    Savory Gluten-free French Toast BLT

    Reviewed and edited by a celiac disease expert.

    Celiac.com 07/14/2015 - French toast and BLTs are two of my many favorite things to eat. This recipe combines both to deliver a fresh, savory spin that will sure to dazzle at brunch and sizzle at lunch. Think of it as a sensible French toast, or a decadent BLT.

    The key is finding a good gluten-free bread for the French toast. I use a locally bought sourdough made from long-fermented sorghum that works great. The bread I use tends to be dense and moist, so I actually toast it lightly first, then dip it and then batter and cook it. Whatever bread you choose, I’m sure this recipe will please.

    • 8 slices of bacon
    • 8 slices tomato
    • 6 large eggs
    • 4 slices gluten-free bread
    • 4 lettuce leaves (romaine, Boston, or Bibb)
    • ½ cup heavy cream
    • ¼ cup fresh chives, chopped
    • 3 tablespoons unsalted butter
    • 2 tablespoons mayonnaise
    • Coarse salt
    • ground pepper

    Directions:
    Cook bacon in a frying pan until golden and crisp. Drain on paper towels.

    Meanwhile, in a large shallow dish, whisk together 2 eggs, cream, chives, and a dash of salt and pepper.

    In a large skillet, melt butter over medium heat until butter begins to sizzle.

    Dip bread in egg mixture and place in pan.

    Cook until golden and crisp around edges, about 3 minutes per side, flipping once.

    Put French toast on a plate.

    Add butter to frying pan and fry 4 eggs.

    To each slice of French toast, add mayonnaise as desired, a layer of lettuce, tomato, and bacon, and top with fried egg and chives.

    Serve open face.

    5 pounds chicken drummettes
    Garlic salt to taste
    1/3 cup catsup
    1 cup cornstarch
    1¼ cup brown sugar
    3 eggs, beaten
    2 tablespoons gluten-free soy sauce
    2 tablespoons oil for frying
    ¾ cup cider vinegar
    ½ cup chicken broth

    Directions:
    Preheat oven to 300F. Wash drummettes and sprinkle with garlic salt. Roll them in cornstarch, then the beaten eggs. Fry in small batches in hot oil until browned. Remove to baking dish large enough to hold them all. In medium saucepan, mix together broth, catsup, brown sugar, soy sauce and vinegar and heat up to dissolve together. Pour over the chicken wings. Cover with foil and bake lightly for 1½ hours, basting or turning often. Serve hot or cold. Serves 10-12.

    Ingredients:
    1 pound ground chuck
    1 cup chopped onion
    ½ cup chopped celery
    ½ cup chopped green pepper
    1 can tomato sauce
    ½ cup ketchup
    1 tablespoon brown sugar
    1 tablespoon mustard powder
    1 tablespoon gluten-free vinegar
    Salt & pepper
    Directions:
    Sauté onion, celery, green pepper in small amount of oil. Add ground meat & brown ( I usually cook until not much liquid is left). Stir in remaining ingredients & cook until the thickness you like. If it gets to thick just add water to make it thinner.

    8 oz. of Velveeta (add more if you want it really cheesy)
    ¾ of a bag of gluten free elbow macaroni
    3 tablespoons butter
    ¼ cup milk (more if you want it really creamy)
    Directions:
    Make elbow mac and drain. Add other ingredients and mix until melted.
