    Beth's Chicken Nuggets (Gluten-Free)

Reviewed and edited by a celiac disease expert.

    2 lbs. chicken breast
    1 cup corn meal
    1 teaspoon salt
    ½ teaspoon pepper
    1 teaspoon garlic salt

    Celiac.com Sponsor (A12):
Cut chicken breast into bite-sized pieces. Put other ingredients into a Ziploc bag, seal, and shake to mix. Drop a couple of pieces of the chicken into the corn meal mixture, seal the bag, and shake to coat. Remove to plate. Repeat until all of the chicken is coated. These can be fried in a deep fryer, in a skillet, or sprayed with PAM and baked at 350 degrees for 30 minutes.

    Scott Adams

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

Preheat oven to 350 -375F. Cook until just al dente, 2 oz pasta per person. If using spaghetti, break into half lengths prior to cooking. Drain pasta.
Chop 1 onion, sauté until golden in butter or olive oil. If desired, chop some garlic and one or more chilies or banana peppers, add to pan after onion is golden and continue to sauté. Also if desired, slice about a half cup fresh mushrooms, add to pan after onion is golden and continue to sauté until nicely browned.
For each person, grate 1 to 2 oz sharp cheddar cheese. Other cheeses may be used as desired, and more is better than less. Have on hand about an ounce of cream cheese per person, cut into small chunks.
Grease well with butter a casserole of an appropriate size. Start layering in casserole--a thin layer of pa...

In my house, fall and winter cooking means lots of stews, soups and casseroles. Beef stew is one of my true favorites, and one that I can almost never order at a restaurant, because it almost always contains wheat, either as a thickener, or to dredge the meat for browning.
Beef stew is a dish that goes well by itself, or which can be served over rice or gluten-free noodles for a heartier meal. Here is a recipe that will deliver a delicious gluten-free stew that will keep your hungry eaters coming back for more.
    Ingredients:
    2 pounds stew beef
    2 tablespoons vegetable oil
    2 cups water
    1 tablespoon Worcestershire sauce
1 gluten-free beef bouillon cube (I often use Celifibr's Vegetarian)
5 tablespoons Just Like Lipton's Gluten-Free Soup Mix (Recipe below)
