	Celiac.com 03/06/2019 - FODMAPs is an acronym, short for “fermentable, oligosaccharides, disaccharides, monosaccharides and polyols.” FODMAPs is a single name for a bunch of different molecules, common in many in foods, that are poorly absorbed by some people. People who can’t tolerate FODMAPs can suffer celiac-like gastrointestinal symptoms. A low FODMAP diet has been shown to help <a href="https://www.ncbi.nlm.nih.gov/pmc/articles/PMC6109508/" rel="external">reduce symptoms of IBS</a>, and could be helpful to some people with celiac disease. FODMAPs have also been shown to play a role in non-celiac gluten sensitivity (NCGS). Now, <a href="https://www.monash.edu/monash-innovation/news/success-stories/fodmap" rel="external">a new app can help people zero in on FODMAPs in food</a>.
</p>

<h2>
	FODMAPS Trigger Celiac-Like Symptoms in Some People
</h2>

<p>
	In case you didn’t know, there’s a group of carbohydrates called FODMAPs that may play trigger celiac-like symptoms in certain sensitive people. New research shows that reducing or avoiding <a href="https://www.beyondceliac.org/celiac-disease-news/Celiac-Disease-in-the-News-article/1395/postid--16347/" rel="external">FODMAPs</a>, which are poorly absorbed by the gastrointestinal tract, can help to alleviate symptoms of IBS. A Low FODMAP diet works by restricting foods that are high in FODMAPs. Some people with celiacs who experience GI symptoms on a gluten-free diet, and some people with IBS may benefit from eliminating FODMAPS.

	FODMAPs and Gluten-sensitivity in IBS?
</h2>

<p>
	Some research points to a connection or <a href="https://gut.bmj.com/content/65/1/169" rel="external">connections between FODMAPs and gluten-sensitivity in IBS</a>. Doctors have been working to figure out the best dietary strategies, including gluten-free, wheat-free and low FODMAP diets, for the management of IBS symptoms.
</p>

<p>
	A recent <a href="https://www.celiac.com/celiac-disease/can-low-fodmap-rye-bread-help-us-understand-irritable-bowel-syndrome-r4420/" rel="">study of IBS patients</a> shows that rye bread low in FODMAPs can reduce hydrogen excretion, lower intraluminal pressure, raise colonic pH, improve transit times, and reduce IBS symptoms, compared to regular rye bread.
</p>

	APP Helps You Avoid FODMAPs
</h2>

<p>
	Researchers with the Department of Gastroenterology at Monash University in Australia have developed a diet and related smartphone application to help manage gastrointestinal symptoms associated with Irritable bowel syndrome (IBS) <a href="https://www.monash.edu/monash-innovation/news/success-stories/fodmap" rel="external">The app</a> is available on both iPhone and Android. Users in over 100 countries worldwide have helped the app become the most popular medical app in over 50 countries.
</p>

<h2>
	Traffic Lights for FODMAPS
</h2>

<p>
	The app is based on a comprehensive database of FODMAP content in food, and lists FODMAP foods with a traffic light system and by serving size. Foods coded red are high in FODMAPs and should be avoided, orange coded foods are moderate in FODMAPs and may be tolerated by some people. Foods coded green are low in FODMAPs and are safe to eat. 
</p>

<p>
	The app features specific food serving size suggestions help users know how much of a given food is safe to eat. The app also contains other information about IBS as well as recipes and meal ideas to help IBS patients interpret and follow the diet. Proceeds from the sale of the application will go towards funding further research.

