    Peanut Butter Kisses (Gluten-Free)

    Ingredients:
    ½ cup Butter Crisco
    1 cup fine rice flour
    1 ¼ cups light brown sugar
    ½ cup potato starch
    ¾ cup peanut butter
    ¼ cup tapioca starch
    1 egg
    1 teaspoon baking powder
    3 tablespoons milk
    ¾ tsp baking soda
    1 tablespoon vanilla
    ¼ teaspoon salt
    Approx. 60 Hershey Kisses, unwrapped
    Sugar, optional

    Directions:
    In large bowl combine first 6 ingredients and beat until well blended. In separate bowl combine all dry ingredients until well blended. Stir the rest of ingredients into Crisco mixture at Lo speed. Form into walnut size balls and roll in sugar, if desired. Place about 2 inches apart on un-greased cookie sheets. Bake at 375F degrees for approx. 8-10 minutes or until set, but not hard. Remove from oven and push Hershey Kiss into center of each cookie. Cool 5 min. before removing to racks. Cool until Kiss hardens again. Makes about 4 ½ dozen cookies.

    This is WAY more complicated than it has to be. Peanut butter cookies do NOT need any flour - they are perfectly delicious without. The recipe? 1 cup peanut butter, 1 cup sugar, 1 egg. Mix, roll into balls, bake at 350 for 4-5 minutes, stick a kiss on top each half-baked cookie ball and bake another 4-5 minutes. Easy, gluten-free, and delicious.

    I have used Shannon's recipe in my special needs classroom, we call it 'cuppa, cuppa, egg.' It is so simple and tastes just like the real thing, just don't overcook them (unless you like crunchy cookies). You can also cook the cookie all the way through and then add the Hershey Kiss.

    Fall mean apples and apples mean joy. Fresh homemade applesauce is one of my favorite ways to partake in that joy. This recipe is easy to make, and delicious. I put this applesauce on ice-cream, pancakes, waffles, peanut butter sandwiches, and many other things. I prefer to warm it up just a bit, but this easy homemade applesauce is either warm or chilled.
    Ingredients:
    5 Golden Delicious apples, peeled, cored, and quartered
    5 Gravenstein or Fuji apples, peeled, cored, and quartered
    1¼ cups unfiltered apple juice
    2-3 tablespoons brandy or cognac
    3 tablespoons butter
    4 tablespoons sugar
    Scant 1 teaspoon ground cinnamon
    Splash of lemon juice
    Dash of salt to taste
    Directions:
    Preheat oven to 350 F.

    Ingredients:
    1 bag gluten-free corn tortilla chips 1 bag GO Veggie! Vegan Mexican Cheese Shreds 1/3 cup fresh cilantro, finely chopped 1 ripe avocado, peeled, pitted and diced 10 cherry tomatoes, halved 1/2 cup fresh salsa 1/4 tsp. sea salt 1/4 tsp. pepper Directions:
    Preheat oven to 350 degrees F. Place corn tortillas in a large baking dish; top with remaining ingredients. Bake for 15 minutes or until cheese is completely melted. Remove from oven; serve warm. Enjoy!

    Celiac.com 07/08/2014 - I was dying for an ice-cream sandwich the other day, and I didn’t have many options. I did, however, have some leftover Rice Krispies Treats and some ice cream. The rest, as they say, is history.
    There are so many great variations on this recipe. You can make peanut butter Rice Krispy Treats. You can use chocolate ice cream. You can do both. You can use strawberry, or any of you favorite ice cream flavors. Fruit flavors work well. The list goes on and on.
    Ingredients:
    Gluten-free Rice Krispies cereal Marshmallows Butter Ice cream of choice Directions:
    Prepare Rice Krispies Treats as desired, following the recipe on the box. For a chocolate version, I use gluten-free Cocoa Pebbles ice cream.
