    Grilled Pineapple Mango Salsa (Gluten-Free)

    Celiac.com 09/16/2014 - In response to a request to add some low-fat, recipes to the mix, I offer this recipe for pineapple mango salsa. It pairs great with grilled fish and delivers fresh, low-fat summer flavor.

    • 6 slices fresh pineapple, grilled
    • 4-6 tomatillos, grilled
    • 1 red bell pepper, grilled
    • 1 jalapeño pepper, grilled
    • ½ Serrano pepper, grilled
    • 3 large yellow mangos - peeled, seeded, and diced
    • 1 small white onion, grilled
    • 1 small fresh red onion, diced
    • ¼ cup chopped cilantro
    • juice of 2 limes
    • 1½ teaspoons lime zest

    Directions:
    Preheat an outdoor grill for medium-high heat; lightly oil the grate.

    Cook the pineapple, red bell pepper, and jalapeño pepper on the grill, turning frequently, until the pineapple has mild grill marks and the peppers are browned on all sides, about 3 minutes for pineapple and 5 to 7 minutes for peppers.

    Carefully remove from grill and place peppers in paper bag to cool.

    After peppers are cool, rub skins off gently with paper towels, cut in half, and remove and discard seeds.

    Dice the cooled pineapple and peppers, and place into a bowl.

    Add the mango, red onion, cilantro, lime juice, and lime zest; stir to combine.

    Cover the bowl with plastic wrap and refrigerate for 8 hours to 1 day before serving.

    5 Gluten-Free Ways with Tomatoes
    Celiac.com 02/13/2012 - Here are 5 quick n' easy ways to enjoy Tomatoes in meals, snacks and desserts.
    Escarole Salad with Cherry Tomatoes & Pistachios (1 cup pistachios, 2 sliced tomatoes, 2 Tbsp. flax oil, 1 Tbsp. balsamic vinegar, 1 segmented orange, 1 head escarole, leaves torn). Puree half the pistachios, oil and balsamic in a blender. Toss orange segments with sliced tomatoes, escerole and dressing; season. Top with remaining nuts.
    Tomato Garlic Oil (1/3 cup extra virgin olive oil, 2 finely chopped persimmons, 1 clove crushed garlic). In a small saucepan over low heat, cool oil, 1 cup grape tomatoes, halved and garlic for 5 minutes.  Remove from heat add sea salt; set aside to cool. Discard garlic. Refrigerate for up to 4 days.

    Pecan Cauliflower Bites (Gluten-Free)
    This lovely dish makes an outstanding appetize, side dish with your favorite meal, or a nice h'orderve at a party.
    Gluten-Free and Vegan
    Serves 2
    Ingredients:
    1 large head cauliflower 1 tsp. ground cinnamon 2 Tbsp.  extra virgin olive oil 1/2 cup ground pecans 1/4 tsp. sea salt 1/2 tsp freshly ground white pepper 2 Tbsp. balsamic vinegar, for serving Directions:
    Preheat oven to 375 degrees F. Line a baking pan with tin foil. Cut cauliflower into florets or steak-like slices. Place into the baking pan. In a small bowl, whisk together remaining ingredients. Drizzle over cauliflower. Roast for 25 minutes or until golden brown. Place into the fridge overnight in a glass bowl, covered. Enjoy at room temperature with a drizzle of balsamic vinegar. ...

    Celiac.com 08/12/2014 - Here’s another easy summertime drink that will turn a few heads. It blends watermelon with sweetened lime juice and crushed ice to deliver a refreshing burst of summer!
    Ingredients:
    8-10 cups seedless watermelon chunks (about 2 pounds) 2-3 tablespoons Rose’s Lime Juice, to taste 3 tablespoons fresh lime juice 2 cups crushed ice lime slices for garnish vodka, rum, or tequila, as desired (select gluten-free varieties if you have concerns) Directions:
    Combine all ingredients in a blender and puree until smooth (add a few tablespoons of water, if necessary).
    Add lime juice to get desired sweetness.
    Transfer to a pitcher filled with ice and serve in tall glasses.
    Garnish with lime slices.

    Celiac.com 04/07/2015 - This dip is full of zesty bacon and cheese flavor that is sure to put smiles on the faces of your hungriest snackers.
    Ingredients:
    12 slices quality smoked bacon, cooked, chopped 1 cup (8 ounces) cream cheese ¾ cup shredded Cheddar cheese ¾ cup shredded Swiss cheese ½ cup mayonnaise 1½ tablespoons Dijon mustard 1 tablespoon horseradish, prepared 4 scallions, chopped Directions:
    In a mixing bowl, whip the cream cheese with an electric mixer.
    Fold in and lightly mix the mayonnaise, Dijon mustard, horseradish, cheddar cheese, bacon and scallions.
    Serve hot or cold.
    To heat, place in an oven proof container and bake at 400°F for 10 minutes or until bubbly and warm.
