Gluten Free Chapattis Flour

For people who have chappattis and have been diagnosed as Coeliacs then trying to find a decent alternative to wheat flour is near impossible.

 

The gluten free flours are difficult to roll as chappattis and taste like cardboard to be diplomatic.

 

Using maize flour or cornmeal is a better alternative but unless you grind your own the ones in the supermarket are usually steel milled and of the GMO type from US.

 

Cornmeal or cornflour(maize flour) chappattis in India/Paksitan are called Makki ki roti. In those countries organic corn is stoneground to fine flour. This then is used to make chappattis. Even then its not easy to make the chappattis but the taste is authentic and original.

 

In the UK this is almost impossible to achieve with the flours available.

However our friends in  South America have been using a type of corn flour called Masa Harina (corn dough) for centuries. This flour which is actually organic(GMO FREE) corn flour which has been treated to preserve its vitamin niacin and allow dough formation easily.

 

The Masa harina flour can be easily made into chappattis and the chappattis turn out just like the ones which are made in Pakistan/India. They are easliy digested and even smell like corn unlike the cornmeal flours milled by steel milling in UK.

 

The flour is available from online retailers and im in no position to direct you to any particular place as this is only to help people. You can get it from Amazon and specialist flour retailers of which there are only a few.

It costs 3.50 for 1kg .

I also enjoy using masa harina in many ways; especially in Latin-inspired recipes but not always.

I have been wanting to make some kind of Indian bread - roti or chapattis. I tried making jowar roti (jowar is sorghum) but wasn't that successful. I was wondering if you could share the chapatti recipe you use with masa harina?
