    Buffalo Meat Loaf (Gluten-Free)

    Ingredients:

    1 large onion, finely chopped
    2 celery ribs, finely chopped
    1 large carrot, finely chopped
    3 teaspoons vegetable oil (divided)
    ¾ cup fine gluten-free bread crumbs
    ½ cup chopped fresh flat leaf parsley
    1 large egg
    2 tablespoons gluten-free ketchup (or pureed roasted peppers)
    1 tablespoon Mr. Spice Garlic Steak Sauce (or gluten-free Worcestershire sauce)
    2 teaspoons salt (divided)
    ¼ teaspoon freshly ground pepper
    2 pounds ground buffalo
    1 onion cut in quarters
    6 plum tomatoes, each cut into 6 wedges or other vegetable like peppers, zucchini, carrots or potatoes
    ½ cup water (for deglazing pan)

    Directions:

    Preheat oven to 375F.

    Cook onion, celery and carrots in 2 teaspoons oil in a large nonstick skillet over moderate heat until softened. Transfer vegetables to a large bowl and stir in gluten-free breadcrumbs, parsley, egg, ketchup, Garlic Steak Sauce, 1 teaspoon salt and pepper. Stir in buffalo (do not over mix) and form mixture into a 10 inch x 4 inch oval loaf and place in a shallow metal baking pan. Toss onions and cut vegetables with remaining oil, salt and pepper to taste, and then scatter around meat loaf. Bake in the middle of the preheated oven for 1 hour 10 minutes, or until a thermometer inserted 2 inches into the center registers 160F.

    Transfer meat loaf and vegetables to a platter and let stand 10 minutes before slicing.

    While meatloaf is standing, make sauce by deglazing the baking pan with water over moderate heat, scraping up brown bits. Strain sauce through a fine sieve before serving.

    Serve meat loaf with vegetables and sauce.

    Serves 4-6

    This recipe comes to us from Jonathan Hammer. Follow standard beer brewing procedures with respect to sterilization and fermentation.
    Recipe Per 1 gallon product:
    1 pound buckwheat honey
    1/3 ounce Challenger Hops
    Yeast nutrient
    Water to make 1 gallon
    Ale Yeast
    Reserve small amount of hops. Boil honey, water, and bulk of hops for 30 minutes. Add reserved hops and boil for another 5 minutes. Strain off the hops. Cool to room temperature. Add yeast nutrient as per package directions. Transfer wort to glass carboy. Prepare yeast as per package directions and add.
    Fermentation can last up to 6 weeks.
    When fermentation is complete, siphon into another glass carboy and store in a cool location for clarification (about 2 more weeks).

    Approximately 10 oz. Ground beef
    1 (14-½ oz.) can Del Monte Diced Tomatoes with Green Pepper and Onion
    1/8 teaspoon cayenne pepper
    1 (14-½ oz.) can Del Monte Sliced New Potatoes, drained
    Cheese topping
    Brown meat and then drain. Add tomatoes and cayenne pepper to skillet. Cook 5 to 8 minutes or until slightly thickened, stirring often. Stir in potatoes, heat through. Top with cheese. This dish is spicy and flavorful.

    Ingredients:
    5 pounds chicken drummettes
    Garlic salt to taste
    1/3 cup catsup
    1 cup cornstarch
    1¼ cup brown sugar
    3 eggs, beaten
    2 tablespoons gluten-free soy sauce
    2 tablespoons oil for frying
    ¾ cup cider vinegar
    ½ cup chicken broth

    Directions:
    Preheat oven to 300F. Wash drummettes and sprinkle with garlic salt. Roll them in cornstarch, then the beaten eggs. Fry in small batches in hot oil until browned. Remove to baking dish large enough to hold them all. In medium saucepan, mix together broth, catsup, brown sugar, soy sauce and vinegar and heat up to dissolve together. Pour over the chicken wings. Cover with foil and bake lightly for 1½ hours, basting or turning often. Serve hot or cold. Serves 10-12.

    I love Brussels sprouts! I may be the minority....but if you love Brussels sprouts as much as I do, then you will likely love this recipe too. This is a very easy recipe and it can be eaten as a meal or served as a side dish, served warm or cold.
    Serving Size:  4  (as a side) or 2 (as an entree)
    Ingredients:

    1 lb. Brussels sprouts, halved or quartered, depending on size 1 cup chopped kale (optional) ½ - ¾ Cup Pine nuts (raw or lightly roasted) 2 gloves garlic, crushed 1 tbs. olive oil or grapeseed oil
    salt and pepper, to taste dash of nutmeg (optional) To make:
    Saute all but pine nuts over medium heat until bright color develops and the sprouts are tender. Add pine nuts and cook for another few minutes. Remove from heat and serve! ...
