    Gluten-Free & Dairy Free Nachos -

    This recipe is great for kids who are on a gluten-free diet.

    Vegan, Gluten-Free and Dairy-Free

    Gluten-Free & Dairy Free NachosIngredients:

    • 1 bag gluten-free corn tortilla chips
    • 1 bag GO Veggie! Vegan Mexican Cheese Shreds
    • 1/3 cup fresh cilantro, finely chopped
    • 1 ripe avocado, peeled, pitted and diced
    • 10 cherry tomatoes, halved
    • 1/2 cup fresh salsa
    • 1/4 tsp. sea salt
    • 1/4 tsp. pepper

    Directions:

    1. Preheat oven to 350 degrees F.
    2. Place corn tortillas in a large baking dish; top with remaining ingredients. Bake for 15 minutes or until cheese is completely melted.
    3. Remove from oven; serve warm.
    4. Enjoy!

    This one is from the just-released WFGF Cookbook for Kids and Working Adults:
    Ingredients:
    ½ lb. lean ground beef
    1 teaspoon dried minced onion flakes
    1 lb. gluten-free processed cheese, cut into cubes
    ¼ cup milk
    1 Tablespoon gluten-free ketchup
    2 Tablespoons gluten-free mustard
    Directions:
    Have an adult help you brown the beef and onion flakes in a skillet that has been sprayed with a gluten-free nonstick spray, breaking up the meat with a fork as it cooks. Stir in the cheese, milk, ketchup and mustard; stir until the cheese has melted.
    Note: Use as a dip with crackers, as a cheeseburger with gluten-free bread fingers as dippers, or as a main meal by serving it over boiled, gluten-free elbow macaroni.

    Fruit soups offer an easy way to bring a splash of excitement into your summer meals. This light, refreshing strawberry soup is spiced with just a hint of cardamom, that makes for an exotic appetizer or a snack that you and your guests are sure to love.
    Ingredients:
    2 pints strawberries
    2 cups plain yogurt or creme fraiche
    1/2 cup orange juice
    1 teaspoon lemon juice
    1 squeeze of lime
    1/2 cup white sugar
    1/2 cup water
    1/8 teaspoon ground cardamom
    Fresh mint sprigs for garnish
    Directions:
    In a blender, combine the strawberries, yogurt or creme fraiche, orange, lemon and lime juice, sugar, water and cardamom.
    Blend until well smooth. Chill and serve with mint sprigs as garnish.

    Fall mean apples and apples mean joy. Fresh homemade applesauce is one of my favorite ways to partake in that joy. This recipe is easy to make, and delicious. I put this applesauce on ice-cream, pancakes, waffles, peanut butter sandwiches, and many other things. I prefer to warm it up just a bit, but this easy homemade applesauce is either warm or chilled.
    Ingredients:
    5 Golden Delicious apples, peeled, cored, and quartered
    5 Gravenstein or Fuji apples, peeled, cored, and quartered
    1¼ cups unfiltered apple juice
    2-3 tablespoons brandy or cognac
    3 tablespoons butter
    4 tablespoons sugar
    Scant 1 teaspoon ground cinnamon
    Splash of lemon juice
    Dash of salt to taste
    Directions:
    Preheat oven to 350 F.

    Celiac.com 07/08/2014 - I was dying for an ice-cream sandwich the other day, and I didn’t have many options. I did, however, have some leftover Rice Krispies Treats and some ice cream. The rest, as they say, is history.
    There are so many great variations on this recipe. You can make peanut butter Rice Krispy Treats. You can use chocolate ice cream. You can do both. You can use strawberry, or any of you favorite ice cream flavors. Fruit flavors work well. The list goes on and on.
    Ingredients:
    Gluten-free Rice Krispies cereal Marshmallows Butter Ice cream of choice Directions:
    Prepare Rice Krispies Treats as desired, following the recipe on the box. For a chocolate version, I use gluten-free Cocoa Pebbles ice cream.