	Celiac.com 02/25/2019 - Even when following a gluten-free diet, many people with celiac disease occasionally ingest small amounts of gluten in food. However, researchers don’t have much good data on how that plays out in real life. Testing patient stool and urine is an excellent way to measure the frequency of gluten exposure in celiac patients who are on a gluten-free diet. To get a better picture, a team of researchers recently set out to explore the pattern of fecal and urinary excretion of gluten immunogenic peptide (GIP) during a 4-week period in celiac patients on a long-term gluten-free diet. 
</p>

<p>
	The research team included Juan P Stefanolo; Martín Tálamo; Samanta Dodds; Emilia Sugai; Paz Temprano; Ana Costa, Ana; María Laura Moreno; María Inés Pinto Sanchez; Edgardo Smecuol; Horacio Vázquez; Andrea F Gonzalez; Sonia I Niveloni; Elena F Verdu; Eduardo Mauriño; and Julio C Bai. They are variously affiliated with the Dr. C. Bonorino Udaondo Gastroenterology Hospital, Buenos Aires, Argentina, Argentina.; the Farncombe Family Digestive Health Research Institute, McMaster University Health Sciences Centre, Hamilton, ON, Canada; and with the Research Institutes at the Universidad del Salvador, Buenos Aires, Argentina. 
</p>

<p>
	For their descriptive and prospective study, the team enrolled consecutive adult celiac patients who had been following a gluten-free diet for more than two years. All participants filled out a celiac symptom index (CSI) questionnaire to document related symptoms. Patients collected stool and urine samples for 4 weeks. The team designed the collection protocol to measure gluten excretion during week-days and week-ends. For GIP detection, the team used ELISA test for stool (iVYLISA GIP-S ®, Biomedal S.L. Spain) and point-of-care tests (GlutenDetect ®; Biomedal S.L., Spain) for urine. 
</p>

<p>
	The team found that, regardless of symptoms, celiac patients on a long-term gluten-free diet frequently ingested gluten, especially on weekends. The steady increase in GIP over the month-long study indicate that people may be less vigilant about eating gluten-free, especially on weekends. 
</p>

<p>
	This study indicates that many people with celiac disease are lowering their vigilance, and accidentally or deliberately eating gluten, whether or not they have symptoms. These results drive home the importance of constant vigilance for people with celiac disease.

	Celiac.com 02/19/2019 - Microbial transglutaminase, aka ‘meat glue,’ is an enzyme commonly used in the meat industry to “glue” together smaller pieces of meat, fish, or meat to make a single larger piece. The result is a large chunk of virtually intact piece of meat or fish that looks like a single chunk. Transglutaminase is usually unlabeled and largely invisible to consumers. For people with celiac disease or gluten-intolerance, meat glue could be dangerous.
</p>

<h2>
	Meat Glue Can Trigger Celiac Reactions
</h2>

<p>
	Because it is functionally similar to the tissue transglutaminase (tTg), microbial transglutaminase acts like glue, binding gliadin peptides together to form neo-complexes that trigger an immune response, and may also trigger an adverse response in people with celiac disease. 
</p>

<p>
	A recent study by a team of German and Israeli researchers found that “Even when it lacks sequence identity, microbial transglutaminase functionally mimics endogenous tissue transglutaminase,” which researchers know to be an autoantigen of celiac disease, as well as a key player in the development and progression of celiac disease. 
</p>

<p>
	Confirmation of the team’s findings could lead to changes in product labeling, processed food additive policies and consumer health education.
</p>

<p>
	If it’s true that “microbial transglutaminase functionally mimics endogenous tissue transglutaminase,” even in small pieces, and could trigger celiac disease, or celiac symptoms, then people with celiac disease need to know about it, and avoid it in foods.
</p>

<h2>
	Talk with Your Butcher to Avoid Meat Glue
</h2>

<p>
	Until labeling is required, and standards are set, talking with your local butcher is likely the best strategy for avoiding meat glue. Your butcher will be able to guide you to meat, poultry, fish and other products that have not been processed with meat glue.

Even if food is labelled “gluten-free,” the risk of cross-contamination could still be high, especially given the speed with which food is prepared.

The tortilla chips salsa and guacamole are gluten-free. With numerous locations nationwide, Chipotle is a solid option for gluten-free diners looking for safe, reliable gluten-free fast food.

