    Portuguese Green Soup (Gluten-Free)

    Celiac.com 01/28/2014 - One of the things I love most about food and cuisine is how much there is to discover. I'm always especially pleased to 'discover' a food that seems like it has been long enjoyed by nearly everyone but me. One such 'discovery' is Portuguese Green Soup.

    I had a delightful version of this soup a while back, and it really stuck in my mind. This soup is perfect for a cold night.

    1 quart cold water
    1 quart chicken broth
    10 small potatoes, peeled and thinly sliced
    6 ounces linguica or chorizo sausage, thinly sliced
    4 tablespoons olive oil, divided
    1 pound kale, rinsed and julienned
    1 medium onion, chopped
    3 cloves garlic, minced
    3-4 medium shallots minced
    2½ teaspoons salt
    ground black pepper to taste
    1 can hominy (optional)

    Directions:
    In a large stock pot over medium heat, sauté onion, shallots and garlic in 3 tablespoons olive oil for 3 minutes.

    Stir in potatoes and cook, stirring constantly, 3 minutes more.

    Pour in water and chicken broth.

    Boil gently for 20 minutes, until potatoes are mushy.

    Meanwhile, in a large skillet over medium-low heat, cook sausage until it has released most of its fat, 10 minutes. Drain.

    Mash potatoes, and stir the sausage, salt and pepper into the soup.

    Cover and simmer on medium heat for 5 minutes.

    About 5 to 10 minutes before serving, stir kale into soup. Add hominy as desired.

    Simmer, 5 minutes, until kale is tender and bright green. Stir in the remaining tablespoon of olive oil and serve at once.

    Serve with toasted gluten-free bread and butter.

    olive oil
    mirepoix (leeks, onions, carrots, and celery)
    basil
    chicken stock
    potatoes, diced
    cream
    smoked peppers
    Cut corn off cob and dump into very hot olive oil. Cover and caramelize. Add veggies and stock. Puree half and return to pot. Add peppers and cream and simmer for 20 minutes. Add chicken or sausage to make a stew. Serves 4.

    Juice Ingredients:
    ½ bushel ripe tomatoes
    1 bunch celery-sliced kind of thin
    2 large onions- chopped
    Directions:
    Boil together until everything is well cooked. Drain and take the juice, I use a Foley food mill.
    Boil the juice and add:
    1 cup sugar
    ½ cup butter
    1 teaspoon salt
    ½ teaspoon pepper
    Mix 1 cup cornstarch with water and stir in.
    I get 8-12 quarts per batch. Season to taste. Every batch I have made has turned out well. I use the soup as soup or a base for casseroles or chili.
    Optional: Can and seal.

    Creamy Vegan Lavender Spinach Soup (gluten-free)
    This is a wonderful soup for a cold Winter's day, enjoy it with your favorite gluten-free crackers!

    Serves 4
    Ingredients:
    1 Tbsp. Earth Balance Vegan Buttery Spread 1 large sweet white onion, diced 2 cups fresh baby spinach 2 large zucchini, diced 2 tsp. fresh mint, finely chopped
    1/3 tsp. orange zest 1/2 cup quinoa, cooked
    4 cups green tea, brewed
    1/4 tsp. sea salt 1/4 tsp. black pepper 1 ripe avocado, peeled, cored and diced 1/8 tsp. curry powder 1/8 tsp. dried lavender 12 macadamia nuts, crushed
    Directions:
    In a large saucepan over medium-high heat, melt butter.  Add onion, spinach and zucchini; cook until onions are translucent, approximately 5 minutes.  Add mint, orange zest and quinoa; cook for another minute. Add green tea; ...
