    Pepper Beef (Gluten-Free)

    Load the following into a slow cooker in the following order:

    1 pound beef cut in strips (or beef for stir fry)
    1 tablespoon tapioca pearls (Bascoms small pearl is what I use)
    ½ cup water
    2 to 3 tablespoons Tamari gluten-free soy sauce [i use San J Wheat-Free brand]
    1 large white onion sliced
    1 green bell pepper sliced
    1 red bell pepper sliced
    1 yellow or orange bell pepper sliced

    Cook on low 8 hours or high for 4 hours. Serve over hot rice or brown rice pasta. [My mom used to make something similar to this. She added whole mushrooms. It was wonderful!]

    This recipe comes to us from Lisa:
    1 large egg
    ¼ cup rice milk
    ½ cup brown rice flour
    ¼ cup tapioca flour
    1 teaspoon salt
    1 teaspoon pepper
    Spices (mix in with ingredients above)
    1 pinch thyme
    1 pinch oregano
    1 pinch rosemary
    3 pinch sweet basil
    3 pinch parsley
    1 baked garlic
    1teaspoon Gluten-free Casein-free baking powder-put in last
    Mix the above ingredients together in a bowl and soak chicken pieces in this mixture.
    In a separate bowl crush ¼ cup Lay Brand original regular potato chips (as fine as possible) or brown rice bread crumbs. Dip chicken in potato chips or brown rice bread crumbs. Deep fry for 5 minutes.

    English-style fish and chips are one of my all-time favorites. One of the dishes I've missed the most ever since going gluten-free. I've been discovering new uses for Rice Chex as a gluten-free breading, and this recipe for gluten-free fish and chips is one of the results. I hope you enjoy them as much as I do.
    Ingredients:
    1½ quarts vegetable oil, for frying
    2 pounds halibut or firm white fish, cut in  portions
    Salt and freshly ground black pepper
    ½ cup potato starch
    ½ cup tapioca flour
    1 cup rice flour
    2 cups crushed Rice Chex
    1 quart egg wash (equal parts whole eggs and milk, mixed well)
    6 lemons halves, for serving
    Directions:
    Heat the oil in to 375 degrees F. in a Dutch oven or deep frying pot.

    I'm always keen to try new takes on shepherd's pie to satisfy my culinary curiosity. This version combines seasonal root vegetables like carrots, rutabaga, and parsnip with lamb, peas onions and garlic in a rich tomato sauce to serve up a big helping of shepherd's pie love.