	Panera Bread
</h2>

<p>
	You might not think it to look at the name, but <a href="https://www.celiac.com/celiac-disease/miscellaneous-information-on-celiac-disease/additional-celiac-disease-concerns/panera-quietly-testing-gluten-free-bread-options-r3557/" rel="">Panera Bread offers a number of “gluten-friendly” options</a>, mainly soups and salads, as long as you skip the croutons and the bread. Note that they changed their offerings from “gluten-free” to “gluten-friendly” due to the risk of cross-contamination, and their Web site indicates that their offering are not safe for celiacs. 
</p>

<p>
	Panera’s gluten-friendly options include delicious options like the Greek Salad, Fuji Apple Salad, Modern Greek Salad with Quinoa, Strawberry Poppyseed Salad with Chicken, Baked Potato Soup, Black Bean Soup, Greek Yogurt with Mixed Berries, and many of their steel cut oatmeal dishes.
</p>

<p>
	For desert, Panera offers gluten-friendly triple chocolate cookie with walnuts and a coconut macaroon. If you decide to eat there make sure you’re very clear while placing your order that you need your meal to be gluten-free.
</p>

	Wendy’s
</h2>

<p>
	Wendy’s burgers are gluten-free when made without the bun, and you can also get several of their salads without the chicken or the croutons. Wendy’s famous chili and their baked potatoes and toppings are also a safe bet. The Frosty is gluten-free, too.

<p>
	Wendy’s has more and better gluten-free options than most major burger chains, and information about cross-contamination on their website shows that they understand gluten-free cooking.
</p>

	In’N’Out Burger
</h2>

<p>
	In’N’Out is a family run California burger chain with a die-hard fan base. In’N’Out offers burgers, fries, shakes and drinks. That’s it. They make their fries fresh from scratch and will make any burger “Protein-style,” that’s lettuce-wrapped without a bun. As burger chains go, In’N’Out is a reliable stop for many gluten-free Californians. Basically, their buns are the only gluten in the joint. Their open kitchen allows you to watch as they prepare your order.

	Five Guys
</h2>

<p>
	Like In’N’Out, Five Guys is likely a bit safer than other burger chains, simply because it uses very few products that contain gluten. There are no breaded items it Five Guys, and Five Guys’ burgers, fries, and hot dogs, and nearly all toppings, are gluten-free, just make sure you skip the bun, the malt vinegar, and the fry sauce. Five Guys milkshakes are gluten-free, too, just watch out for the Oreo cookie pieces, the malted milk, and cherry milkshake mix-ins.

	Popeyes Louisiana Kitchen
</h2>

<p>
	The only gluten-free options at Popeyes are side dishes. But, their gluten-free side options are not bad, and include their Cajun rice, red beans and rice, coleslaw, and corn on the cob.

	Subway
</h2>

<p>
	Subway tested gluten-free buns and toyed with rolling out guaranteed gluten-free offerings, but then pulled back. <a href="https://www.celiac.com/celiac-disease/miscellaneous-information-on-celiac-disease/additional-celiac-disease-concerns/dear-subway-please-share-the-gluten-free-oregon-love-r3461/" rel="">Subway still offers gluten-free rolls at branches in Oregon</a> and Washington state. Subway does offer salad version of many of their classic subs, like the spicy Italian Salad.

	Chili's
</h2>

<p>
	Chili's isn’t a fast food chain, but a casual dining restaurant with popular take-out options. Chili’s does offer gluten-free patrons an allergen/vegetarian fact sheet and separate gluten-free menu. Chili's bone-in buffalo wings, bottomless tostada chips, and fresh guacamole are all gluten-free. Chili’s does warn diners that cross-contamination is possible, and advises that they consult a manager before ordering.

