it, or youll have to reheat it.
    Sift, then measure to equal 2 cups:
    2 cups gluten-free flour mix (I used 1 2/3 cups of a one:one:one mix of Asian white rice flour, sweet rice flour, and tapioca starch, plus 1/3 cups sorghum, but any all-purpose mix will do)

    Ingredients:
    1 stick butter, softened
    1 ½ cup sugar
    2 eggs
    1 cup mashed pumpkin
    1/3 cup water
    1 ¾ cup gluten-free flour mix
    1 teaspoon soda
    ¾ teaspoon salt
    ¾ teaspoon xanthan gum
    1 ¾ teaspoon pumpkin pie spice
    Directions:
    Preheat oven to 350F.  Cream first four ingredients together.  Mix dry ingredients.  Beat in ½ of dry ingredients.  Beat in water.  Beat in remaining dry ingredients.  Pour into greased pan and bake according to one of the following options:
    9"x9" pan for 40 to 45 minutes, or; Medium tube cake pan (6 cup) 40 to 45 minutes, or; Large loaf pan 45 to 50 minutes. Cool and glaze with cream glaze.

    This is one recipe to keep in your recipe collection; especially if you love carrot cake as much as I do. The best thing about this recipe is that it is of course gluten-free, but also dairy-free. There is also an option for nut-free if you leave out the walnuts (adapted from Elana’s Pantry recipe).
