    Celiac.com 11/07/2014 - This gluten-free lemon cheesecake recipe is great to make for a dessert or special treat for your family and friends. It is one of my all time favorites!

    Ingredients:
    2 cups almond meal
    1/2 stick butter
    19 oz. cream cheese
    1 cup sugar
    3 eggs
    1 tablespoon vanilla
    1 tablespoon lemon zest
    1 tablespoon lemon juice

    Mix almond meal and room temperature butter with your and until it is evenly mixed. Use your hand to coat the bottom of a pan with the almond meal mixture until it is even, and then bake crust at 325F for 10 minutes, or until it is golden brown.

    Grate the skins of 2 lemons to make lemon zest.

    Add the cream cheese to a mixing bowl and mix until fluffy, then add the sugar, eggs, vanilla, lemon zest and lemon juice and continue to mix for 1 minute.

    Spoon the mixture into the pan with the crust until just below the top.

    Put the cake onto a cookie sheet that is covered with a layer of water and bake in the oven for 30 minutes at 350F.

    Chill and serve.

    4 Eggs.
    2 cups Sugar.
    1 ¼ cup Oil.
    1 ¼ cups Rice Flour.
    ¼ Cup Potato Flour.
    ½ Teaspoon Xanthan Gum.
    2 teaspoons Cinnamon.
    2 teaspoons Baking Powder.
    1 teaspoon Baking soda.
    1 teaspoon Salt.
    3 cups Grated Carrots.
    ½ Cup Chopped Pecans or Walnuts.
    2 cups chopped Apples.

    1 cup cola (not diet)
    2 cups gluten-free flour mix**
    1-½ cups gluten-free miniature marshmallows
    1-½ teaspoon xanthan gum
    ½ cup buttermilk
    ½ cup vegetable oil
    1 teaspoon baking soda
    ½ cup butter or margarine
    2 eggs, slightly beaten
    1/3 cup Hersheys Cocoa
    1 teaspoon gluten-free vanilla extract

    It is also very good with blueberries instead of the rhubarb.
    ½ cup margarine
    1-½ cups white sugar
    1 teaspoon vanilla
    1 egg
    2 cups gluten-free flour mix (e.g., B. Hagmans)
    1 teaspoon xanthan gum
    ½ teaspoon salt
    1 teaspoon baking soda
    1 cup milk
    2 cups chopped rhubarb
    Topping:
    ½ cup brown sugar
    ½ teaspoon cinnamon
    Mix margarine and sugar together; beat in egg and vanilla. Mix in dry ingredients followed by milk, then finely chopped rhubarb. Pour into greased pan then sprinkle mixed topping on top. Bake in 9x13 inch pan at 350 degrees F for 35-40 minutes. Half this recipe works well in an 8x8 inch pan.

    2 ½ cups rice flour
    ½ cup tapioca flour
    Dash salt
    2 cups sugar
    2 teaspoons gluten-free baking powder
    1 teaspoon baking soda
    3 teaspoons cinnamon
    4 eggs
    2 cans/jars carrots (14 ½ oz. drain & save juice)
    ¾ cup oil
    ¾ cup carrot juice
    ½ cup chopped nuts (never tried it with nuts)
    Throw everything in a bowl and beat for a good 5+ minutes with electric mixer. Bake in BUNDT pan at 335F for 1 ¼ hours. This is a large cake. For frosting mix Cool-whip and gluten-free cream cheese or dribble we with favorite frosting or just sprinkle with powdered sugar when cool.
