    Grape n’ Tuna Pasta Salad just in time for the warm spring weather here is a perfect picnic meal.

    Gluten-Free

    Serves 4

    The finished pasta salad.Ingredients:

    • 3 cups gluten-free pasta
    • 2 cups red grapes
    • 1 1/4 Tbsp. Veganaise Mayonnaise
    • 1 can tuna, drained
    • 1 Tbsp. white balsamic vinegar
    • 1/3 tsp. each sea salt and pepper
    • 1 Tbsp. Barlean's Flax Oil
    • 1/4 cup pine nuts

    Directions:

    1. Cook pasta according to directions. Drain.
    2. In a large bowl, combine all ingredients with pasta; gently toss to combine.
    3. Transfer to serving dishes.  Serve warm or chilled.
    4. Enjoy.

    Love the updated information I receive. I would like to see more summer salads without odd ball type ingredients. In smaller cities and towns you can't find that stuff. Just like to make the old fashion way but not with the bad fats.

    Italian Style Winter Soup (Gluten-Free)
    Rich soups are a winter staple in many parts of Italy. This version brings together rice, chicken stock, cream, sausage and vegetables for a culinary delight. This delicious, rich, hearty, Italian style soup is perfect for winter, great for guests, and sure to delight palates to the last bite!
    Ingredients:
    2 quarts gluten-free chicken stock
    2 tablespoons olive oil
    3 cloves garlic, minced
    2 tablespoons onion, chopped
    2 - 3 carrots, sliced
    4 links gluten-free Italian sausage, sliced
    1 teaspoon dried oregano
    1 tablespoon dried basil
    ¼ cup chopped fresh parsley

This Italian-inspired dish takes on a sultry personality with the added saltiness of the bacon.  I think the fontina gives this dish a little more sophistication, but cheese is a mere state of mind; use whatever is handy.
    A tip for you spice-fiends: add some hot sauce to the egg mixture for a little extra bite.

    2 small russet potatoes, peeled and diced into ½-inch cubes
    1 zucchini, grated

    This dish is one of my favorites to make in late summer, when apricots are at their peak of ripeness. Nectarines and peaches also make great substitutes. Whatever you choose, go for the ripest, most fragrant fruit you can find. I’ll often toss in some raisins or apples for texture if I have them on hand, but the sweet-nutty flavor combination is perfect on its own. Dried apricots also work well outside the Summer months.
    Ingredients:
    1 pound apricots, halved and pitted
    ⅓  cup pine nuts
