    Chicken Taco Soup (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    Makes about 8 servings

    Ingredients:
    1 onion, chopped
    1 (16 ounce) can chili beans
    1 (15 ounce) can black beans
    1 (15 ounce) can whole kernel corn, drained
    1 (8 ounce) can tomato sauce
    1 (12 fluid ounce) can or bottle of gluten-free beer OR water
    2 (10 ounce) cans diced tomatoes with green chilies
    1 (1.25 ounce) package gluten-free taco seasoning
    3 whole skinless, boneless chicken breasts
    Shredded cheddar cheese
    Gluten-free sour cream
    Crushed tortilla chips

    Directions:
    1. Place the onion, chili beans, black beans, corn, tomato sauce, beer OR water, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.

    2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

    This recipe rocks my socks! I don't use beer or chicken, but this recipe is so good! It's quick, easy, and absolutely delicious.

    This recipe comes to us from Ann Sokolowski.
    Ingredients:
    1 pound chopped turkey
    1 cup gluten-free bread crumbs OR cooked rice
    1 egg
    ½ chopped up cilantro
    1 small onion, chopped fine
    2 cloves chopped garlic
    ½ cup pine nuts, toasted if possible
    1 cup calvados or apple jack...or if you dont use liquor, apple cider
    1 small package of frozen peas
    ½ small package mixed frozen veggies
    salt and pepper to taste
    Directions:
    Mix together all ingredients except peas and calvados. Form small meat balls and brown in olive oil. Do in batches and then return to pan. Add calvados and peas, cover and cook a half hour. Serve over rice. If sauce is dry during cooking, add a little water or chicken stock. It should come up half-way to meatballs.

    Ingredients:
    2 Tablespoons margarine
    2 Tablespoons corn starch
    1½ to 2 cups water
    2 chicken bullion cubes (or salted chicken broth)
    1 to 2 Tablespoons chili powder
    Garlic salt
    ¼ teaspoon oregano
    ½ teaspoon cumin
    Directions:
    Melt margarine in a sauce pan. Stir in corn starch. Add water (and bullion), or chicken broth. Add remaining ingredients and bring to a boil. Stir constantly.

    Okay, so pretty much all guacamole is naturally gluten free. Still, guacamole is one of the summertime treats that fuel California, and many other lucky places. High in protein, vitamins, and beneficial oils, and blessed with a wonderful rich flavor, avocados are one of earth's true superfoods. This guacamole will keep folks coming back for more.
    Ingredients:
    3-4 ripe avocados
    1 lemon or 2 limes
    ¼ cup cilantro, chopped
    ¼ cup sweet onion, chopped (optional)
    When it comes to guacamole ingredients, less is more. I generally only use avocado and lime or lemon in my guacamole.
    I never put tomatoes in guacamole, as the acidity works against the avocado. The same is true of onion. I don't use it in guacamole. I simply serve salsa that includes onion and tomato along side t...

    Ingredients
    1 cup cashews 1 cup arugula, chopped 1 cup fresh spinach
    1 tsp. balsamic vinegar 1 Tbsp. lime zest 2 Tbsp. freshly squeezed lime juice 1/3 cup fresh parsley, chopped 2 ripe avocados, peeled, pitted and cored 1/4 tsp. paprika 1/4 tsp. sea salt 1/4 tsp. freshly ground white pepper Fresh cilantro, to garnish 8 slices gluten-free bread, toasted 1 lb. sliced chicken, sliced into 1/4 inch pieces Directions
    Combine all ingredients (except bread and chicken) in a food processor; process until smooth. Transfer to a serving bowl, spread atop a piece of gluten-free toast with a few slices of chicken.
