Messing with the beloved deviled egg can be a dangerous gambit in my family. Luckily, a little apple goes a long way in this recipe. I like a bit more tang so I tend towards equal parts mayo and mustard in my filling, but you could easily use more mayonnaise like most recipes call for.

    6 hard-boiled eggs
    ½ Granny Smith apple, diced
    ½ shallot, diced
    1 tablespoon butter
    1 tablespoon fresh parsley, chopped
    ½ tablespoon fresh dill, chopped
    1 ½ tablespoons mayonnaise
    1 ½ tablespoon Dijon mustard
    Salt and pepper to taste

    Preparation:
Melt butter in pan over medium-heat and add shallots. Add apple and sauté for 1-2 minutes. Add parsley and cook another minute longer. Remove from heat.

Slice eggs in half lengthwise and combine yolks with mayonnaise, mustard and apple mixture in a bowl. Season with a pinch of salt and pepper.

Spoon a dollop into each egg white and sprinkle with fresh dill.

This one is from the just-released WFGF Cookbook for Kids and Working Adults:
    Ingredients:
    ½ lb. lean ground beef
1 teaspoon dried minced onion flakes
1 lb. gluten-free processed cheese, cut into cubes
    ¼ cup milk
    1 Tablespoon gluten-free ketchup
    2 Tablespoons gluten-free mustard
    Directions:
Have an adult help you brown the beef and onion flakes in a skillet that has been sprayed with a gluten-free nonstick spray, breaking up the meat with a fork as it cooks. Stir in the cheese, milk, ketchup and mustard; stir until the cheese has melted.
Note: Use as a dip with crackers, as a cheeseburger with gluten-free bread fingers as dippers, or as a main meal by serving it over boiled, gluten-free elbow macaroni.

I can’t say enough about the wonder of no-cook meals. When the weather heats up and you want to spend as little time as possible in a hot kitchen, easy to make salads like these are perfect. This particular salad is so delicious, refreshing and juicy, that you’ll happily welcome a few drips running down the side of your mouth. Tossing in some arugula or baby greens is a nice compliment, but the fruit stands beautifully on its own.
    Ingredients:
    4 cups watermelon, 1 or 2-inch chunks
    2 mangos, chopped
    2 avocado, chopped
    1 cup cherry tomatoes, halved
    1 red onion, thinly sliced
    ¼ cup mint
    ¼ cup olive oil
    2 tablespoons white wine vinegar
    1 lime, juice and zest
    Salt and pepper to taste
    Directions:
In a small bowl, combine vinegar with lime juice and zest....

Celiac.com 10/03/2013 - Having an easy apple crumble recipe in your arsenal is a good thing. This one is both easy to make and tasty as can be. I try to keep apples in the house, and find I usually have the other basics on hand, which can help to take the sting out of any dessert emergency.

Celiac.com 07/08/2014 - I was dying for an ice-cream sandwich the other day, and I didn’t have many options. I did, however, have some leftover Rice Krispies Treats and some ice cream. The rest, as they say, is history.
There are so many great variations on this recipe. You can make peanut butter Rice Krispy Treats. You can use chocolate ice cream. You can do both. You can use strawberry, or any of you favorite ice cream flavors. Fruit flavors work well. The list goes on and on.
    Ingredients:
Gluten-free Rice Krispies cereal Marshmallows Butter Ice cream of choice Directions:
Prepare Rice Krispies Treats as desired, following the recipe on the box. For a chocolate version, I use gluten-free Cocoa Pebbles ice cream.
    Allow treats to cool.
    Cut treats into squares, ...
