    Chelsea Clinton's Gluten-Free Wedding

    Celiac.com 07/31/2010 - Chelsea Clinton is set to wed Marc Mezvinsky today in what can only be described as the most high-profile gluten-free wedding ever! Until now, all-alternative banquet menus have been rare, but with Ms. Clinton blazing the trail for others, the gluten-free trend is sure to continue.

    Many people may not realize that Chelsea Clinton has been a vegan since she was a teenager, meaning she doesn't eat meat, dairy, eggs, or any animal products. Chelsea is also said to have a gluten allergy, meaning she cannot eat wheat, rye or barley either; which is why her wedding cake will be gluten-free and vegan, along with most of the other food that she will be serving to her guests on Saturday.

    A Gluten-free diet can be very restrictive, and vegan diets can be limiting too. Which is why  gluten-free vegan's must be extremely careful with what they put in their body. While Chelsea probably chose her wedding menu due to her own personal health needs, it is likely to also have a trickle down effect on the general public. Grace Clerihew, of Table Tales, a New York Catering Firm responded to Chelsea's wedding menu saying, “This will empower people to make these requests. Prior to this, they might have thought it was not mainstream enough to even talk about, but now that they see it being done by such a public persona it becomes acceptable.”

    While gluten-free and vegan diets are often met with  a great deal of scrutiny from mainstream consumers, chefs and caterers that understand  specific dietary restrictions  make delicious dishes that often have even the most extreme critics of the diet going back for seconds. Says Paula LeDuc of Paula LeDuc Fine Catering in San Francisco, “We've gotten very savvy about creating wonderful things with alternative ingredients.” According to LeDuc, she always makes extra vegan dishes because many times guests will want to trade in their meat plate when they see the scrumptious vegan options that others are enjoying. In fact, LeDuc says that gluten-free requests have increased from about one per month last year, to one per week this year.  LeDuc goes on to say, “Three or four years ago, gluten-free wasn't even part of the conversation.”

    Good for Mrs. Clinton the word is getting out. I've had Celiac for over 30 years I lived on rice crackers . What we have today is wonderful with all the new products and restaurants that have gluten-free menus .

    It is great that finally this information is made public. On behalf of all individual with gluten intolerance and milk intolerance I wish to say thanks to Chelsea and her family.

    It's sad that only when the rich and notorious are involved is when we are taken into consideration. However it is great because many people need to be aware of the condition.

    As a Celiac, I had a 100% gluten free wedding. Everything that came out of the hotel kitchen was safe for me to eat, and I didn't have to worry about cross-contamination, at least on the part of the kitchen staff. Special cake and chocolate fountain as well. This was in 2007. It can be done, and it's easier than you think. People actually had no idea the cake was gluten-free, and said it was some of the best they had ever tasted!

    I really liked reading about the wedding menu. Went to a wedding just the other day, couldn't really eat anything because I have to be gluten-free. Hopefully, more people will think about it when planning a party menu.

    I diagnosed myself for gluten intolerance after a lifetime of bizarre, seemingly unrelated afflictions. If my doctors had their way, I would have already undergone neck surgery, still be on 3 different inhalers for asthma, be vomiting daily and having chronic panic attacks. However, since eliminating gluten from my diet in May 2009, I no longer suffer from any of those things. Even with the proof in the pudding (or gluten) my doctors now want me to ingest gluten to test for celiac-no can do.

    Celiac.com 02/25/2005 - Move over low-carb and sugar-free! New research shows that the need for a gluten-free diet is 10 times higher than experts originally predicted. Retailers should prepare to meet the needs of this growing niche, say two experts on the gluten-free diet.
    This is the message that Shelley Case, RD and Carol Fenster, Ph.D. will bring to retailers at the Natural Products Expo West trade show on March 17 at the Anaheim Convention Center. Case is a dietitian who counsels gluten-free patients and is the author of Gluten-Free Diet, www.glutenfreediet.ca. Fenster is a chef who develops gluten-free products for manufacturers and is the author of Gluten-Free 101, www.glutenfree101.com.
    This diet is not a fad, they explain, but a medically prescribed avoidance of gluten which is a protein in wheat that is toxic for some people. The two experts will help retailers understand the medical necessity of the gluten-free diet and how stores can stock their shelves and market effectively to gluten-free consumers.
    "Food manufacturers are responding to the need for gluten-free products. According to the Natural Foods Merchandiser, the number of gluten-free products jumped 88% between 2002 and 2003," says Fenster, who has been gluten-free for 15 years. Total food dollars spent on allergies and intolerances––gluten-free products are a part of this––will rise to nearly $4 billion by 2008, she adds.
    People who need gluten-free diets are those with allergies or intolerances to wheat or related grains such as barley, rye, spelt, and possibly oats. Nearly 3 million Americans have celiac disease, an autoimmune form of gluten intolerance in which gluten damages the ability to absorb nutrients. The condition can be fatal if not treated with a gluten-free diet.
    "There is no magic pill or surgery for gluten intolerance," says Case, who has been counseling gluten-free patients for 20 years. "The only treatment is total avoidance of gluten for the rest of ones life. This makes the gluten-free consumer a repeat buyer––and very attractive to retailers."

