INteresting Scott. At a conference in Japan in 2005 I was told there were only about 2,000 celiacs in Japan. In  2007 it was over 20,000. Have not been to that conference  since but children with celiac are now a major concern in areas where wheat is common. In many areas meals are still rice based and not like Tokyo with a bakery in every train station that also has McD's across the street.
