    Slow Cook Peppers Stuffed with Sausage, Potato and Onion (Gluten-Free)

    Celiac.com 03/15/2016 - This recipe stuffs potato and savory Italian sausage into fresh bell peppers, and serves them in a bed of crushed tomatoes. The result is a cascade of flavors that are unleashed with each delightful bite.

    • 1 pound sweet, gluten-free Italian sausage
    • 1 can crushed tomatoes
    • 1 teaspoon dried oregano
    • 4 large red bell peppers
    • 1 small onion
    • 1 small potato
    • 1 cup fresh Italian flat-leaf parsley
    • ¼ teaspoon crushed red pepper (optional)
    • Kosher salt and pepper

    Directions:
    In a 5- to 6-qt slow cooker, combine the crushed tomatoes, oregano, and ¼ tsp each salt and pepper.

    If the peppers do not sit upright, slice a very thin piece off the bottom. Chop the piece finely and place in a large bowl.

    Add the onion, potato, parsley and any crushed red pepper to the bowl and toss to combine.

    Add the sausage, and mix it all together.

    Use a knife at a slight angle to cut the tops off the peppers. Discard any seeds. Spoon the sausage mixture (about 1 cup each) into the peppers.

    Arrange the peppers upright in the slow cooker and place the tops over the filling.

    Cook, covered, until the sausage is cooked through and the peppers are tender, 5 to 6 hours on low or 3 to 4 hours on high.

    Using two large spoons, transfer the peppers to bowls, letting any extra liquid drain into the sauce. Stir the sauce and serve with the peppers.

    Tip: I like to prepare the pepper the night before, stick them in the fridge and pop them in the slow-cooker on low heat in the morning, so they’re done when I get home.

    10# Lean ground beef, browned and drained
    6 - 29 oz. cans (174 oz.) Hunts Tomato Sauce
    4 - 12 oz. cans (48 oz.) Hunts Tomato Paste
    1 - 28 oz. can Hunts Whole Tomatoes
    1 oz. Fresh Oregano, Rosemary, Savory, Thyme

    6 stalks celery
    1 tsp. minced garlic

    Chop whole tomatoes and herbs in blender. Chop onion and celery with water in blender, drain. Add whole tomatoes and herbs and onion celery combo to ground beef, garlic, sauce and paste in roaster. Stir in sugar (to cut acidy taste of tomatoes). Slow cook at 275 degrees for 4-6 hours. Makes 11 quarts.

    12 oz. Chicken breast, cut into chunks.
    ½ cup chopped onion
    1 cup chicken broth, add more as desired
    1 can diced tomatoes
    1 ½ cups instant rice
    1 can French cut green beans
    1/8 teaspoon garlic powder
    1 tablespoon cilantro or to taste
    2 pinches basil
    Spray skillet with cooking spray or use butter or oil. Fry chicken and onion 3 minutes or until chicken is no longer pink. Stir in broth and tomatoes and spices. Bring to boil, stir in rice and beans. Simmer 5 minutes. Remove from heat, let stand 3 minutes covered. Serve with grated parmesan cheese if desired.

    Meatballs:
    4 lbs. lean ground beef
    1 cup water
    ½ cup gluten-free soy sauce
    Dash of garlic salt
    Mix together, shape into 1 inch balls and put in baking pan with balls touching. Bake approximately 30 minutes at 350F.
    Sauce:
    Brown a finely diced onion in a little olive oil and add:
    4 large cans of tomato sauce
    2-3 large cans of tomato paste (until thick)
    1 teaspoon Italian seasoning
    ½ teaspoon oregano
    ¼ teaspoon garlic powder (more if you like)
    5-6 shakes of garlic salt
    Simmer with meatballs for at least 3-4 hours. Serve on hot gluten-free submarine rolls with mozzarella cheese.