    Celiac.com 01/09/2013 - Since 2009, gluten-free items have seen an astonishing 114% growth rate on restaurant and food establishment menus nationwide.
    That trend seems set to continue in 2012, with news that gluten-free offerings were the top addition to American pizza menus.
    In addition to the controversial move by Domino's Pizza to launch a gluten-free crust (though not a gluten-free pizza), numerous other pizza retailers also added gluten-free offerings in 2012.
    Some notable examples include Gatti's Pizza, Pie Five Pizza Co., Uncle Maddio's Pizza Joint, Detroit Style Pizza Co., Russo's New York Pizzeria and Russo's Coal-Fired Italian Kitchen, Canada's Pizza 73, NYPD Pizza and Mazzio's.
    Meanwhile, major pizza retailer Chuck E. Cheese continued to expand its current national gluten-free pizza offerings.
    Additionally, Naked Pizza sought to bring attention to celiac disease and gluten-free issues by honoring leaders in the celiac disease and gluten-free communities through its inaugural sponsorship of the Foggy Awards.
    A number of other pizza retailers with gluten-free pizzas and other offerings include: Amici's East Coast Pizzeria, Godfather's Pizza, Patxi's Chicago Pizza, and Extreme Pizza, to name just a few.

    Update: Dunkin' Donuts has released the following statement to Gluten-Free Living:
    "In 2013, we tested a gluten-free Cinnamon Sugar Donut and Blueberry Muffin in select markets. We are currently assessing the results of this test, as well as feedback from our guests and franchisees, and we do not have plans to launch these products nationally at this time. We are continuing to develop additional gluten-free products for future tests, and we remain committed to exploring ways to offer our guests gluten-free choices."
    Celiac.com 01/30/2014 - Why is Dunkin' Donuts taking so long to debut gluten-free versions of its famous treats? First came the whispers of test marketing and then the official announcement, but then…?
    For more than a year, donut lovers who avoid dietary gluten due to celiac disease or other conditions have been eagerly awaiting the chance to sink their teeth into a gluten-free donut from Dunkin'.
    For its part, the company seems intent on getting gluten-free right. They have spent a great deal of time, and I assume money, creating a reliable, safe gluten-free production and distribution chain.
    From source materials to dedicated gluten-free production facility to special production methods, to comprehensive training and service, Dunkin' looks to be taking its gluten-free donut rollout with the utmost seriousness.

