    Jefferson Adams is Celiac.com's senior writer and Digital Content Director. He earned his B.A. and M.F.A. at Arizona State University.     This recipe comes to us from Valerie Wells.
    2 (or more) pounds lean stew meat
    1 roasted soup bone* for flavor
    1 can S & W Ready Cut diced tomatoes (or 4 diced fresh)
    4 large potatoes peeled and cubed
    4 carrots, peeled & sliced
    1 onion peeled & cubed
    2 ribs celery, sliced
    1 cup water
    Salt & pepper to taste
    2 cups frozen peas (or green beans), thawed
    Put all ingredients in crock pot except frozen peas. Cook on high (325F degrees) one hour, and then stir. Cook on low (225F) for 7 hours. You may want to stir it again half way through the cooking time. Add frozen peas & allow just enough time to heat through (5 or 10 minutes). Serve with gluten-free crackers or rolls. How easy is that?

    For a traditional green bean casserole, Funyuns are gluten free and can be used as a topper to replace fried onions or you can fry up your own onions with Jules Gluten Free All Purpose Flour and your favorite recipe. For a slightly healthier version, try these baked (“fried”) onions.
    Fried Onions

    Ingredients:
    1 medium onion, sliced thinly
    1/3 cup Jules Gluten Free™ All Purpose Flour*
    ¼ tsp. sea salt
    Nonstick cooking spray
    Directions:
    Preheat oven to 475 F. Spray a baking sheet with cooking spray and set aside.

Baked chicken breasts offer one of the simplest ways to craft a quick, delicious dinner that will have family and friends smiling.
    This recipe will serve six adults, so adjust accordingly.
    Ingredients:
    6 skinless, boneless chicken breast halves
    ½ cup honey
    ½ cup Dijon or stone-ground mustard - gluten-free (I use Annie's)
    1 teaspoon dried thyme
    1 teaspoon dried basil
    1 teaspoon paprika

    Marinated Pork Tenderloin (Gluten-Free)
    Celiac.com 09/30/2014 - Pork tenderloin is a versatile favorite. This recipe for marinated pork tenderloin makes a tasty, grilled version that is gluten-free and ready to please.
    Ingredients:
    2 (¾ pound) pork tenderloins ¼ cup balsamic vinegar ¼ cup gluten-free soy sauce ¼ cup packed brown sugar 1½ teaspoons onion powder 1 teaspoon ground cinnamon ½ teaspoon garlic powder ¼ teaspoon black pepper 2 tablespoons olive oil Place soy sauce, brown sugar, sherry, dried onion, cinnamon, garlic powder, black pepper and olive oil in a large resealable plastic bag. Seal, and shake to mix.
    Place pork in bag with marinade, seal, and refrigerate for 6 to 12 hours.
    Heat grill for high heat.
