<p>
	<strong>Ingredients:</strong>
</p>

<ul>
	<li>
		1 center-cut, 4-rib pork roast, about 3 pounds
	</li>
	<li>
		2 teaspoons gluten-free Cajun seasoning
	</li>
	<li>
		1 teaspoon dry mustard
	</li>
	<li>
		½ teaspoon dried thyme
	</li>
	<li>
		Kosher salt
	</li>
	<li>
		4 minced garlic cloves, divided
	</li>
	<li>
		3 tablespoons olive oil, divided
	</li>
	<li>
		2 tablespoons unsalted butter
	</li>
	<li>
		2 pounds fingerling potatoes
	</li>
	<li>
		1 large onion, cut into 6 to 8 wedges
	</li>
	<li>
		2 large carrots, sliced, optional
	</li>
	<li>
		Freshly ground black pepper, to taste
	</li>
	<li>
		½ cup dry white wine, or chicken broth
	</li>
</ul>

<p>
	<strong>Directions:</strong><br>
	Gather the ingredients.
</p>

<p>
	Position a rack in the center of the oven and heat to 350F.
</p>

<p>
	Carefully, without spilling any raw meat juices on the kitchen counter, wash the roast and pat dry with paper towels.
</p>

<p>
	In a small bowl, mix together the Cajun seasoning, dry mustard, thyme, ½ teaspoon salt, half of the minced garlic, and 1 tablespoon oil. Rub the roast all over with the mixture.
</p>

<p>
	In a large skillet over medium heat, sear the roast in the remaining 2 tablespoons oil until golden brown, about 3 minutes on each side. Searing it will keep the juices inside of the meat and yield a roast that is moist inside and crispy outside. Remove the roast to a plate.
</p>

<p>
	In the same skillet, melt the butter. Add the potatoes, the remaining minced garlic, onion wedges, and carrots, if using. Cook until the vegetables begin to brown and soften, about 5 minutes.
</p>

<p>
	Arrange the vegetables on the bottom of a roasting pan deep enough to hold the meat and vegetables. Sprinkle generously with salt and pepper. Place the roast on the vegetables, bone-side facing down. 
</p>

<p>
	Pour the wine or chicken broth over the vegetables in the pan. 
</p>

<p>
	Roast, uncovered, until potatoes are tender and the roast registers at least 145 F on a meat thermometer, about 1 hour and 20 minutes.
</p>

<p>
	Let the roast rest for 10 to 15 minutes before slicing.
</p>

<p>
	Cut between the ribs into separate chops and serve with the roasted vegetables.

</p>

		3½ to 4 pounds bone-in country-style pork ribs, or about 2 to 2½ pounds boneless
	</li>
	<li>
		Kosher salt, to taste
	</li>
	<li>
		Freshly ground black pepper, to taste
	</li>
	<li>
		3 tablespoons extra-virgin olive oil, divided
	</li>
	<li>
		1 large onion, coarsely chopped or sliced
	</li>
	<li>
		1 large carrot, diced
	</li>
	<li>
		2 stalks celery, chopped
	</li>
	<li>
		3 to 4 cloves garlic, minced
	</li>
	<li>
		¾ cup apple cider
	</li>
	<li>
		¼ cup cider vinegar
	</li>
	<li>
		1 cup chicken broth
	</li>
	<li>
		2 tablespoons tomato paste
	</li>
	<li>
		2 bay leaves
	</li>
	<li>
		½ teaspoon dried thyme
	</li>
</ul>

<p>
	<strong>Directions:</strong><br>
	Gather all ingredients.
</p>

<p>
	Heat the oven to 300F (150 C/Gas 2).
</p>

<p>
	Sprinkle the pork ribs with kosher salt and freshly ground black pepper.
</p>

<p>
	Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat. Add the ribs, in batches if necessary, and sear on all sides. Remove to a plate and set aside. 
</p>

<p>
	Add the remaining 1 tablespoon of olive oil to the pan. Add the onion, carrot, and celery. Cook, stirring until onion is translucent and lightly browned. Add the minced garlic and continue cooking for 1 to 2 minutes longer.
</p>

<p>
	Add the ribs back to the pan. In a bowl, combine the cider, vinegar, chicken broth, and tomato paste; blend well. Add the bay leaves and thyme; pour over the ribs. Cover the Dutch oven and bake for 3 hours, or until very tender. 
</p>

<p>
	Skim the fat from the juices and remove bay leaves. Taste and add salt and pepper, if needed. If desired, thicken the juices (see note below).
</p>

<p>
	Serve the ribs with the vegetables and juices, along with boiled or mashed potatoes.
</p>

<p>
	Note: To thicken the juices, combine 1 tablespoon of corn starch with 2 tablespoons of cold water, stirring until smooth. Bring the skimmed juices to a simmer on the stovetop; stir in the corn starch mixture and cook, stirring, until thickened.

		3 large potatoes, peeled and cubed

		4 carrots, cut into 1 inch pieces
	</li>
	<li>
		4 stalks celery, cut into 1 inch pieces

		1 large onion, chopped

		2 teaspoons cornstarch
	</li>
	<li>
		2 teaspoons cold water
	</li>

It takes a bit of effort, but the proof is in the flavor.

