These Mojito Cupcakes Using Pamela's Artisan Flour?

I'm feeling adventerous and would like to make these mojito cupcakes this weekend:

It calls for a flour mix described in the article plus adding xanthan gum.  If I substitute Pamela's Artisan flour instead, what are my chances?  Do I still need to ad xanthan gum?  Am I being too adventerous??  :D

The general rule for substituting flour blends is, if your blend already contains a gum, don't add it.  If your blend does not contain a gum, it will always need it added.  Pamelas uses guar gum in their blend, so you will want to omit the xanthan gum in the recipe.
