    Talking Points: Biotechnology And Celiac Disease

    Question: What is biotechnology?

    Short Answer: Biotechnology is a set of scientific tools and principles designed to alter living material at the molecular-genetic level by recombining DNA fragments of genes to create organisms with altered, predictable properties. Organisms that receive genetic material from an unrelated organism are said to be transgenic and are referred to as genetically modified organisms (gmos).

    Question: Is food grown from gmos safe to eat? Short Answer: The answer has several parts.

    • Scientists cannot yet assure us that gm food is totally safe to eat because such foodstuffs have not been tested using scientifically acceptable procedures over sufficient time.
    • Caution is recommended because of theoretical issues related to creation of novel large proteins and associated biochemicals that are often associated with food allergenicities.
    • Potential problems may arise from the introduction of exotic genes from viruses and bacteria not commonly part of the human diet, especially those genes producing toxins against crop pests and diseases.
    • The potential adverse effects of synergy between gmos and traditional foods and medicines must be carefully considered by anyone with allergies and autoimmune issues.
    • The Precautionary Principle should apply in relation to these gmos because it should be the responsibility of the biotechnological industry to demonstrate safety to humans and the environment prior to public acceptance and distribution.

    Question: Should a sufferer of food intolerances be concerned with the genetic modification of other foodstuffs?

    Short Answer: Scientific studies are confirming unforeseen increases in the allergenicity of some gm foods and some instances of reduced food values in altered crops. Most media reports, however, are anecdotal and should not be accepted as proof. Just remember that children are most susceptible to increased allergens. So, be forewarned.

    Question: Should folks with food intolerances and compromised immune systems be concerned about other trends in food production?

    Short Answer: Current research is directed at introducing genetic materials into conventional crops to produce pharmaceuticals and industrial components. Of more immediate concern are the numerous environmental estrogens (called endocrine disrupters) let loose on the population in the form of pesticides and other industrial products. Gmo research and development employs additional estrogens as regulators of transgenic changes. So there is the potential danger of estrogen overload on children in pre puberty.

    Action #l: Demand responsible labeling of food and medicines as GLUTEN FREE, not only processed food but also materials added post-harvest to "fresh" food.

    Action #2: Demand that genetically modified organisms and products be withdrawn from circulation and a rigorous, scientific evaluation of these materials be completed before any possible reintroduction.

    Action #3: In the interim demand immediate labeling as GMO FREE of all gmo products to allow the consumer to make informed choices.

    Action #4: Demand from your local markets the opportunity to buy certified organic food, and that markets list what fruit and vegetables have been treated with waxes, fungicides and other post-harvest protective materials.

    Action #5: Demand from the medical establishment greater awareness of and responsiveness to celiac and related diseases and syndromes and more aggressive research and development projects aimed at alleviating acute and chronic suffering by our impacted population.

    Celiac.com 02/17/2012 - You know you've hit the big time when you're a featured category on perennial TV game show favorite Jeopardy! And that is exactly what happened on show #6290 on Friday, January 13, 2012, when Jeopardy! devoted an entire category to: Gluten-Free Foods.
    The category began with the $200 clue: There's an octet of veggies in this alphanumeric brand's vegetable juice, but no gluten. The answer, phrased in famous Jeopardy! question-form, is of course: What is V-8 Juice?
    The next clue, for $500, was: This classic canned meat from Hormel that debuted in 1937 has no gluten. The correct answer: What is Spam?
    The $600 clue was: In the U.S., this soda is gluten free, as its Vanilla Zero version. The correct answer was: What is Coca-Cola?
    For $800, the clue was: Don't despair: gluten-free candies from Nestle include the Butterfinger bar & these chocolate-covered peanuts. The correct answer was: What are Goobers?
    In-coming champion Brandon Libby, an actor and Phillie Phanstormer from Mount Ephraim, New Jersey, ran nearly the entire category, correctly answering all of the clues, except the final one.
    The final clue for Jeopardy's Gluten-Free Foods category was: This yogurt brand, known in France as "The Little Flower" has many gluten-free flavors, including strawberry kiwi. The correct answer is, of course: What is Yoplait?
    However, that seemingly simple last question stumped all of the panelists.