<p>
	<strong>Ingredients:</strong>
</p>

<ul>
	<li>
		1 pound bacon, chopped
	</li>
	<li>
		2 stalks celery, diced
	</li>
	<li>
		1 onion, chopped
	</li>
	<li>
		3 cloves garlic, minced
	</li>
	<li>
		8 potatoes, peeled and cubed
	</li>
	<li>
		4 cups chicken stock, or enough to cover potatoes
	</li>
	<li>
		3 tablespoons butter
	</li>
	<li>
		¼ cup potato starch, or corn starch
	</li>
	<li>
		1 cup heavy cream
	</li>
	<li>
		1 teaspoon dried tarragon
	</li>
	<li>
		3 teaspoons chopped fresh cilantro
	</li>
	<li>
		salt and freshly ground black pepper to taste

	<strong>Directions:</strong><br>
	Place bacon in a Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, 5 to 10 minutes. Drain bacon pieces on paper towels. Drain off all but ¼ cup of the bacon grease.

	Cook celery and onion in the reserved bacon drippings until onion is soft and translucent, about 5 minutes. Stir in garlic, and continue cooking for 1 to 2 minutes.
</p>

<p>
	Add cubed potatoes, and toss to coat. Sauté for 3 to 4 minutes. Return bacon to the pan, and add enough chicken stock to just cover the potatoes. Cover, and simmer until potatoes are tender, 15 to 20 minutes.
</p>

<p>
	Meanwhile, melt butter in a separate skillet over medium heat. Whisk in flour. Cook, stirring constantly, 1 to 2 minutes. Whisk in heavy cream, tarragon, and cilantro.
</p>

<p>
	Bring cream mixture to a boil, and cook, stirring constantly, until thickened, about 5 minutes. Add cream mixture to the potato mixture; stir to combine.
</p>

<p>
	Transfer about ⅓ to ½ of the soup to a blender and purée. Return to the Dutch oven.
</p>

<p>
	Adjust seasonings to taste, and serve warm, with your favorite gluten-free bread.<br>

	Heat oil in a large skillet over medium-high heat; brown oxtails on all sides and heat oxtails in skillet. Reduce heat to medium; add onions and cook for 5 minutes longer.

	Add onions and garlic to the skillet with oxtails and cook for 1 minute.
</p>

<p>
	Sprinkle potato starch over meat, onions, and garlic, and stir to blend. Cook for 2 minutes longer.
</p>

<p>
	Put potatoes in the bottom of the crock pot along with carrots.
</p>

<p>
	Add oxtail mixture to crock pot
</p>

<p>
	Deglaze pan with red wine and pour over oxtails in the slow cooker.
</p>

<p>
	Add beef stock to slow cooker, along with tomato sauce, peppercorns, oregano, chili pepper, cloves, bell pepper, and parsley. Add salt and pepper, to taste.

<p>
	Cover and cook on low for 9 to 11 hours, or until the oxtails are very tender.

		¾ teaspoon caraway seed

		1 (12 fluid ounce) bottle gluten-free dark beer (Like Ground Breaker Dark Ale)

		2 cups chicken broth
	</li>
	<li>
		3 carrots, cut into 1-inch pieces
	</li>
	<li>
		2 stalks celery, cut into 1-inch pieces
	</li>
	<li>
		¼ cup chopped fresh flat-leaf parsley
	</li>

		3 tablespoons balsamic vinegar
	</li>
	<li>
		12 Brussels sprouts, halved
	</li>
	<li>
		3 cups mashed potatoes, or as needed
	</li>
	<li>
		1 teaspoon chopped fresh flat-leaf parsley, for garnish

<p>
	<strong>Directions</strong><br>
	Season pork with salt and black pepper.
</p>

<p>
	Heat oil in a large pot over high heat. Working in batches, cook and stir pork in hot oil until browned on all sides, 5 to 10 minutes. Transfer pork to a bowl.
</p>

<p>
	Melt butter in the same pot over medium heat. Cook and stir onion in hot butter with a pinch of salt until onion is softened and translucent, 7 to 10 minutes. Add garlic; sauté until fragrant, about 30 seconds.
</p>

<p>
	Stir potato starch into onion mixture; cook and stir until potato starch is completely incorporated, about 2 minutes. Add bay leaf and caraway seed; cook for 2 minutes more. Pour in beer. Cook and stir until thickened, 1 to 3 minutes.

	Stir browned pork, broth, carrots, and celery into beer mixture; bring to a simmer. Stir 1/4 cup parsley and balsamic vinegar into stew; reduce heat to medium-low and simmer until pork is fork-tender, about 2 hours.

	Meanwhile, bring a large pot of lightly salted water to a boil. Cook Brussels sprouts in boiling water until almost tender, about 5 minutes. Drain.

	Stir Brussels sprouts into stew and simmer until heated through, about 5 minutes. Season with salt and pepper.
