    Southern-Fried Chicken (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    This simple recipe comes to us from Jennifer Gross.

    Coat chicken thighs with potato starch and pan-fry them in oil. When theyre done, remove the chicken and adds potato starch to the pan drippings and mix it into a paste. Slowly stir in milk and stir constantly until the gravy thickens to desired preference. Add salt and pepper to taste.

    This recipe comes to us from Phyllis Chinn.
    2 cups gluten-free white bread (crusts removed) I use the recipe from Betty H. for cornstarch bread - its wonderful + extra 2 eggs
    Crumbled smoked bacon (leave it out if you like)
    1/8 teaspoons cayenne
    ¼ teaspoons dry mustard
    2 - 3 Tbsp cream
    2 teaspoons lemon juice
    ¼ teaspoons Cajun spice
    salt
    pepper
    Mix above in food processor until well blended. Put in bowl and add 2 cups picked over crab meat and fold together. If too dry, add a little cream; if too moist add a few more bread crumbs Make into patties and roll in dried bread crumbs - fry in oil until brown. Drain on paper towels.

    1 lb. meatloaf mix (or, 1/3 lb ground pork, 1/3 lb ground veal, 1/3 pound ground beef - you can also use all ground beef)
    ½ cup prepared horseradish
    ½ - ¾ cup gluten free fresh breadcrumbs (not dried)
    1 egg, beaten
    1 medium onion, diced
    ¼ cup water
    1/3 cup chopped Italian parsley
    Mix all ingredients; shape into a loaf form, put on cookie sheet with sides
    Top with the following:
    ½ cup gluten-free chili sauce (Heinz)
    3 tablespoons Heinz ketchup
    2 tablespoons Worcestershire Sauce
    10 drops gluten-free Hot sauce (optional)
    Bake at 350 for 45 minutes. Serve with twice baked potatoes with cheese and sour cream and baby glazed carrots.

    Oh, Chicken, how can I prepare thee? Let me count the ways. This is a great, quick spin on everyday chicken thighs and can easily spice up an ordinary middle-of-the-week dinner. The combination of spices is potent and aromatic but the real kick comes from the cider vinegar. I’ve played around with different combinations and quantities of spices depending on which flavor I want to highlight—that’s the fun part. Thighs are great over brown rice, on a salad, with veggies, in tacos or even on their own. Thighs also cook great on the grill in the summertime.
    Ingredients:
    8 skinless, boneless chicken thighs
    6 tablespoons honey
    3 teaspoons cider vinegar
    2 teaspoons garlic powder
    2 teaspoons chili powder
    2 teaspoons paprika
    2 teaspoons black pepper

    Okay, salmon is one of my all-time favorite fish. I love it raw, I love it cooked. I like it grilled, baked, poached or fried. Pretty much any way you can make it, I'll eat it with a smile on my face. Salmon is one of those fish that needs minimal added preparation to be delicious. This recipe honors that fact. It is fast, easy and tasty, and it will have your guests clamoring for more.
    Ingredients:
    12 ounce salmon fillet, cut into 4 pieces
    2 cloves garlic, crushed
    ½ tablespoon of paprika
    1 lemon cut into wedges, for serving
    Coarse-grained salt
    Freshly ground black pepper

    Directions:
    Preheat the oven to 450 degrees F.
