    Mexican-style Roasted Corn on the Cob (Gluten-Free)

    Celiac.com 09/06/2016 - Summer means corn, and roasted Mexican-style corn is one of the best gluten-free summertime treats I know. This recipe is sure to leave lots of full stomachs and happy smiles.

    Ingredients:

    • 6-8 ears fresh corn, un-shucked
    • 1 stick butter, room temperature
    • 3 tablespoons lime juice
    • 2 teaspoons chopped tarragon
    • 6 ounces queso Cotija, finely grated
    • Spice mixture (recipe below)

    Spice Mixture:

    • 2 tablespoons chili powder
    • 1 tablespoon cayenne pepper
    • 1 tablespoon garlic powder
    • 1 tablespoon sweet paprika
    • 1 teaspoon ground black pepper
    • ¼ teaspoon ground cinnamon

    For the spice mixture, combine all ingredients. Sprinkle over roasted corn as desired.

    Directions:
    Soak the corn in cold water for 1 hour.

    Heat the grill.

    Put the soaked ears on the hot grill and cook for 25 to 30 minutes, turning frequently.

    While the corn is grilling, make the lime butter.

    In a small bowl, add the butter, lime juice, tarragon and salt and pepper, to taste.

    Mix well and spread onto a large plate.

    Take the corn off the grill and carefully peel back the husks (they will be hot).

    Remove the corn silk and tie the husks in a knot so you can hold onto it like a handle. Roll the corn in the butter.

    Top with a good amount of Cotija cheese and sprinkle with the spice mixture.

    Serve immediately.

    For a variation, smear corn with mayonnaise instead of lime butter, and use spices as desired.

    ala Pico de Gallo
    Ingredients for 1 cup:
    1 ripe red tomato/ 2 Roma tomatoes
    1-3 green Serrano chilies
    3 sprigs fresh cilantro
    1 tablespoon raw white onion
    1 - 2 tablespoons olive oil
    1 - 2 tablespoons white vinegar
    salt

    Chop all ingredients into small pieces. Add oil, vinegar and salt. Stir and serve. Stays nice a day or two in the refrigerator. Can use with meat, eggs or cook with eggs, etc. For guacamole use 1 part salsa to 2 parts avocado chopped/mashed. Add a little more vinegar or lime/lemon juice to slow down darkening.

    Put 2 cups tomatillos "green tomatoes" in a sauce pan to boil (peel off outer leaves if there are any) with 1-5 fresh green Serrano chilis...

    One of the best things I ever ate was the green-chile stew I had at a restaurant in Taos, New Mexico the name of which I don't remember. Still the stew of local, fresh roasted green chiles, squash, corn and pork stays in my mind to this day.
    Anyone who has ever spent time in New Mexico can likely attest to the New Mexicans' love affair with the green chile. Anyone who's tried the fresh, green chile stew has likely thought about having more one day. They make green chile stew all over New Mexico, and they make it many different ways, but it always comes out delicious.
    If you can't get fresh roasted green chiles, then try to find frozen diced chiles at your local market. This recipe makes enough to serve eight people.
    Ingredients:
    3 tablespoons olive oil

    Ceviche is one of my very favorite summertime dishes. It's one of those magical dishes where simple ingredients, simple preparation, and a bit of time combine to form a delicious, refreshing and memorable dish.
    Not only do I consider ceviche to be delicious and refreshing, I consider it to be lucky. That's because, back when I was single, I took the woman who would later become my wife out to a local Peruvian restaurant for ceviche on our first date. The place specializes in ceviche, and we ordered several kinds. And while I'd like to think that the charm that eventually won her over was mine alone, I still give some credit to the ceviche she found so delicious.
    I can't guarantee that this ceviche will help you land the partner of your dreams, but it certainly can't hurt your efforts...

    This recipe marries grilled corn with mayonnaise, crumbled cheese, lime and a dash of chili powder for a tasty, satisfying snack. Serve it at your next barbecue for sure smiles all around.
    Ingredients:
    6 ears of fresh corn on the cob 6 strips bacon, cooked and crumbled 1 tablespoon olive oil 2 tablespoons butter, softened 4 ounces Cotija cheese, crumbled ½ cup mayonnaise red chili powder, to taste black pepper, to taste kosher salt, to taste wedges of fresh lime fresh cilantro for garnish Directions:
    Heat your grill to high.
