Summer's almost over, but if you want a quick, easy to make salad that tastes amazing and makes you feel like you're basking in the July sun, then try this little trick: Toss some feta cheese over watermelon chunks. Then sit back and enjoy as the looks on your guests faces move from puzzled to intrigued to outright delighted. Be sure to relish the 'Mmmms' and 'Ooooos' and 'Awwws' that follow as they make their pleasure know.

Contrary to popular belief, Gorgonzola, or blue cheese does NOT contain gluten. This recipe makes a tasty, refreshing salad that will turn heads and delight tastebuds.

I guess I'm what you'd call a coleslaw purist. I never liked it much as a kid, and once I started to like it as an adult, I developed a taste for the most basic coleslaws. I don't want any jalepeños, or other snappy flavors, like whacky, sun-dried tomato aioli in my coleslaw.

This recipe makes a great, healthy snack that is perfect to tide you over between meals!

    The finished fennel crisps.
This gluten-free recipe can be served with your favorite dip, or just eaten by itself!

The decadent, borderline sinful combination of bacon and blue cheese is one I use sparingly, but with the season of dinner parties upon us, I can’t think of a better reason to break it out.

It doesn’t really feel like autumn until there’s a big bowl of pumpkin seeds waiting on the kitchen table. They’re best fresh but can be stored in the freezer for up to a month. I prefer my seeds on the spicy side, but this recipe can easily be toned down without one of the chili powders. A sweeter version with honey, cinnamon and brown sugar is great on yogurt or cereal.

Butter and fresh tarragon were once my go-to dressing for carrots, but my flaring sweet tooth recently pulled me in a slightly different direction. This recipe turned out to be just sweet enough to rival dessert. This is a great dish to serve when you have guests, especially if you can get your hands on rainbow carrots.

The finished roasted artichokes and broccoli. Photo: CC--Laurel Fan
I find baby artichokes a little underrated; they’re easier to handle and usually cheaper. I tried these for the first time on the grill, but it’s just as easy to toss together and roast. I happened to have pistachios on hand the second time around and they turned out to be the secret star of this dish.

I never get tired of turning sweet fruit into a savory dessert. Anjou and Bosc pears are easy to find this time of year. Their denser flesh makes them perfect for baking and roasting.

The finished blueberry and beet salad. Photo: CC-ericksondesign
As summer comes to an end, this fresh salad is a great way to enjoy the last flavors of the sunny months. Citrus brings out the best in beets and compliments the sweet blueberries. The creamy dressing pairs nicely with other fruit as well, I like to make a little extra for my lunch or breakfast.

This is my absolute favorite way to prepare asparagus, and one that is sure to put a smile on the faces of your family or guests.