	Celiac.com 01/31/2019 - The popularity of gluten-free and allergen-free foods is on the rise, and that’s generally good news. In theory, that’s good news, as it means more products, better selection and lower prices. However, it seems that the proliferation of gluten- and allergen-free products also means higher rates of allergen contamination.
</p>

<p>
	We’ve written about the <a href="https://www.celiac.com/celiac-disease/miscellaneous-information-on-celiac-disease/additional-celiac-disease-concerns/gluten-in-foods-labeled-gluten-free-an-ongoing-problem-r4640/" rel="">upswing in gluten contamination in foods labeled gluten-free</a>, but it appears as though the problem of allergen contamination in products labeled allergen-free is neither restricted to America, nor restricted to gluten.
</p>

<p>
	The latest information coming out of New Zealand shows that food recalls due to allergens have quadrupled over the past five years, with the Ministry for Primary Industries (MPI) leading 144 investigations in that period. Meanwhile, official food recall investigations climbed to 28 in 2018, compared with just six in 2013.
</p>

<p>
	The new information and numbers show that more vigilance is needed on the part of manufacturers, grocers, consumers, and public health officials.
</p>

<p>
	Interestingly, wine received the most complaints, with reports of milk, egg, royal jelly and sulfites contamination.
</p>

<p>
	Recalls due to food allergens have affected numerous businesses. For example,  in 2017, gluten-contaminated buckwheat flour triggered a recall by 27 stores, which pulled the product from their shelves. 
</p>

	Celiac.com 01/24/2019 - It’s just about time for Super Bowl LIII, and longtime party favorite Manwich is in the house. A Super Bowl party favorite since it was first introduced in 1969, Manwich is America’s perennially popular way to serve sloppy joes. But is Manwich gluten-free? The short answer is no. The longer answer is that it is likely gluten-safe. Here’s the skinny.
</p>

<h2>
	Manwich Contains No Gluten Ingredients
</h2>

<p>
	ConAgra divides their food offerings into three groups: foods that are gluten-free, foods that should not contain gluten, but have not yet been validated as gluten-free, and foods that contain gluten.
</p>

<p>
	Obviously, people seeking gluten-free products are concerned with the first two categories, and sensitive celiacs should only stick with the gluten-free one. The ConAgra company website says that “ConAgra products that are labeled “gluten-free” undergo rigorous ingredient selection and preparation, along with testing to validate the product’s gluten-free status.” 
</p>

<h2>
	Process Key to Eliminating Gluten
</h2>

<p>
	According to the information on the site, ConAgra reviews both the label and the recipe, and then and then works with their ingredient suppliers to eliminate any sources of gluten. They then review the product preparation and cleaning process. Lastly, they test the food to ensure it contains less than 20 parts per million gluten. Products that pass this process are labeled “Gluten-Free.”
</p>

<p>
	The other category of ConAgra foods are foods that shouldn't contain gluten, but have not been tested and confirmed to be gluten-free. For every such product, ConAgra reviews the label, the recipe and the ingredient list to confirm that no gluten is added to a food. Foods that pass this process are added to the list of foods that contain no gluten ingredients, and “should not contain gluten.” 
</p>

<h2>
	Manwich Likely Contains No Gluten
</h2>

<p>
	Foods that contain no gluten ingredients, but are not confirmed as "gluten-free" may be okay for some people with gluten sensitivities, but these products have not been tested or certified gluten-free. In many cases, foods with no gluten ingredients and listed in the “should not contain gluten” category are in the process of being tested, validated, and may eventually be labeled as “gluten-free.” 
</p>

<p>
	Check the <a href="https://www.conagrabrands.com/brands" rel="external">ConAgra website</a> for updates to the list of officially Gluten-Free products.
</p>

<p>
	In addition to Manwich Original flavor, Manwich comes in Bourbon BBQ, Bold, and Thick &amp; Chunky varieties. According to allergen statements on the Manwich.com website, none of the Manwich varieties contain milk, peanuts, eggs, fish, crustacean shellfish, soy, tree nuts or wheat.
</p>

<p>
	As always, people with celiac disease, and serious gluten intolerance should be very cautious about products that are not clearly labeled “Gluten-Free.” Check websites and read labels. That said, many celiacs report tolerating such products with no adverse effects. Use your own judgement, and trust your gut. 
</p>

<p>
	Meanwhile, if you’re planning on whipping up a big bunch of Manwich sloppy joes for your Super Bowl party friends, remember to check with anyone who might have celiac disease or a serious gluten intolerance. They need to be able to make an informed choice. Also, remember to include gluten-free bread or buns for serving those folks who do opt in.