    Celiac.com 12/03/2014 - It is important for pregnant women seeking medical consultation to get good, evidence-based information. This is especially true for pregnant women with celiac disease, who might wonder whether they face an increased risk of adverse birth outcomes and pregnancy complications as a result of their disease.
    So, does celiac disease increase a woman’s risk for pregnancy complications and adverse birth outcomes? Until now, there hasn’t been much good, solid data to give women a clear answer. With that in mind, a research team in England recently conducted a population-based study on pregnancy outcomes and adverse birth conditions in women with celiac disease.
    The research team included Alyshah Abdul Sultan PhD, Laila J Tata PhD, Kate M. Fleming PhD, Colin J. Crooks PhD, Jonas F. Ludvigsson PhD, Nafeesa N. Dhalwani PhD, Lu Ban PhD, and Joe West PhD. They are variously affiliated with the Division of Epidemiology and Public Health, City Hospital Campus at the University of Nottingham, Nottingham, UK; the Department of Medical Epidemiology and Biostatistics at the Karolinska Institute in Stockholm, Sweden; and with the Department of Paediatrics at Örebro University Hospital in Örebro, Sweden.
    The team used linked primary care data from the Clinical Practice Research Datalink and secondary care Hospital Episode Statistics data to assess all singleton pregnancies between 1997 and 2012. They used logistic/multinomial regression to compare pregnancies of women with and without celiac disease for risks of pregnancy complications (antepartum and postpartum hemorrhage, pre-eclampsia, and mode of delivery), and for adverse birth outcomes (preterm birth, stillbirth, and low birth weight).
    They stratified risk levels based on whether women were diagnosed or undiagnosed before delivery. They found 363,930 pregnancies resulting in a live birth or stillbirth, 892 (0.25%) of which were among women with celiac disease.
    Women with diagnosed celiac disease showed no increased risk of pregnancy complications or adverse birth outcomes compared with women without celiac disease.
    However, pregnant women with diagnosed celiac disease did show a higher risk of postpartum hemorrhage and assisted delivery, with an adjusted odds ratio (aOR) of 1.34.
    Importantly, the team found no increased risk of any pregnancy complication among those with undiagnosed celiac disease.
    In all, they found just a 1% absolute excess risk of preterm birth and low birth weight among mothers with undiagnosed celiac disease, which corresponds to aOR=1.24 (95% confidence interval (CI)=0.82–1.87) and aOR=1.36 (95% CI=0.83–2.24), respectively.
    Overall, the results of this study offer some good news to pregnant women with celiac disease. Whether diagnosed or undiagnosed during pregnancy, celiac disease is not associated with a significantly higher risk of pregnancy complications and adverse birth outcomes.

    Celiac.com 06/21/2018 - Would you buy a house advertised as ‘gluten-free’? Yes, there really is such a house for sale. 
    It seems a Phoenix realtor Mike D’Elena is hoping that his trendy claim will catch the eye of a buyer hungry to avoid gluten, or, at least one with a sense of humor. D’Elena said he crafted the ads as a way to “be funny and to draw attention.” The idea, D’Elena said, is to “make it memorable.” 
    Though D’Elena’s marketing seeks to capitalizes on the gluten-free trend, he knows Celiac disease is a serious health issue for some people. “[W]e’re not here to offend anybody….this is just something we're just trying to do to draw attention and do what's best for our clients," he said. 
    Still, the signs seem to be working. D'elena had fielded six offers within a few days of listing the west Phoenix home.
    "Buying can sometimes be the most stressful thing you do in your entire life so why not have some fun with it," he said.

    Celiac.com 06/20/2018 - Currently, the only way to manage celiac disease is to eliminate gluten from the diet. That could be set to change as clinical trials begin in Australia for a new vaccine that aims to switch off the immune response to gluten. 
    The trials are set to begin at Australia’s University of the Sunshine Coast Clinical Trials Centre. The vaccine is designed to allow people with celiac disease to consume gluten with no adverse effects. A successful vaccine could be the beginning of the end for the gluten-free diet as the only currently viable treatment for celiac disease. That could be a massive breakthrough for people with celiac disease.
    USC’s Clinical Trials Centre Director Lucas Litewka said trial participants would receive an injection of the vaccine twice a week for seven weeks. The trials will be conducted alongside gastroenterologist Dr. James Daveson, who called the vaccine “a very exciting potential new therapy that has been undergoing clinical trials for several years now.”
    Dr. Daveson said the investigational vaccine might potentially restore gluten tolerance to people with celiac disease.The trial is open to adults between the ages of 18 and 70 who have clinically diagnosed celiac disease, and have followed a strict gluten-free diet for at least 12 months.     Celiac.com 06/19/2018 - Could baking soda help reduce the inflammation and damage caused by autoimmune diseases like rheumatoid arthritis, and celiac disease? Scientists at the Medical College of Georgia at Augusta University say that a daily dose of baking soda may in fact help reduce inflammation and damage caused by autoimmune diseases like rheumatoid arthritis, and celiac disease.
    Those scientists recently gathered some of the first evidence to show that cheap, over-the-counter antacids can prompt the spleen to promote an anti-inflammatory environment that could be helpful in combating inflammatory disease.
    A type of cell called mesothelial cells line our body cavities, like the digestive tract. They have little fingers, called microvilli, that sense the environment, and warn the organs they cover that there is an invader and an immune response is needed.
    The team’s data shows that when rats or healthy people drink a solution of baking soda, the stomach makes more acid, which causes mesothelial cells on the outside of the spleen to tell the spleen to go easy on the immune response.  "It's most likely a hamburger not a bacterial infection," is basically the message, says Dr. Paul O'Connor, renal physiologist in the MCG Department of Physiology at Augusta University and the study's corresponding author.
    That message, which is transmitted with help from a chemical messenger called acetylcholine, seems to encourage the gut to shift against inflammation, say the scientists.
    In patients who drank water with baking soda for two weeks, immune cells called macrophages, shifted from primarily those that promote inflammation, called M1, to those that reduce it, called M2. "The shift from inflammatory to an anti-inflammatory profile is happening everywhere," O'Connor says. "We saw it in the kidneys, we saw it in the spleen, now we see it in the peripheral blood."
    O'Connor hopes drinking baking soda can one day produce similar results for people with autoimmune disease. "You are not really turning anything off or on, you are just pushing it toward one side by giving an anti-inflammatory stimulus," he says, in this case, away from harmful inflammation. "It's potentially a really safe way to treat inflammatory disease."
    The research was funded by the National Institutes of Health.