    Celiac.com 01/25/2013 - Faced with calls to accommodate rising numbers of gluten-free parishioners, more Christian churches and are increasingly offering a gluten-free option for those rising numbers of gluten-free members who seek to take communion.
    A number of churches in the US and the UK have already taken measures to accommodate gluten-free members with gluten-free and low-gluten offerings.
    And while there is still a bit of wrangling in the Catholic church in the US about the acceptable gluten-content of communion wafers, it looks like more traditional Catholic and Anglican churches in Australia are now joining ranks in offering a gluten-free communion option for their parishioners.
    According to Mike Grieger, whose Australian Church Resources organization sells gluten-free and low-gluten altar bread to more than 2000 churches of different denominations, the trend is changing the way churches practice communion.
    Generally, for Protestants, offering gluten-free bread for communion seems to pose little, if any, religious difficulty, as the bread and the wine are regarded as mere symbols of the body and blood of Christ.
    Because Roman Catholics believe that the bread and wine, with the priest's blessing, actually become transformed into the savior's body and blood, the adoption of completely gluten-free offerings has caused issues.
    That is because church doctrine requires bread made from unleavened wheat, as they believe Jesus used at the Last Supper.
    To address the issue, nuns at the Benedictine Sisters of Perpetual Adoration in Clyde, Missouri have created an extremely low-gluten wafer that is now being offered by numerous Catholic churches.
    It appears that official policy in the Catholic church can differ across geographic regions. For example, the Catholic Diocese of Columbus recently said that gluten-free wafers don’t meet Vatican standards because they don’t contain wheat, but that parishioners can still receive full communion by taking the wine.
    However, in Australia, Father Ken Howell, Catholic Dean of St. Stephen's Cathedral in Brisbane, says that gluten-sensitive parishioners could now bring their own gluten-free wafers.
    Meanwhile, more Protestant churches are moving to accommodate not just gluten-sensitivity, but other dietary sensitivities as well. One example is Ashgrove West Uniting Church in Brisbane, which began to offer their congregation bread that gluten-free, nut-free, dairy-free and vegan friendly about a year and a half ago, according to church secretary Julie Hultgren.

    The report also provides a detailed analysis on various phases of numerous aspects of the gluten-free products industry, along with the competitive strategies favored by major industry players.
    Among the reports insights: As large supermarkets and mass retailers offer more gluten-free products, gluten-free sales by health and natural food stores are declining.
    Over the last ten years, as millions of Americans have stopped consuming products containing gluten from wheat, barley, or rye, the market for gluten-free foods and other products has shifted, and many products once regarded as specialty or niche products are now regarded as regular grocery items.

    Celiac.com 01/22/2014 - With many major grocery brands struggling to generate sales growth, and with top gluten-free brands Udi's and Glutino racking up combined net sales growth of 53% last quarter, the writing is on the wall: More and more wheat based brands will be looking to break into the gluten-free market in the next three to five years.
    Boulder Brands CEO Steve Hughes told analysts on the firm's Q3 earnings call that Boulder is seeing "strong, consistent velocity in distribution builds across all channels" for gluten-free products.
    According to Hughes, 5-10% of all wheat-based product categories will be gluten-free in the next three to five years, or else they will disappear from the market.
    Again, as many wheat-based brands struggle for market share, Udi’s remains the fastest-growing brand in the conventional grocery store channel, and retailers are responding.
    Hughes said that Udi's 3rd quarter net sales were up 74% year-over-year, adding that "Glutino net sales grew 29%. Combined, our gluten-free brands increased net sales 53%." Udi's and Glutino now average nearly twenty items on retail shelves, up from about fifteen and a half just a year ago.
    Meanwhile, Hughes notes, the gluten-free pizza business has been performing“extraordinarily well.” He points out that many retailers now have three dedicated gluten-free sections, including a 4-12ft section in the ambient grocery aisles, half the full door in the frozen food aisles, and a frozen or shelf-stable rack in bakery.
    Hughes wrapped up his presentation by adding that gluten-free items are also gaining a share of the club store channel. He said that they were "...starting to get some testing of bread into the club channel, which could be very meaningful next year.”
    Hughes' presentation does imply that growth also means the pressures of competition for market share, both among gluten-free manufacturers and retailers, and between gluten-free and wheat-based manufacturers and retailers.
    All of this is basically good news for consumers of gluten-free products, as it means more and, hopefully, better quality products.

    Celiac.com 06/22/2018 - The rise of food allergies means that many people are avoiding gluten in recent times. In fact, the number of Americans who have stopped eating gluten has tripled in eight years
    between 2009 and 2017.
    Whatever your rationale for avoiding gluten, whether its coeliac disease, a sensitivity to the
    protein, or any other reason, it can be really hard to find suitable places to eat out. When
    you’re on holiday in a new and unknown environment, this can be near impossible.
    As awareness of coeliac disease grows around the world, however, more and more cities
    are opening their doors to gluten-free lifestyles, none more so than the 10 locations on the
    list below.
    Perhaps unsurprisingly, the U.S is a hotbed of gluten-free options, with four cities making the
    top 10, as well as the Hawaiian island of Maui. Chicago, in particular, is a real haven of
    gluten-free fare, with 240 coeliac-safe eateries throughout this huge city.
    The super hip city of Portland also ranks highly on this list, with the capital of counterculture
    rich in gluten-free cuisine, with San Francisco and Denver also included.
    Outside of the states, several prominent European capitals also rank very highly on the list,
    including Prague, the picturesque and historic capital of the Czech Republic, which boasts
    the best-reviewed restaurants on this list.
    The Irish capital of Dublin, meanwhile, has the most gluten-free establishments, with a huge
    330 to choose from, while Amsterdam and Barcelona also feature prominently thanks to their
    variety of top-notch gluten-free fodder.
    Finally, a special mention must go to Auckland, the sole representative of Australasia in this
    list, with the largest city in New Zealand rounding out the top 10 thanks to its 180 coeliacsafe
    eateries.