	Celiac.com 01/22/2019 - We see a lot of questions about the gluten-free status of certain foods, candies, or snacks. One of the most common product questions we see is: Are Snickers candy bars gluten-free and safe for people with celiac disease? The short answer is yes! Currently, all flavors of Snickers, Snickers Dark bars, Snickers fun size and Snickers mini's are gluten-free, according to website for parent company Mars. The longer answer is that it's always wise to check, as product formulation can change, sometimes suddenly.
</p>

<h2>
	Look to Manufacturers for Gluten and Allergen Information
</h2>

<p>
	Manufacturers are required to list any allergens on the product label. Mars lists allergen information for each product they produce. For any given Mars product, you can learn more by going to the <a href="https://www.snickers.com/products/chocolate/snickers-milk-chocolate-candy-bar-sharing-size-329-oz-bars" rel="external">Snickers website</a>. Once there, click on any product. Scroll down and click the button that says "Ingredients and Dietary Suitability." You will find ingredients and allergens listed for that product. Remember, even this information is subject to change, so double-check if you're unsure. 
</p>

<h2>
	Gluten-Free Status Can Vary by Product Size
</h2>

<p>
	A size difference in a Snickers or other candies can sometimes mean a change in the gluten-free status. Always check the ingredients for minis, bite sized, regular, jumbo and popable versions of your favorite candies. Each version can be different, and they may change suddenly. Some versions may be gluten-free or gluten-safe, while others are not gluten-free or gluten-safe. This rule applies for almost all foods. Of course, avoid eating anything you’re not sure about, or which doesn’t agree with your system. Trust your gut.
</p>

<p>
	Meantime, here’s an excerpt from the Mars' website statement on dietary suitability for those sensitive to gluten and other allergens:

	Celiac.com 12/26/2018 - The first wave of results are in from the 2015 FDA-mandated post-market surveillance studies of duodenoscopes, and they are not encouraging. The duodenoscopes are designed to be reprocessed, to be cleaned and disinfected, according to manufacturer guidelines. However, reprocessed scopes show "higher-than-expected" rates of contamination with dangerous bacteria.
</p>

<p>
	In a recent safety announcement, the FDA revealed that 3% of properly collected samples tested positive for more than 100 colony-forming units of "low-concern" organisms. These bacteria are not likely to cause serious infections, but they do indicate "reprocessing failure."
</p>

<p>
	Moreover, an additional 3% of properly collected samples tested positive for "high-concern" bacteria that are more often associated with disease, such as Escherichia coli or Staphylococcus aureus.
</p>

<p>
	In 2013, the FDA began to focus on a possible connection between multi‒drug resistant bacteria and reprocessed duodenoscopes.  In 2015, FDA ordered duodenoscope makers Olympus, Fujifilm, and Pentax to determine whether healthcare facilities were able to properly clean and disinfect the devices. The mandatory monitoring is part of the FDA’s effort to eliminate patient infections associated with bacteria from contaminated duodenoscopes.
</p>

<p>
	The FDA’s order required the companies to conduct two separate studies. First, they were required to sample and culture reprocessed duodenoscopes to learn more about issues that contribute to contamination. Second, they were required to evaluate the training of hospital staff in following the reprocessing instructions as part of a study of “human factors.” 
</p>

<p>
	When the companies  failed to carry out such studies promptly, The FDA sent warning letters citing their failure publicly. All three device makers have now begun collecting the required data. They recently completed testing for the initial human factors, and at least 10% of the samples have been collected for the sampling and culturing study.
</p>

<p>
	Initial findings from the human factors study of staff training indicate that staff finds the reprocessing instructions in current user manuals difficult to comprehend and follow, the FDA said. The FDA is working with the duodenoscope manufacturing companies to revise and clarify the user materials to improve reprocessing outcomes and to reduce contamination risk.
</p>