    Celiac.com 06/18/2018 - Celiac disease has been mainly associated with Caucasian populations in Northern Europe, and their descendants in other countries, but new scientific evidence is beginning to challenge that view. Still, the exact global prevalence of celiac disease remains unknown.  To get better data on that issue, a team of researchers recently conducted a comprehensive review and meta-analysis to get a reasonably accurate estimate the global prevalence of celiac disease. 
    The research team included P Singh, A Arora, TA Strand, DA Leffler, C Catassi, PH Green, CP Kelly, V Ahuja, and GK Makharia. They are variously affiliated with the Division of Gastroenterology and Hepatology, Beth Israel Deaconess Medical Center, Boston, Massachusetts; Lady Hardinge Medical College, New Delhi, India; Innlandet Hospital Trust, Lillehammer, Norway; Centre for International Health, University of Bergen, Bergen, Norway; Division of Gastroenterology and Hepatology, Beth Israel Deaconess Medical Center, Boston, Massachusetts; Gastroenterology Research and Development, Takeda Pharmaceuticals Inc, Cambridge, MA; Department of Pediatrics, Università Politecnica delle Marche, Ancona, Italy; Department of Medicine, Columbia University Medical Center, New York, New York; USA Celiac Disease Center, Columbia University Medical Center, New York, New York; and the Department of Gastroenterology and Human Nutrition, All India Institute of Medical Sciences, New Delhi, India.
    For their review, the team searched Medline, PubMed, and EMBASE for the keywords ‘celiac disease,’ ‘celiac,’ ‘tissue transglutaminase antibody,’ ‘anti-endomysium antibody,’ ‘endomysial antibody,’ and ‘prevalence’ for studies published from January 1991 through March 2016. 
    The team cross-referenced each article with the words ‘Asia,’ ‘Europe,’ ‘Africa,’ ‘South America,’ ‘North America,’ and ‘Australia.’ They defined celiac diagnosis based on European Society of Pediatric Gastroenterology, Hepatology, and Nutrition guidelines. The team used 96 articles of 3,843 articles in their final analysis.
    Overall global prevalence of celiac disease was 1.4% in 275,818 individuals, based on positive blood tests for anti-tissue transglutaminase and/or anti-endomysial antibodies. The pooled global prevalence of biopsy-confirmed celiac disease was 0.7% in 138,792 individuals. That means that numerous people with celiac disease potentially remain undiagnosed.
    Rates of celiac disease were 0.4% in South America, 0.5% in Africa and North America, 0.6% in Asia, and 0.8% in Europe and Oceania; the prevalence was 0.6% in female vs 0.4% males. Celiac disease was significantly more common in children than adults.
    This systematic review and meta-analysis showed celiac disease to be reported worldwide. Blood test data shows celiac disease rate of 1.4%, while biopsy data shows 0.7%. The prevalence of celiac disease varies with sex, age, and location. 
    This review demonstrates a need for more comprehensive population-based studies of celiac disease in numerous countries.  The 1.4% rate indicates that there are 91.2 million people worldwide with celiac disease, and 3.9 million are in the U.S.A.
