    Here's a fun n' tasty Gluten-Free and Dairy-Free recipe for Apple Pumpkin Strudel that is quite unique from your traditional apple pie or apple crumble....perfect for the holidays or for a casual dinner party dessert. Enjoy!

    Pumpkin Apple Strudel

    Gluten-Free and Dairy-Free

    Makes 8 Strudels

    •  8 large organic Granny Smith apples, peeled and sliced
    •  1 (15 oz.) can pumpkin puree
    •  1 Tbsp. sugar
    •  1/4 cup fresh rosemary, very finely chopped
    •  1/4 cup sugar
    •  1 Tbsp. ground cinnamon, plus more for topping
    •  1/6 tsp. all-spice
    •  1 1/2 cup Gluten-Free All-Purpose Flour (I used Bob's Red Mill)
    •  1 tsp. baking powder
    •  1/4 tsp. sea salt
    •  1/4 tsp. fresh organic lemon zest
    •  2 Tbsp. freshly squeezed organic lemon juice
    •  1/4 tsp. gluten-free almond extract
    •  2 large eggs
    Directions:

    Preheat oven to 350 degrees F.  Spray a baking dish with nonstick baking spray.  Sprinkle with 1 Tbsp. sugar and rosemary.  Add sliced apples and pumpkin puree; spread evenly.

    In a large bowl, combine flour, sugar, baking powder, sea salt and orange zest.  Add orange juice, almond extract and egg; mix well to combine and form a mealy texture.  Transfer mixture on top of apples in the baking dish.  Sprinkle with additional ground cinnamon.
       
    Bake for 45-60 minutes or until golden brown.

    Do you really mean a 1/4 CUP of rosemary??? Ingredient list doesn't mention Orange juice, yet the directions do...please clarify both issues.

    I made this recipe and it did not come out like the picture. I used the rosemary as called for and I used lemon juice and lemon zest. The flavors of fresh rosemary and pumpkin puree with the limited amount of sugar called for in the recipe, did not give me a taste I would associate with a piece of apple strudel.

    Confused already. 1. Makes 8 strudels? 2. The photo shows a rolled strudel slice (which is made from a very thin pastry dough).

    How do you end up with 8 strudels? or even 1 strudel when all ingredients are spread evenly into a baking dish and the flour mixture is poured on top? This will not come out looking the the photo or 'strudel' - not mentioning the addition of rosemary? Sounds more like it could be an 'apple crumble' except you say it is unique and not like that. ?? Not makin' it!

    Although it asks for a crust I just pour the pumpkin-mixture into a glass pie dish and cool. It slices out just like a regular piece of pie.
    And remember to use gluten-free products.
    Pumpkin Chiffon Pie
    1 envelope (l tablespoon) unflavored gelatin
    ¼ cup cold water
    3 eggs, separated
    ½ cup firmly packed brown sugar
    1 ¼ cups solid pack canned pumpkin
    ½ cup milk
    ½ teaspoon ground ginger
    ¾ teaspoon ground cinnamon
    ¼ teaspoon ground nutmeg
    ½ teaspoon ground allspice
    ½ cup granulated sugar
    1 - 9 or 10 inch baked pie shell
    Soften gelatin in cold water. Combine together in heavy saucepan the egg yolks, brown sugar, pumpkin, milk, salt, and spices. Cook over low heat, stirring continua...

    1 bag cranberries (12 oz.)
    ¾ cup sugar
    1 teaspoon grated orange zest
    ¼ cup orange juice
    2 tablespoons Grand Marnier
    1 cup heavy whipping cream
    Rinse and pick over cranberries and place in a large saucepan. Add sugar and cook over medium heat about 5 minutes, until cranberries have burst and the mixture has a thick jam-like consistency. Cool.
    Rub through a strainer to remove skins. Stir in zest, orange juice and liqueur and mix thoroughly. Whip cream and fold into cranberry puree. Place mousse in bowl or wine glasses or place in a serving bowl. Decorate with whipped cream before serving if desired.

    Ingredients:
    ½ cup Jules Gluten Free All Purpose Flour*
    1 ½ cup gluten-free oats

    Preheat oven to 375F (static) or 350F (convection).
    In a large bowl, add ¼ - ½ cup granulated cane sugar to the fruit, to taste, and pour into an 8 x 8 inch baking pan. Set aside to allow the sugar to encourage syrup to form.

    After dinner at a local Mediterranean restaurant, the waitress suggested my friend and I try the farmer's market fresh lemon soufflé for dessert. What followed was nothing short of culinary bliss, with ooh's and ahh's over the sweet, airy, lemony, delight. Realizing that most soufflé's contain a bit of flour, I resolved to replicate the joy in a gluten-free version. I've done a pretty good version using just corn starch, but I've been experimenting with various flours and starches as a substitute for the 2 tablespoons of wheat flour the recipe usually requires. This is the best I've come up with, so far. I will continue to tinker, as should you. Enjoy!
