    Celiac.com 07/29/2014 - Try this delicious marinade with Cilantro and Lime at home with Mahi Mahi, Salmon or your favorite meat! This marinade even taste good on roasted fresh veggies.

    • ½ Cup Lime Juice
    • ¼ Cup Cilantro Fresh (plus some for garnish optional)
    • 2-3 Garlic Cloves Chopped
    • 3-5 Tbs. Olive Oil
    • Sea Salt and White Pepper
    • Fish or Meat

    Directions:

    1. In a bowl combine the lime juice, cilantro, garlic, oil, sea salt and pepper.
    2. Brush over your selected fish or meat and let sit 15-30 minutes in refrigerator.
    3. Preheat your oven, broiler or grill and cook your marinated fish or meat until done. Serve with fresh chopped cilantro over the top and enjoy!

    Ingredients:
    One pound boneless, skinless chicken breasts cut in two to three pieces each.
    Two teaspoons (or more) taco seasoning mix
    Two thirds cup bottles salsa OR one can Ro Tel diced tomatoes with green chilies partially drained
    Two thirds cup shredded cheddar jack cheese
    One-four ounce can diced green chilies (can use less)
    Sour cream
    Sliced black olives
    Directions:
    Combine chicken and seasoning mix in bowl and toss. Heat skillet with cooking spray and cook chicken until browned. Arrange chicken in a dish coated with spray. Top with salsa or tomatoes, cheese and chilies. Bake at 450F for approximately eight minutes or until done.

    These grilled pork tacos are quick, easy to make, and delicious. Topped with avocado salsa verde, they are a genuine gluten-free treat.
    Ingredients:
    3-4 boneless pork chops
    12 corn tortillas
    2-3 ripe avocados
    1/2 cup cilantro, chopped
    2 cans Herdez salsa verde
    1/2 cup Cotija cheese
    1 lemon or 2 limes
    Directions:
    Wrap tortillas in aluminum foil and place in warm oven.
    Grill pork chops according to thickness at 475-500 degrees.
    When pork chops are done, remove them from grill and allow to rest 5 minutes or so.
    Chop cilantro.
    Crumble cheese into a bowl.
    Cut pork into small cubes.
    Squeeze juice of 1/2 lemon or 1 lime onto the pork.
    Salsa Ingredients:
    3-4 ripe avocados
    Juice of 1/2 lemon or 1 lime
    ¼ cup cilantro, chopped

    This easy ceviche is a staple just about anytime I have friends over for lunch or dinner. Recently, I've started baking my own chips while the shrimp marinates in the lime juice. Making tortilla chips is an easy, healthy alternative to fried, store-bought chips. You can control the heat in this dish by seeding the chilies, but I look for smaller peppers and keep the seeds.
    Ingredients:
    1 pound jumbo shrimp, peeled and deveined
    Juice from 3 limes
    1 tablespoon lime zest
    3 cloves garlic, minced
    1 cup red onion, diced
    1 cup tomatoes, diced
    1 cup cucumber, diced
    3 Serrano chilies, diced
    ½ cup cilantro, roughly chopped
    12 white corn tortillas
