After many years of unexplained medical issues, I was finally diagnosed with celiac disease in 2002. The first couple of years were a rough road traveled, but I am feeling better than I ever have. It is important that I share what I have learned over the years with others and to do my part to help raise awareness of celiac disease.
Gluten-free chocolate cake has a whole new meaning after trying Sofella's Gluten-free Chocolate Cake Mix! Preparing the batter for the cupcakes seemed so simple that I decided to let my middle school children do all the work. Even though my kids were mixing the batter by hand, the batter for the cake blended up smoothly and was "clump free."
