    Scott Adams

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

Celiac.com 06/28/2016 - My latest obsession is creating new quinoa recipes, since my eight year old daughter absolutely loves it! Her favorite is warm quinoa with crumbled turkey sausage, broccoli, and lots of cumin. She also loves it with oil and balsamic vinegar. I like it cold with chopped veggies, garlic, and fresh squeezed lemon juice. Just a few weeks ago I tried amaranth for the first time. It seems to be the new craze these days. It cooked up very similarly to quinoa, and had a similar taste and texture. I would say the only noticeable difference is that amaranth does not get as fluffy when cooked. It seems like it would be great in soup! Now for a little history.
Amaranth is estimated to have been domesticated between 6,000 and 8,000 years ago, and was a staple food crop of the...

Celiac.com 09/01/2017 - A recent story by Buzzfeed does little to answer the question of whether Cheerios and other General Mills cereals are actually gluten-free and safe for people with celiac disease.
There are a number of folks in the gluten-free community who complain that General Mills is making people sick by selling Cheerios that they know to be contaminated with gluten due to a faulty sorting process. Because General Mills uses a flawed sorting process, the story goes, their boxes of Cheerios are subject to gluten "hot spots," which is making some gluten-sensitive folks sick, thus the complaints.
They point to regular complaints logged by the FDA to argue that Cheerios are clearly not gluten-free, and thus not safe for people with celiac disease. Comment sections...

Celiac.com 12/19/2017 - The Canadian Celiac Association (CCA) finds itself facing questions of rumor-mongering and inaccuracy in the face of its ongoing comments about General Mills and Gluten Free Cheerios.
The CCA recently retracted a controversial October 20 press release in the face of questions about the accuracy and validity of its statements. The retraction reads as follows: "The CCA retracts its statement of October 20, 2017 and replaces it with this statement due to errors in the original statement." They retracted every claim made in the first press release.
In addition to its erroneous, and now retracted press release, the CCA has made numerous public statements casting doubt on the process General Mills uses to create their Gluten-Free Cheerios, and other oat-...

Celiac.com 12/31/2020 - One question we get a lot is about gluten-free breakfast cereals. Specifically, which brands of breakfast cereals are gluten-free and safe for people with celiac disease?
Finding a good gluten-free breakfast cereal can be a challenge. Fortunately more and more manufacturers are making gluten-free breakfast cereals, so the choices are many. Here are nearly a hundred of America's top gluten-free cereal brands. These top breakfast cereal brands are labeled "Gluten-Free." That means that you can breath extra easy about serving them to people with celiac disease.
Note that some cereals on this list use gluten-free oats, and ~10% of people with celiac disease also have an oat intolerance (to avenin protein), so they may also need to exclude the cereals on...