    Celiac.com 06/21/2018 - Would you buy a house advertised as ‘gluten-free’? Yes, there really is such a house for sale. 
    It seems a Phoenix realtor Mike D’Elena is hoping that his trendy claim will catch the eye of a buyer hungry to avoid gluten, or, at least one with a sense of humor. D’Elena said he crafted the ads as a way to “be funny and to draw attention.” The idea, D’Elena said, is to “make it memorable.” 
    Though D’Elena’s marketing seeks to capitalizes on the gluten-free trend, he knows Celiac disease is a serious health issue for some people. “[W]e’re not here to offend anybody….this is just something we're just trying to do to draw attention and do what's best for our clients," he said. 
    Still, the signs seem to be working. D'elena had fielded six offers within a few days of listing the west Phoenix home.
    "Buying can sometimes be the most stressful thing you do in your entire life so why not have some fun with it," he said.

    Celiac.com 06/20/2018 - Currently, the only way to manage celiac disease is to eliminate gluten from the diet. That could be set to change as clinical trials begin in Australia for a new vaccine that aims to switch off the immune response to gluten. 
    The trials are set to begin at Australia’s University of the Sunshine Coast Clinical Trials Centre. The vaccine is designed to allow people with celiac disease to consume gluten with no adverse effects. A successful vaccine could be the beginning of the end for the gluten-free diet as the only currently viable treatment for celiac disease. That could be a massive breakthrough for people with celiac disease.
    USC’s Clinical Trials Centre Director Lucas Litewka said trial participants would receive an injection of the vaccine twice a week for seven weeks. The trials will be conducted alongside gastroenterologist Dr. James Daveson, who called the vaccine “a very exciting potential new therapy that has been undergoing clinical trials for several years now.”
    Dr. Daveson said the investigational vaccine might potentially restore gluten tolerance to people with celiac disease.The trial is open to adults between the ages of 18 and 70 who have clinically diagnosed celiac disease, and have followed a strict gluten-free diet for at least 12 months.     Celiac.com 06/19/2018 - Could baking soda help reduce the inflammation and damage caused by autoimmune diseases like rheumatoid arthritis, and celiac disease? Scientists at the Medical College of Georgia at Augusta University say that a daily dose of baking soda may in fact help reduce inflammation and damage caused by autoimmune diseases like rheumatoid arthritis, and celiac disease.
    Those scientists recently gathered some of the first evidence to show that cheap, over-the-counter antacids can prompt the spleen to promote an anti-inflammatory environment that could be helpful in combating inflammatory disease.
    A type of cell called mesothelial cells line our body cavities, like the digestive tract. They have little fingers, called microvilli, that sense the environment, and warn the organs they cover that there is an invader and an immune response is needed.
    The team’s data shows that when rats or healthy people drink a solution of baking soda, the stomach makes more acid, which causes mesothelial cells on the outside of the spleen to tell the spleen to go easy on the immune response.  "It's most likely a hamburger not a bacterial infection," is basically the message, says Dr. Paul O'Connor, renal physiologist in the MCG Department of Physiology at Augusta University and the study's corresponding author.
    That message, which is transmitted with help from a chemical messenger called acetylcholine, seems to encourage the gut to shift against inflammation, say the scientists.
    In patients who drank water with baking soda for two weeks, immune cells called macrophages, shifted from primarily those that promote inflammation, called M1, to those that reduce it, called M2. "The shift from inflammatory to an anti-inflammatory profile is happening everywhere," O'Connor says. "We saw it in the kidneys, we saw it in the spleen, now we see it in the peripheral blood."
    O'Connor hopes drinking baking soda can one day produce similar results for people with autoimmune disease. "You are not really turning anything off or on, you are just pushing it toward one side by giving an anti-inflammatory stimulus," he says, in this case, away from harmful inflammation. "It's potentially a really safe way to treat inflammatory disease."
    The research was funded by the National Institutes of Health.
