    Herb and Almond-Crusted Pork Tenderloin (Gluten-Free)

    Celiac.com 04/26/2016 - Pork tenderloin offers a cheap, tasty way to dress up an otherwise simple dinner. This recipe creates a crust of savory herbs and roasted almonds to deliver a memorable pork tenderloin that makes a great centerpiece.

    Ingredients:

    • 1-1½ lb. pork tenderloin
    • ¼ cup roasted almonds
    • 5 cloves garlic
    • ½ cup Rice Chex, crushed
    • ¼ cup fresh flat-leaf parsley
    • 1 tablespoon gluten-free mustard
    • 2 tablespoons olive oil
    • 1 bunch spinach, rinsed
    • Kosher salt and pepper

    Directions:
    Heat oven to 400°F.

    Line a rimmed baking sheet with parchment paper or foil.

    In a food processor, roughly chop the almonds and 3 cloves garlic.

    Add the ground Chex and parsley and pulse into small crumbs.

    Season the pork with salt and pepper, then rub with mustard.

    Coat with the Chex mixture, pressing gently to help it adhere.

    Move the pork to the prepared baking sheet and roast until the internal temperature reaches 145°F, 18 to 22 minutes.

    Let rest at least 5 minutes before slicing.

    Meanwhile, thinly slice the remaining 2 cloves garlic.

    Heat the oil in a large skillet over medium heat.

    Add the garlic and cook, stirring until fragrant, about 1 minute.

    Add the spinach and a dash of salt and pepper and cook, tossing, until beginning to wilt, about 2 minutes. Serve with the pork.

    This is using an 8x8 casserole dish: Just add the appropriate amounts to all the ingredients to make a larger dish. Fill your casserole dish with potatoes (line them up to fill it so you know how many to use). Peel and boil the potatoes (cutting them into small chunks will allow faster cooking). Drain the potatoes and put them onto a cookie sheet Bake for ten minutes (not any more ­ they will get a hard crust otherwise) in a 375 degree oven. After taking them out of the oven, put into a large mixing bowl, set aside.

    2 cup rice flour
    ½ tablespoon paprika
    ¼ tablespoon cayenne
    2 tablespoon white sesame seeds
    1 quart cold soda water
    4 single chicken breasts-cut into strips
    Salt to taste
    In a bowl, mix together the flour, paprika, cayenne and sesame seeds. Whisk in the soda until a pancake batter consistency is achieved. Dip the chicken fingers individually in the batter and fry until golden brown, about 5 minutes. Season with salt.

    Arrange in baking dish with potatoes on bottom:
    6 or 8 pork chops pan grilled
    4 to 6 large potatoes peeled and quartered
    Sauce - Mix together:
    1- medium green bell pepper chopped
    1- 14.5 ounce can crushed tomatoes
    1- 14.5 ounce can water
    1- 8 ounce can tomato sauce
    ½ teaspoon cayenne pepper
    ½ teaspoon garlic powder
    1 Tablespoon lemon juice
    2 Tablespoons Worcestershire sauce
    salt and pepper to taste.
    Pour over potatoes and chops and bake at 350F for 1 hour. Fantastic!

    2 cups water
    2 tablespoons butter or margarine
    1 tablespoon chicken bouillon (or 3 cubes)
    ½ teaspoon onion powder
    ½ teaspoon salt
    dash of sage
    dash of thyme
    dash of pepper
    Heat ingredients in a saucepan. Whisk together 2T cornstarch + ¼ C cold water in a small bowl Add to cornstarch/water to saucepan. Boil 1 minute to thicken. Makes 2 cups.
