    Border-style Mixed Bean Salad (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    This southwestern-style mixed bean salad is a big hit at potlucks and picnics. It’s easy to make, easy to transport, and can even be made a day or two ahead of time. This recipe is flexible. You can add or subtract ingredients according to your tastes.

    • Photo: CC--kustomkitten1 small can black beans, rinsed and drained
    • 1 small can kidney beans, drained
    • 1 small can canellini beans, drained and rinsed
    • 1 green bell pepper, chopped
    • 1 red bell pepper, chopped
    • 1 clove garlic, crushed
    • 1 small can corn, drained
    • 1 small red onion, chopped
    • 3 tablespoons olive oil
    • 3 tablespoons red wine vinegar
    • 1 tablespoons fresh lime juice
    • 1 tablespoon lemon juice
    • 1½ tablespoons white sugar, to taste
    • 1 tablespoon salt
    • ¼ cup chopped fresh cilantro
    • ½ tablespoon ground cumin
    • ½ tablespoon garlic powder
    • ¼ teaspoon chili powder
    • ½ tablespoon ground black pepper
    • 1 dash hot pepper sauce

    Directions:
    In a large bowl, combine beans, bell peppers, corn, and red onion.

    In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin, and black pepper. Season to taste with hot sauce and chili powder.

    Pour olive oil dressing over vegetables; mix well. Chill thoroughly, and serve cold.

    Hello, I think you forgot to list an ingredient. There appears to be avocado in the picture. Is that what you used?

    1 package corn tortillas
    1 jar salsa
    1 can corn (drained)
    ½ cup sour cream
    ½ onion diced
    1 ½ cups cheddar cheese grated
    a big bowl of miscellaneous cut veggies
    - use whatever you have - I used green and red pepper, asparagus, broccoli, green onion, cilantro, black olives, and tomatoes
    Grease a 9X13 pan. Slice stack of tortillas in half. Place about 5 tortilla halves in bottom of pan with straight side against pan. Layer veggies, then a layer of sour cream, a little cheese, and a little salsa. Continue layering (Like Lasagna) and top with salsa. Bake about ½ hour at 350F. Top with cheese and bake until golden brown.

    This is a really versatile recipe for steak. The marinade is a quick go-to; it doesn’t take long for the meat to take on great flavor.     Ingredients:
    1 2-pound flank steak
    Juice from 3 limes, plus 1 teaspoon zest
    Juice from 1 orange, plus 1 teaspoon zest
    3 scallions, roughly chopped
    5 cloves smashed garlic, divided
    1 teaspoon Dijon mustard
    2 anchovy fillets
    3 tablespoons balsamic vinegar
    1 cup fresh parsley, loosely packed
    1 cup cilantro, loosely packed
    1 cup basil, loosely packed
    About 1 cup olive oil, divided
    Salt and pepper to taste
