    Maple-Pecan Granola (Gluten-Free)

    Oats have traditionally been controversial in the celiac and gluten-free community. Though research is still not definitive, it appears that most people with celiac disease can in fact tolerate oats. Studies show that contamination is typically the issue so it’s important to check labels and look for “pure” oats, those which have not been tainted in harvesting or storage. In any case, this recipe is foolproof. I made several batches over the holidays as gifts. Nothing beats the phenomenal taste and texture of fresh-baked granola.

    Ingredients:
    3 cups gluten-free pure oats
    1 cup chopped pecans
    1 cup dried cranberries
    1 cup golden brown sugar, divided
    ½ cup maple syrup
    2 egg whites
    1 tablespoon maple extract
    2 teaspoons vanilla extract
    2 teaspoons cinnamon
    1 teaspoon allspice
    2 tablespoons melted butter

    Directions:
    Preheat oven to 325° F and position rack low in the oven. Line a baking sheet with parchment paper.

    Melt ½ cup sugar and syrup in a small pot then transfer to a large bowl. Whisk in egg whites, maple and vanilla extract and spices. Add oats, pecans and remaining sugar. Toss until well-coated.

    Brush lined baking sheet with melted butter. Spread mixture evenly over sheet. Bake for 30 minutes then carefully flip with a spatula. Sprinkle cranberries and bake for another 10-12 minutes, until dry. Cool completely before serving.

    Looks, awesome....but I can't tolerate gluten-free oats and was sick three days when I tested myself.

    There are gluten-free oatmeal. Try the health food stores in your area, Dearie. I was diagnosed last year, and found it hard to digest oatmeal. Try my suggestion and let me know what happens.

    Here's a great recipe to wow your guests for any gathering you might have. Gluten-Free and Vegan


    Ingredients:
    2 lb. Button Mushrooms
    1 1/2 cups Crushed Gluten-Free Crackers
    3 Tbsp. Olive Oil
    1 large Vidalia onion, finely chopped
    2 tsp. balsamic vinegar
    1/4 tsp. Sea salt
    1/4 cup fresh basil, finely chopped
    1/4 cup dried cherries, finely chopped

    Directions:
    Preheat oven to 375 F.

    Remove stems from mushrooms and chop.  Heat oil in a pan over medium heat.  Add all ingredients; cook for 5 minutes. Evenly distribute mixture to mushroom caps.  Bake for 45 minutes.
    Serve with fresh marinara sauce.
    Enjoy.

    Celiac.com 02/13/2012 - Here are 5 quick n' easy ways to enjoy Tomatoes in meals, snacks and desserts.
    Escarole Salad with Cherry Tomatoes & Pistachios (1 cup pistachios, 2 sliced tomatoes, 2 Tbsp. flax oil, 1 Tbsp. balsamic vinegar, 1 segmented orange, 1 head escarole, leaves torn). Puree half the pistachios, oil and balsamic in a blender. Toss orange segments with sliced tomatoes, escerole and dressing; season. Top with remaining nuts.
    Tomato Garlic Oil (1/3 cup extra virgin olive oil, 2 finely chopped persimmons, 1 clove crushed garlic). In a small saucepan over low heat, cool oil, 1 cup grape tomatoes, halved and garlic for 5 minutes.  Remove from heat add sea salt; set aside to cool. Discard garlic. Refrigerate for up to 4 days.
