    Scalloped Potatoes Au Gratin (Gluten-Free)

Reviewed and edited by a celiac disease expert.

Celiac.com 12/31/2014 - This recipes combines thinly sliced potatoes, Gruyere and Parmesan cheeses and cream with a few herbs and spices to deliver a tasty variation on traditional scalloped potatoes. It will help to fill the house with warmth and delicious aromas on a cold day, and goes great as a side to most diner entrees.

Photo: CC--I Believe I Can FryIngredients:

    • 2 pounds russet potatoes, peeled and cut into 1/8-inch-thick slices
    • 1½ cups heavy cream
    • 1¼ cup grated Gruyere cheese, plus more for broiling
    • ½ cup grated Parmesan, plus more for broiling
    • ½ tablespoon butter
    • 2 bay leaves
    • 2 sprigs fresh thyme, plus more to finish
    • 3 garlic cloves, chopped
    • ½ teaspoon onion powder
    • Kosher salt and freshly ground black pepper

    Celiac.com Sponsor (A12):
    Directions:
Heat the oven to 350 degrees F.

Wash and slice potatoes and put into a large bowl.

In a saucepan, heat the cream with the bay leaves, thyme, garlic, and some salt and pepper.

While the cream heats up, use butter to grease a casserole dish.

Use a fork or slotted spoon to remove the bay leaves and thyme.

Pour the heated cream into a large bowl with the potato slices. Mix gently to coat the potatoes.

Add Gruyere and Parmesan and mix into the potatoes. Season with a little bit of salt and pepper. Toss gently to mix.

Spoon a little bit of the cream into the bottom of the casserole dish. Then spoon the potatoes in.

Level out the potatoes for uniform cooking time. Pour the remaining cream at the bottom of the bowl over the top.

Top with some Parmesan, a bit of Gruyere, and fresh thyme leaves.

Cover the dish with aluminum foil, but pull back one corner for the steam to escape. Bake for 25-30 minutes until potatoes are bubbling and tender.

Put under the broiler and broil on high until the top is browned, about 2 minutes. Serve hot.

This recipe comes to us from “tarnalberry” in the Open Original Shared Link.
    Ingredients:
1 cup Lundberg Farms Wild Blend Rice (you can substitute brown rice, or your own mix of brown and wild rice, but this mix works best of the variations Ive tried so far, definitely do not do all white rice)
    1/3 cup arborio rice (risotto)
    3 medium carrots
    3 stalks celery
    1 medium onion
2/3 pound mushrooms (chanterelles are very good here, as are creminis (or portabellas), plain white wouldnt be the same)
    3 tablespoons olive oil
4 cups (or more) chicken or vegetable broth
2 teaspoons Italian spices (or ½ teaspoon each basil, oregano, thyme, rosemary)
    1 teaspoon salt
    ½ teaspoon ground sage
    ¼ teaspoon majoram
    pinch cumin (optional)
    Directions:

Ham and Lima bean soup was of my father's favorite things to eat. I remember more than a few fall days with a big pot cooking on the stove all day long. I didn't care for it much as a kid, but as I got older, this thick, hearty, soup became a favorite for cold fall days. This cousin of split pea soup makes use of ham hocks, ham, and juicy, delicious Lima beans. This recipe makes enough to serve eight to ten people, so scale accordingly. The soup is excellent after a night in the refrigerator, and also freezes and reheats well.
    Ingredients:
    3 tablespoons olive oil
12 ounces Lima beans, small, dried
    3 large onions, chopped
    3 garlic cloves, minced
    4 carrots, sliced thick
    2 quarts of chicken broth
2 ham hocks, or 2 cups cooked ham, cubed
    1 cup water

In my house, fall and winter cooking means lots of stews, soups and casseroles. Beef stew is one of my true favorites, and one that I can almost never order at a restaurant, because it almost always contains wheat, either as a thickener, or to dredge the meat for browning.
Beef stew is a dish that goes well by itself, or which can be served over rice or gluten-free noodles for a heartier meal. Here is a recipe that will deliver a delicious gluten-free stew that will keep your hungry eaters coming back for more.
    Ingredients:
    2 pounds stew beef
    2 tablespoons vegetable oil
    2 cups water
    1 tablespoon Worcestershire sauce
1 gluten-free beef bouillon cube (I often use Celifibr's Vegetarian)
5 tablespoons Just Like Lipton's Gluten-Free Soup Mix (Recipe below)

07/01/2014 - Fair warning: This is one of those quintessentially American dishes that includes bacon, cheese and sour cream. Oh, and mayonnaise. Let's not forget the mayonnaise.
Because of this, it is pretty much guaranteed to be a big, fat hit at your next potluck or barbecue.
    Ingredients:
10 small white potatoes, peeled with skins on 6 slices cooked, crisp bacon, diced 4 green onions 1½ cups cheddar cheese, shredded 12 ounces sour cream ¾ cup mayonnaise 2-3 tablespoons gluten-free brown mustard (I use Annie’s) 2 tablespoons cider vinegar 2 teaspoons salt Ground pepper to taste Directions:
Wash and peel white potatoes. Leave skins on red potatoes
Cube and boil potatoes with salt. Drain well.
Crumble bacon and slice onions (including tops).
    Combine sou...
