    Easy Apple Sauce (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    Fall mean apples and apples mean joy. Fresh homemade applesauce is one of my favorite ways to partake in that joy. This recipe is easy to make, and delicious. I put this applesauce on ice-cream, pancakes, waffles, peanut butter sandwiches, and many other things. I prefer to warm it up just a bit, but this easy homemade applesauce is either warm or chilled.

    5 Golden Delicious apples, peeled, cored, and quartered
    5 Gravenstein or Fuji apples, peeled, cored, and quartered
    1¼ cups unfiltered apple juice
    2-3 tablespoons brandy or cognac
    3 tablespoons butter
    4 tablespoons sugar
    Scant 1 teaspoon ground cinnamon
    Splash of lemon juice
    Dash of salt to taste

    Directions:
    Preheat oven to 350 F.

    Cook until apples are soft when poked with a fork. Remove from oven and transfer to blender. Add all remaining ingredients blend to desired consistency using blender or potato masher. Adjust flavor by adding cognac, sugar, salt or lemon juice to taste.

    Serve hot immediately or chill for later use.

    This recipe comes to us from Jo Ann Boyd.
    Ingredients:
    ½ cup Butter Crisco
    1 cup fine rice flour
    1 ¼ cups light brown sugar
    ½ cup potato starch
    ¾ cup peanut butter
    ¼ cup tapioca starch
    1 egg
    1 teaspoon baking powder
    3 tablespoons milk
    ¾ tsp baking soda
    1 tablespoon vanilla
    ¼ teaspoon salt
    Approx. 60 Hershey Kisses, unwrapped
    Sugar, optional
    Directions:
    In large bowl combine first 6 ingredients and beat until well blended. In separate bowl combine all dry ingredients until well blended. Stir the rest of ingredients into Crisco mixture at Lo speed. Form into walnut size balls and roll in sugar, if desired. Place about 2 inches apart on un-greased cookie sheets.     Ingredients: 2 large English cucumbers 1 head of Romaine lettuce Juice of 1 fresh lemon 1 cup fresh watercress 1/4 cup fresh mint leaves 1 inch slice of fresh ginger Pinch of cayenne pepper 2 Tbsp. ground flax seeds, for serving Instructions: In a juicer, juice all ingredients except flax seeds into a tall glass. Top with 2 Tbsp. of ground flax seeds. Serve immediately.

    This recipe is great for kids who are on a gluten-free diet.
    Vegan, Gluten-Free and Dairy-Free
    Ingredients:
    1 bag gluten-free corn tortilla chips 1 bag GO Veggie! Vegan Mexican Cheese Shreds 1/3 cup fresh cilantro, finely chopped 1 ripe avocado, peeled, pitted and diced 10 cherry tomatoes, halved 1/2 cup fresh salsa 1/4 tsp. sea salt 1/4 tsp. pepper Directions:
    Preheat oven to 350 degrees F. Place corn tortillas in a large baking dish; top with remaining ingredients. Bake for 15 minutes or until cheese is completely melted. Remove from oven; serve warm. Enjoy!

    Celiac.com 07/18/2014 - It’s been hot lately, so I’ve been looking and lots and lots of tasty cool, and frozen things to make the summer just a bit more enjoyable.
    For people who love chocolate and bananas, oh, and whipped cream, this recipe delivers.
    Ingredients:
    1 box Jell-O Chocolate Pudding Mix ½ teaspoon vanilla extract 4 large bananas, peeled and sliced 2 cups sweetened whipped cream 3 tablespoons of Kahlua coffee liqueur, as desired Directions:
    Pour milk into large bowl. Add vanilla. Add Kahlua, if desired. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended. Let stand 5 min. or until thickened.
    Peel bananas and cut into slices.
    Arrange slices into a 9-inch pie dish.
    Spread pudding mixture over banana slices in 9-inch pie dish.
