    Scott Adams

Scott Adams was diagnosed with celiac disease in 1994, and, due to the nearly total lack of information available at that time, was forced to become an expert on the disease in order to recover. In 1995 he launched the site that later became Celiac.com to help as many people as possible with celiac disease get diagnosed so they can begin to live happy, healthy gluten-free lives.  He is co-author of the book Cereal Killers, and founder and publisher of the (formerly paper) newsletter Journal of Gluten Sensitivity. In 1998 he founded The Gluten-Free Mall which he sold in 2014. Celiac.com does not sell any products, and is 100% advertiser supported.

I'm told Bison is the only mammal that does not get cancer. Some claim that the Plains Indians, whose main diet was Bison, did not suffer from cancer or heart disease. What is certainly true, is that Bison meat has less fat, calories, and cholesterol than most other meats, which makes it great for a heart-healthy diet. This gluten-free bison stew is tasty, healthy, and easy to make.
    Ingredients:
2 pounds bison meat, cut into 1-inch cubes
    3 medium potatoes, peeled
    6 carrots, peeled and sliced
1 (8 ounce) cans peeled tomatoes
1 (12 ounce) cans tomato sauce
    1 large sweet onion, diced
    ½ cup minced celery
    2 cloves garlic, minced
    2 tablespoons potato starch
    1 quart chicken broth
    ½ cup water
    ½ cup dry red wine

This is doubtless the best time of year to buy corned beef. In anticipation for Saint Patty’s festivities, it’s almost always on sale. Corned beef generally comes with a packet of cooking spices and while I’ve seen a lot of recipes omit them, a good supermarket will send you home with decent spices worth using. Give them a once-over to make sure they’re gluten-free. This version has an added kick from the beer, so definitely go gluten-free there.  However, whether you’re Irish or not, classic corned beef and cabbage simply tastes like home.
Check Celiac.com's Gluten-free St. Patties checklist for gluten-free corned beef.
    Ingredients:
1 4-5 pound corned beef, with spice mixture
    1 head cabbage, quartered
    6 red potatoes, quartered

What's this? I can stuff baby bell peppers and throw them on the grill and call it dinner? Please, tell me more…
Yes, this rather obvious shift from traditional stuffed peppers took me by surprise. That said, here's a quick and easy way to enjoy stuffed bell pepper with minimal fuss and without heating up the house.
Serve these with rice for a full meal.
