    Potato Leek Soup (Gluten-Free)

    Ingredients:
    1 large leek or 3 small leeks white and green parts, minced in a blender or food processor
    1 large carrot or 3 small carrots, minced in a blender or food processor
    1 onion, diced
    3-4 cloves of garlic, minced
    4-5 potatoes, cut into bite size pieces
    1 tablespoon Mrs. Dash Original
    3-4 cups of plain rice milk, almond milk, or soy milk (Natur-a, Almond Breeze, So Good)
    3-4 cups of water or Imagine broth
    1-2 tablespoons of olive oil
    Optional, 1 tablespoon, hot chili sauce
    Optional or if you use water 1-2 McCormick all-vegetable bouillon (vegetable, chicken, or beef)

    Directions:
    Cook leeks, onions, garlic, and oil in a frying pan until soft. At the same time, place all other ingredients in a large pot and boil over medium heat. Place the leeks, onions, and garlic in the pot. Cook over low heat until the potatoes are done.

    Thank You for this recipe. My daughter wants to eat everything that my husband and I do, so low and behold...we are all on a gluten-free diet and recipes like this allow all of us to eat good food that we like. I am sincerely appreciative.

    This recipe comes to us from Mary Burgdorff.

    2 packages (16 oz.) frozen has browns, thawed (or substitute refrigerated-style)
    2 cups chopped cooked ham
    ½ - 1 cup sliced green onions
    3 cups shredded cheddar cheese
    10 eggs, beaten
    1½ - 2 cups milk
    1 teaspoon salt
    2 teaspoons dry mustard
    Dash cayenne pepper
    Paprika to taste
    Preheat oven to 350F degrees.
    Layer bottom of 13” x 9” pan with hash browns.  Sprinkle ham, green onions and cheese evenly over potatoes.  In bowl, combine eggs with milk, salt, mustard and cayenne.  Pour over all.  Sprinkle with paprika.  Bake in preheated oven 40-45 minutes or until firm.  You can add additional ingredients, such as mushrooms, peppers, etc., but then allow about 60 minutes to bake.  Makes 12 large servings.

    2 pounds bison meat, cut into 1-inch cubes
    3 medium potatoes, peeled
    6 carrots, peeled and sliced
    1 (8 ounce) cans peeled tomatoes
    1 (12 ounce) cans tomato sauce
    1 large sweet onion, diced
    ½ cup minced celery
    2 cloves garlic, minced
    2 tablespoons potato starch
    1 quart chicken broth
    ½ cup water
    ½ cup dry red wine
    1 teaspoon salt
    ½ teaspoon ground blac...

    This is a real simple side dish with little prep that’s both fragrant and festive. I like using acorn squash because they’re small enough to serve everyone their own half, but this recipe is great sliced or in chunks. This version is mildly sweet but is easily downplayed with less sugar, or sweetened with more syrup.
    Ingredients:
    2 acorn squash, halved and seeded
    2 tablespoons brown sugar
    3 tablespoons softened butter
    1 tablespoon maple syrup
    2 teaspoons ground nutmeg
    1 teaspoon ground cloves
    Pinch of salt and pepper
    Directions:
    Preheat oven to 400° F.
    Arrange squash on a baking sheet.

    Ingredients:
    2 tablespoons butter 2 large shallots, minced 2 cloves garlic, minced 1 cup minced mushrooms 1½ pounds pork tenderloin medallions 1 teaspoon potato starch, or corn starch ½ teaspoon ground black pepper ½ cup whole milk yogurt 1 tablespoon cream cheese ¼ cup dry white wine or vermouth ½ tablespoon fresh thyme Directions:
    Heat oil in a skillet over medium heat.
    Salt and pepper the pork and add to pan.
    Cook until lightly browned. Remove pork, and keep warm.
    To the skillet, add butter, shallots, thyme, and garlic. Stir and cook 2 minutes or so, until soft.
